Instant Pot Quinoa Dal Khichdi - Healthy, easy to digest, wholesome, one-pot comfort meal prepared by pressure cooking Quinoa, Moong Dal and Rice with lots vegetables and a couple of spices. Whether you call it Masala Khichdi, Vaghareli Khichdi, Vegetable or Dal Khichdi, this one-pot meal recipe is nutritious and light on the tummy.

Instant Pot Quinoa Dal Khichdi

Quinoa

- Moong Dal (See notes)

carrots

Wash Quinoa, rice and lentil couple of times with water and drain all the water. keep it aside.

Turn on instant pot on normal saute mode.

Heat ghee or oil. Add cumin seeds, cloves, and cinnamon stick.

Let the cumin seeds splutter.

Now add ginger, garlic, chili, and onions. Saute for a minute, stirring continuously.

Add vegetables, washed quinoa-rice-lentil, water, salt, and turmeric. Mix all ingredients very well.

Cover your instant pot with locking lid. Turn off the instant pot.

Press the manual button and set the instant pot for 7 minutes under high pressure, vent on sealing position.

Once Instant pot beeps and on display screen you see LO:00, turn off the instant pot.

Let the pressure release naturally.

Open the IP lid. Instant Pot Quinoa Dal Khichdi is ready.

Serve it with Papad, Onion, Curd/yogurt, and pickle. Enjoy!

For this method, you will require 1 cup more water.

Turn on a stove.

Heat ghee or oil in traditional pressure cooker. Add cumin seeds, cloves, and cinnamon stick.

Cover your pressure cooker with locking lid.

take 4 whistles.

Open the lid. Mix well. Quinoa Dal Khichdi is ready.

Quinoa Dal Khichdi in the traditional pressure cooker -

You will require some more water for this method.

Turn on the stove.

Heat ghee or oil in a big pan or pot. Add cumin seeds, cloves, and cinnamon stick.

Cover it with lid.

Let it cook for 15 to 18 minutes over medium heat, stirring occasionally. add water in between if needed.

Once the khichdi is properly cooked, switch off the flame and let it covered for 5 minutes.

Open the lid. Mix very well. Quinoa Dal Khichdi is ready.

Instant Pot Quinoa Dal Khichdi | Dal khichdi with quinoa in pressure cooker | vegan khichdi

Instant Pot Quinoa Khichdi, one-pot wholesome meal made with quinoa, lentils and veggies! It's nutritious, filling, comforting and good for you!

Instant Pot Quinoa Khichdi

bay leaf

hing (asafoetida)

ginger (finely chopped)

garlic (finely chopped)

tomato (chopped)

carrot

green peas (frozen)

yellow moong dal

masoor dal (50 grams, red lentils, rinsed)

salt (or

water (16 oz- 20 oz, 2.5 cups if you want thin khichdi)

chopped cilantro

lemon (juice of)

Press the saute button on the Instant Pot. Once it displays hot, add the oil or ghee and then add the bay leaf and cumin seeds.Let the seeds sizzle for few seconds and then add the hing and stir.

Add the onion, ginger, garlic and cook for 3 minutes until softened.

Add the tomato, carrot and frozen peas and stir.

Add the moong dal, masoor dal and quinoa along with turmeric powder and salt.&nbsp;

Add water 2 to 2.5 cups. I add 2.5 cups (20 oz) because I prefer little thin khichdi. And it also thickens as it cools down so I like adding 2.5 cups. You may add 2 cups (16 oz) water.

Stir everything together and close the pot. Press the manual or pressure cook button and cook on high pressure for 5 minutes. The pressure valve should be in the sealing position.Let the pressure release naturally for 5 minutes and then do a quick pressure release.

Open the lid and add chopped cilantro. Then squeeze in some fresh lemon juice.

Enjoy quinoa khichdi with a side of yogurt or pickle.
