So today I am Sharing one of my families favorite dish Vegetable Quinoa Pulao. It is very delicious, healthy and perfect meal.

Vegetable Quinoa Pulao / Pilaf

Quinoa

Onion chopped

Corn

carrot

Chopped Mushrooms

Chopped Bell Pepper

tbsp Grated Ginger-garlic

tbsp Oil

Cumin seeds

Salt

tsp Turmeric powder

Chili powder

tsp Garam masala

Water

Lemon juice

Cilantro

Add oil to the Instant Pot and put it in saute mode.

Add cumin seeds. let it splutter. Add grated ginger-garlic and saute for few seconds.

Now add onion, saute it for a minute.

Add carrot, corn, bell pepper and mushroom. Season vegetable with salt and Saute for a minute.

Now add turmeric powder, chili powder and garam masala. Let it cook for a minute.

Wash the quinoa properly and add it into the sauted veggie mixture. Cook for a minute and add water.

Secure the lid. Change Instant Pot setting to rice mode with vent closed.

After the instant pot beeps, let the pressure release naturally.

Open the lid, fluff them up with fork.

Add lemon juice and cilantro.&nbsp;

Serve hot with Cucumber Raita.

Heat oil in the Pressure cooker.

Add cumin seeds. Let it splutter. Add grated ginger-garlic and saute for few seconds.

Secure the lid. Pressure cook this for 2 whistles.

Let the pressure cooker cools down completely.

Add lemon juice and cilantro.

Heat oil in a pan.

Cover the pan with lid. Let it cook for about 10 minutes over medium to high heat. Stir occasionally.

Enjoy Quinoa Pulao with Raita.

Vegetable Quinoa Pulao | Pilaf In Instant Pot | Instant Pot Recipe

Instant Pot Quinoa Pulao is an easy one-pot meal made with fluffy quinoa, mixed vegetables, aromatic spices, and herbs for a flavorful high-protein, high-fiber meal.

Quinoa Pulao

cumin seeds

onion (chopped, about 1 cup)

½ inch ginger

garlic

serrano chilies

vegetable medley (carrots, peas, corn, beans)

quinoa (rinsed 2-3 times)

cashews

almonds

salt (adjust

turmeric

½ teaspoon kashmiri red chili powder

garam masala

cilantro (chopped for garnish)

bay leaves

water

lime

Add serrano chilies, ginger and garlic to a mini food processor and pulse a few times to finely chop all. You can skip this step if you have premade ginger garlic paste. In that case, just finely chop the green chilies with the onion.

Select SAUTE to preheat the Instant Pot. Now add oil (or ghee) and cumin seeds. When the cumin begins to sizzle, add chopped onion and finely chopped ginger, garlic and chilies. Saute for 2 to 3 minutes until the onions begin to turn translucent.

Add the frozen vegetables, rinsed and drained quinoa, nuts, salt, spices, half of the chopped cilantro, and saute for a minute. Add the bay leaves.

Now add water, give it a stir and using your spoon scrape the bottom of the pot to ensure nothing is stuck to the pot. Cancel Saute and close the lid. Change the pressure valve to sealing position. Select Manual or pressure cook for 2 minutes at high pressure.

When the cooking time is up, let the pressure release naturally, takes about 5 to 7 minutes. Open the lid when the pressure pin drops.

Gently fluff the quinoa with a fork. Add cilantro and lime juice (if using) and gently fluff the quinoa again to incorporate them. Now let the pot sit uncovered for about 5 minutes to allow any excess moisture to evaporate.

Transfer to a serving bowl and serve warm with a cooling cucumber raita. Enjoy!
