En esta receta, vamos a preparar el rabo de toro a la cordobesa guisado al vino tinto, uno de los platos más típicos y tradicionales de esta ciudad. A continuación, vamos a ver el paso a paso para preparar en casa una carne para chuparse los dedos.

Rabo de toro a la cordobesa

1,5 kg de rabo de toro, vaca, ternera o buey

Pimienta negra molida

70 g de harina de trigo

375 g de aceite de oliva

350 g de cebolla

dientes de ajo

200 g de zanahoria

g de tomate triturado (natural o en conserva)

hoja de laurel

300 ml de vino tinto

700 ml de agua

clavos de olor

g de patatas

Salpimentamos el rabo de vaca y lo enharinamos

Cortamos la cebolla, el ajo y la zanahoria

Hacemos un sofrito con el ajo, la cebolla y la zanahoria

Añadimos el tomate triturado y el laurel al sofrito

Incorporamos los trozos de rabo a la cazuela

Añadimos el vino tinto y cocinamos a fuego vivo hasta que se evapore el alcohol

Añadimos el agua y los clavos de olor, y cocinamos con la cazuela tapada

Pasadas 2 horas y media, ya está listo el rabo de toro

Sacamos el rabo de la cazuela para triturar la salsa

Volvemos a poner el rabo en la cazuela para darle un hervor al conjunto

De guarnición, preparamos unas patatas fritas cuadradas

Como no podía ser de otra forma, os traemos al blog la historia sobre uno de nuestros platos estrella de la ciudad, el rabo de toro. Aunque esta receta se remonta a la época romana, donde aparece en el libro culinario “De re coquinaria” de Marco Gavio Apicio, poco tiene esta que ver con la evolución sufrida a lo largo de los años en la ciudad de Córdoba.Con los años de escasez sufridos en España, llegaba el auge en Córdoba por los toros, donde grandes figuras de este arte se elevaban en la plaza de nuestra ciudad. Tras los encuentros, donde los diestros daban final a los toros bravos en el ruedo, se pasaba a otro escenario donde las gentes esperaban ansiosas, las puertas traseras de la plaza. Aquí, el encargado de la hazaña, procedía a regalar el rabo, las orejas y demás casquería del animal. Acto seguido, el protagonismo pasaba a las mujeres cordobesas, que con gran maña y paciencia, conseguían de estos deshechos, realizar platos que alimentaran a un gran número de personas, entre familiares y vecinos.En este sentido, nos recuerda a otro gran plato de la cocina cordobesa como es el salmorejo, que siendo platos de comida humilde, han ido consiguiendo importancia y valor en nuestra cultura gastronómica, llegando a ser emblemas de nuestra cocina, considerándose plato gourmet, entre los que unos pocos cocineros logran destacar por sus recetas y destreza realizando esta delicia.A día de hoy existen muchas variantes de este plato, y cada cocinero guarda sus trucos bajo llave para conseguir sacar el máximo sabor y que el cliente lo disfrute en sus mejores condiciones. Aunque cada uno tenga su técnica, es seguro que todos los platos llevan a Córdoba por bandera, conservando el espíritu de esas mujeres cordobesas que buscaban ofrecer a sus consumidores, un sentimiento de placer y gozo en cada bocado.

Rabo de toro al estilo cordobés

cebolla

zanahoria

o 2 clavos

ajos hermosos

tomate pelado y sin pepitas

pimentón dulce, sal y pimienta

azafrán o colorante

vasito de aceite de oliva virgen

vasito de buen vino blanco (montilla-moriles)

Picar finamente la cebolla, ajo, tomate y zanahoria y pochar en la olla a presión, con aceite y sal.

Cuando está casi hecho, agregar el rabo y marear bien, echar el vino y seguir mareando hasta que se evapore.

Entonces poner el azafrán y dos vasos de agua caliente, sal y pimienta y cerrar

Dejar a la presión 1/2 hora aproximadamente; dependiendo del tipo de olla, varía bastante.

Abrir la olla y verificar si están tiernos, porque hay que tener en cuenta que no debe desprenderse la carne del hueso, pero si tiene que estar tierna.

Yo le doy un hervor a fuego muy vivo para mezclar bien los ingredientes y ojo que hay que mover siempre meneando la olla con energía, porque si no corremos el riesgo de que se estropee la presentación.

Consejos y trucos para cocinar Rabo de toro cordobés:  Lo dejo siempre de un día para otro, incluso más, que coge mejor el sabor. Cuando se vaya a comer, calentarlo a fuego muy suave, porque se podría pegar.

Rabo de Toro is a Spanish oxtail stew that takes long cooking at a low temperature. The red wine, sherry and vegetables create a decadent gravy.

Rabo de Toro

milliliters (2 tbsp) vegetable oil

2kg (4lbs) oxtail, segmented and excess fat trimmed

onions,

garlic cloves,

carrots,

celery sticks, washed and chopped

1kg (2lbs) tomatoes, washed and chopped

milliliters (3 cups) red wine

milliliters (1 cup) dry sherry

bay leaves

(2 ounces) parsley, washed and chopped

Preheat the oven to 180°C / fan 160°C / 356°F / gas mark 4.

Heat the oil over a high heat in a large oven proof pot.

Brown the oxtail all over. It’s best to do it in batches. Set the oxtail aside.

Continuing using the same pot, lower the heat and add the onions, stirring vigorously to soak up all the fats. Fry for about 3 minutes, or until softened and translucent.

Add the garlic, carrots and celery to the onions. Stir fry for about another 5 minutes, sweating the vegetables.

Add the tomatoes, and cook for another 5 minutes until a very chunky sauce forms.

Tip the oxtail in with the vegetables and stir.

Turn the heat up to high then pour in the red wine. Let it bubble for 3 minutes.

Add the sherry and bay leaves, cook for another 2 minutes.

At this point you have to check the level of liquid in the pot because you don’t want it to dry out while cooking. Add enough water that all ingredients are barely covered. Continue cooking until a bubbling point is reached.

Place the lid on the pot and transfer to the oven.

Check the liquid level every hour or so and add a splash of water if required.

Lower the temperature to 160°C / fan 140°C / 320°F / gas mark 3, add the parsley and stir, then cook for another 1½ hours.

Fish out the oxtail and pieces of meat that fell off because it’s so tender. Set aside.

Get a large bowl or pot and sieve the remaining contents. The goal is to separate the vegetables and bay leaves from the sauce.

Give the vegetables a squeeze to get as much of the juices out as possible, then discard them. What you’ll be left with is a rich, dark and glossy gravy.

Tip the oxtail back into the sauce, stir and gently reheat before serving.

Serve immediately, with chunky potato wedges - tapas-style. Enjoy!

My favourite tapas is anything with Chorizo in it, especially with a bit of red wine sauce
