This Ramen Noodle Stir Fry comes together in just 15 minutes for a quick and easy meal!

Ramen Noodle Stir Fry

vegetable oil

green onions, chopped

garlic cloves, finely chopped

bok choy, chopped

packs of ramen noodles (any type you like, gluten-free if needed)

tbsp sesame seeds

tbsp dark soy sauce

tbsp light soy sauce

tsp sesame oil

tbsp sweet chili sauce

tsp sambal oelek (or sriracha)

Heat the vegetable oil in a pot or pan on medium-high heat, then add the green onions, garlic and bok choy. Cook for 3-4 minutes until the bok choy is tender.

While the bok choy is cooking, mix the sauce ingredients together in a small bowl.

Boil the ramen noodles just until they begin to come apart and are slightly soft, then drain and add the noodles and sauce to the pot, mixing everything together on medium heat for 2-3 minutes. 

Serve topped with some sesame seeds and sliced green onions

This is addictive! Absolutely yummy. Didn’t have sweet chili sauce so had to make my own first (couldn’t run to store w/this covid thing going on).  So worth it.

Love this! So so easy to make. I made it a second time yesterday and added some sauteed broccoli and tempeh, it was delicious!

This recipe is perfect and definitely a crowd pleaser. I customized it a little bit using a mixture of Simple Truths Fettuccine and spaghetti noodles, &amp; instead of bok choy I used Spinach. Since I added more noodles, of course I had to portion the ingredients to the correct taste of this recipe. Portioning was big enough for a family of 5 and there were even extras. Next time, I'm going to add shrimp to it :) Definitely recommend trying this recipe!! You will not regret it!

This recipe was SO quick, easy and so tasty! The whole family enjoyed this one. We added some fried tofu and my husband added chicken and it was amazing. We’ve added it to our weekly dinner menu. Definitely a must try!

Super easy to make! I got all the ingredients from Walmart easily and it takes at most 30 minutes to do. My roommates love this meal and I do too.

I love this recipe. I am a salad eater and always have bell peps, mushrooms, onions, sugar snap peas, on hand.  I like the baby bok choy and some napa cabbage and doubled the sauce. Loved it. I did use low sodium on one of the soy sauces. It was sooooo good.  Someone on a review said they were going to add shrimp. I am going to try that too.  I had surprise company and this is what we had. They all loved it and ask for the recipe. Thanks again. This one goes into my favorites file.

I made this tonight.  Love it.  I modified it by first stir-frying some thinly sliced chicken breast (mixed with soy sauce and sesame oil first). Then the veges and the noodles.  
I didn't have sweet chili sauce so used garlic chili sauce instead.  This made it spicy, which I always enjoy.

Chicken Vegetable Ramen Noodles

tbsp oil

garlic (, minced)

onion (, sliced)

chicken

(315 ml) water, plus more as needed

carrot (,

red capsicum / bell pepper (, sliced)

cabbage (, finely sliced (any type))

tbsp dark soy sauce ((Note 3))

tbsp Oyster sauce ((or Hoisin, Note 4))

tsp Hoisin sauce ((or more Oyster sauce))

tbsp Mirin ((Note 5))

green onion / shallots

Mix Sauce.

Heat oil in a large skillet over high heat. Add onion and garlic, cook for 1 1/2 minutes until starting to go golden.

Add chicken and cook just until the outside mostly changes from pink to white.

Add Sauce and cook for 1 minute until chicken is quite caramelised.

Add carrot and capsicum, cook for 1 minute (chicken should now be nicely caramelised, see video).

Push chicken and veg to the side to make enough space for the noodles.&nbsp;Add water, place noodles in water.

When the water starts simmering on the edges, leave noodles for 45 seconds then turn.

Leave for 30 seconds, then untangle the noodles, then toss through the chicken and veg.

Add cabbage, toss for 1 minute until sauce reduces to coat the noodles and the noodles are cooked. (Note 6)

Serve immediately, garnished with green onions.

I made 5 packets instead of two for my family of five, hoping to have leftovers for the next day (as we usually do), but every last bit disappeared without a trace. I made one batch with tempeh too, instead of chicken for the vegetarians. I also minced leftover zucchini and added to it, and the children never knew. So simple yet so delicious! Thank you Nagi!

Have made this many times.  First time I made it my kids demanded that they have it weekly they enjoyed it that much.  Have frozen it and reheated in the microwave and still tastes amazing

I love the flavours of the sauce in this, different to the Charlie sauce (and maybe even better?!) My husband and I enjoyed this so much we ate most of the 3 person serving between us with just enough for lunch for me the next day. A really, really tasty dinner!

Fabulous meal, so easy and absolutely delicious, I did double the chicken so there are left overs. The cabbage added a lovely taste as well.  Did not have dark soy sauce so just used the light but it was fine.
