Cut ramps, including greens, crosswise into 1" pieces; set greens aside. Heat 3 Tbsp. butter in a medium skillet, preferably nonstick, and cook bulbs and stalks, stirring often, until softened, about 5 minutes.

Add greens and cook, stirring, until tender, about 2 minutes; season with salt and pepper. Transfer to a plate.

Heat remaining 3 Tbsp. butter in skillet. Lightly beat eggs, add to pan, and cook, stirring often, until just set. Mix in ricotta; season with salt and crushed red pepper flakes. Divide scrambled eggs among toast; top with ramps.

The name says it all. Shrimp with a garlicky, pungent, buttery scampi sauce—plus ramps! The combination of garlic and ramps may seem like overkill, but we promise it’s not.

Shrimp and Ramp Scampi

extra-virgin olive oil,

garlic cloves, thinly sliced

dry white wine

1¼ lb. large shrimp, peeled, deveined,

unsalted butter

The name says it all. Shrimp with a garlicky, pungent, buttery scampi sauce. The combination of garlic and ramps may seem like overkill, but we promise it’s not. The garlic will mellow as it cooks while the ramps stay pungent. We tried it without the garlic and it just wasn’t as good. Sometimes more is more.

Combine 3 Tbsp. oil and ramp bulbs in a large skillet. Set over medium heat and cook, tossing occasionally, until bulbs are softened but have not taken on any color, 6–8 minutes. Add garlic and ½ tsp. mild red pepper flakes and cook, tossing occasionally, until garlic is softened, about 3 minutes. Add wine and increase heat to medium-high. Let cook, stirring occasionally, until wine is reduced by half, about 2 minutes. Add ramp greens, shrimp, and butter to pan. Season with salt and cook, tossing occasionally, until ramp greens are wilted, shrimp turn pink, and butter is melted, about 3 minutes. Remove skillet from heat. Finely grate zest from lemon half over shrimp, then squeeze in juice.

Transfer shrimp to a platter. Sprinkle with more mild red pepper flakes and drizzle with plenty of oil.

With a mason jar and vinegar, ramp season lasts a little longer.

Pickled Ramps

Trim greens from ramps; reserve for another use—like pesto! Pack bulbs into a heatproof 1-pint jar along with dried red chiles, bay leaves, fennel seeds, and black peppercorns.

Bring white wine vinegar, sugar, salt, and 1 cup water to a boil in a medium saucepan, stirring to dissolve. Pour over ramps to cover. Seal jar. Let cool, then chill.
