Made with whole wheat wrap tortillas, crispy, fresh vegetables, homemade healthy fiesta ranch, and slow cooker ranch chicken, this recipe is INCREDIBLY delicious and easy to make!

Slow Cooker Fiesta Ranch Chicken Wraps

plain yogurt (or light sour cream)

Tablespoon avocado oil

Tablespoon warm water

parsley

onion powder

dried chives (or dried onions)

chipotle chili powder

cumin

garlic

salt

pepper

red pepper (optional)

chicken breasts

whole wheat tortillas (or lavash flatbread)

spinach, chopped

medium bell pepper, thinly sliced

6-8 medium grape tomatoes, sliced

corn, cooked

beans, cooked

avocado,

Mix Yogurt &amp; Water

Mix together the yogurt, oil, and warm water in a medium bowl.

Add Ranch Seasoning

Mix in the parsley, onion powder, chives, chili powder, cumin, garlic, salt, pepper, and crushed red pepper (optional).

Put Chicken In Crockpot

Place the chicken breasts in the slow cooker.

Add Ranch Dressing

Spread 2-3 Tablespoons of the homemade ranch sauce over the chicken (making sure not to dip the spoon back into the bowl of ranch to prevent contamination).

Cook On High

Place the lid on the slow cooker and cook on high for 2 hours.

Lay Out Wraps

When the chicken is almost done cooking, lay out each tortilla or wrap.

Layer Wrap Ingredients

Layer the tortillas with the leftover ranch dressing, chopped spinach, sliced bell peppers, sliced tomatoes, corn, beans, and avocado slices.

Shred Chicken

Once the chicken is done cooking, use two forks to shred it into small pieces.

Add Chicken To Wraps

Roll Wraps

Roll each tortilla into a wrap and cut into halves.

Slow Cooker Fiesta Ranch Chicken Wraps Recipe

Mexican Chicken Wraps - tortillas stuffed with chicken cooked in taco seasoning, spinach (or lettuce), green onions, red bell pepper, and shredded cheddar cheese.&nbsp; &nbsp;Serve these&nbsp;with Greek yogurt based dressing, spiced up with the taco seasoning. Or, alternatively, use Ranch dressing.

Mexican Chicken Wraps

vegetable oil

chicken breasts (, skinless, boneless)

taco seasoning

spinach (, shredded)

tomatoes (, diced)

green onions (, chopped)

red onion (, chopped)

red bell pepper (, thinly sliced)

cheddar cheese (, shredded)

flour tortilla wraps (or gluten-free tortillas

Ranch salad dressing

Greek yogurt

taco seasoning (or more)

cilantro (, chopped)

Season the chicken breasts with taco seasoning on both sides.  Heat the skillet on medium-high heat, add oil, then sear chicken about 3-4 minutes on each side.  Remove from heat and keep the skillet covered to allow chicken to continue cooking off heat until no longer pink in the middle.  Cool the breasts then slice them into small cubes

Chicken:

Combine other ingredients (spinach, tomatoes, green onions, red onion, red bell pepper, grated sharp cheddar cheese) and cubed chicken (from step 1) in a large mixing bowl.  Drizzle with the desired amount of Ranch dressing (or Greek yogurt based dressing), and toss.

Spoon the chicken and spinach mixture evenly on top of tortilla.  Roll up.   Use tooth picks at two opposite ends of each tortilla to help it hold it together, if desired.    Serve immediately.  Or, remove tooth picks, wrap tightly in plastic wrap and refrigerate.
