Cheesecake squares, lightened up with yogurt and light cream cheese, baked on a chocolate graham cracker crust drizzled with melted chocolate and topped with fresh raspberries.

Skinny Chocolate Raspberry Cheesecake

cooking spray

crushed chocolate graham cracker crumbs

butter

reduced fat cream cheese (softened)

sugar

vanilla Greek yogurt (I used Chobani)

tsp vanilla extract

tbsp all purpose flour

oz Baker's semi-sweet dipping chocolate

raspberries

Heat oven to 350°F. Spray an 8-inch square baking pan with non-stick spray.

Mix together graham cracker crumbs and butter with a fork until mixed through. Press evenly into bottom of prepared pan.

Gently beat cream cheese, sugar and vanilla until smooth using an electric mixer.

Gradually beat in fat free yogurt, egg whites and flour., do not over beat. Pour over graham cracker crust.

Bake 25 to 30 minutes or until center is almost set.

Cool to room temperature then chill a few hours in the refrigerator.

Cut the cake into 9 slices.

Melt the chocolate in the microwave, 30 seconds at a time until melted, careful not to burn.

Use a spatula to drizzle the chocolate all over the top of the cheesecake. Top each piece with 2 raspberries and enjoy!

Crack open and empty eggs into a bowl

Add cheese.

Add Keto Chow.

Put a small amount of the mixture into the waffle maker, this will take a bit of practice to get right but it&#x27;s around 2 tablespoons. You&#x27;re only filling it maybe halfway.

Chaffles are all the rage these days, and frankly: for good reason. They're extremely easy to make, taste great, and really fill the need for waffles, buns, pizza crusts, and more. This super-simple, 3 ingredient recipe is something we've been cooking up around here and wanted to share with everyone. You can use any of the flavors of Keto Chow, here are some of our favorite uses:

* Use eggnog, chocolate, banana, or any of the other sweet flavors to make an amazing waffle. Throw on some whipped cream and you're all set!
* Use the Creamy Tomato Basil Keto Chow to make pizza crusts
* Use the Savory Chicken Soup to make a bun/roll for burgers or a grilled cheese sandwich
* Use Spicy Taco Soup to make a soft taco shell

Keto Chow Raspberry Cheesecake Breakfast Scones

servings Raspberry Cheesecake Keto Chow (or substitute Strawberry Keto Chow)

coconut flour

granulated erythritol (Swerve)

Tbsp baking powder

unsalted butter

cold cream cheese

sour cream

In a food processor, add Keto Chow, coconut flour, erythritol (I used 1/4 cup of sweetener because I don’t like things super sweet; if you do, add 1/2 cup!!), and baking powder and pulse to combine.

Add in cubed butter, and cream cheese and pulse again until mixture is crumbly.

Beat together eggs and sour cream with a fork or whisk and add to flour mixture. Pulse until it all comes together, but not too long.

The dough will be sticky. Pull out half and add to wax or parchment paper and make into a round shape.

Put another paper on top and press until 1 inch thick. Use cutter and make the scones and add to sheet pan with parchment paper.

Repeat with the remaining dough.

Bake on 350 degrees for 20 minutes.

These are even better with a little sugar free raspberry preserves.

Easy and simple, use just about any flavor Keto Chow to make donuts

Keto Chow Donuts

butter (melted)

cream cheese (softened)

mozzarella cheese

serving Keto Chow (flavor of your choice)

baking powder

calorie free sweetener (powdered erythritol or swerve)

water

cream cheese

heavy cream

sweetener

Mix all ingredients in a bowl.

Only fill molds half way, they will rise quite a lot.

Microwave for 8 minutes (or less if you want them more moist).

Glaze and enjoy!

Raw vegan raspberry cheesecakes that are gluten-free, and refined sugar-free

Raw vegan raspberry cheesecakes

almonds

Medjool dates

raw cashews (soaked overnight, rinsed, and drained)

coconut milk

maple syrup

lemon juice

coconut oil, melted

tsp vanilla extract

cashews (soaked overnight)

almond milk

In a food processor blend the almonds and Medjool dates together until it forms a sticky dough. (if your dough isn&#8217;t sticky enough to bind together, add a couple more dates.

Press the dough into the bottom of a silicone cupcake mold and set in the fridge while you prepare the cheesecakes

Blend the raw cashews, coconut milk, maple syrup, lemon juice, coconut oil, and vanilla together in a high-speed blender until smooth and creamy. Pour half the mixture into the cupcake molds, leaving the rest to make the raspberry layer.

Add the raspberries to the blender and blend until smooth. Add the raspberry layer on top and place in the freezer.

Let freeze for 4 hours then remove from freezer and serve

To make the raw icing, blend all the icing ingredients together in a blender until smooth. Scoop into a bowl and place in the fridge to firm up for 2 hours. Put in a piping bag if desired and pipe onto the cheesecakes

Thank you for this recipe, it worked really well :) I used the walnut, date &amp; cacao base from your dragonfruit bar recipe and only had cherries so whizzed those for the top layer. Topped with some cacao nibs and it looked and tasted great!

Raspberry No Bake Cheesecake

cream cheese (full fat, softened slightly)

sour cream (or Greek yogurt)

vanilla extract

graham cracker crust (or homemade crust)

raspberry jam (or use your favorite flavor)

whipped cream, raspberries, whipped topping, mint

In a large bowl, beat together cream cheese and granulated sugar together until light and fluffy, about 2 to 3 minutes.

Add in the sour cream, whipped topping (or whipped cream), and vanilla extract. Beat until well incorporated.

Pour cream cheese mixture into graham cracker crust and smooth until filling reaches the edges. Set aside for now.

Heat raspberry jam in a microwave for 15-20 seconds or until it thins and becomes easy to work with.

Dot the top of the cheesecake with the raspberry jam. Using a knife, gently swirl the jam to make a zig zag design over the top.

Place the cheesecake into the refrigerator and chill for 2 to 3 hours or until completely set.

Add additional whipped topping and fresh raspberries to decorate if desired.

White Chocolate Raspberry Cheesecake - the best raspberry cheesecake recipe ever, with rich, sweet and creamy cheesecake loaded with fresh raspberries and raspberry sauce. This incredible dessert is to die for!

White Chocolate-Raspberry Cheesecake

corn starch

chocolate-cookie crumbs (about 22 Oreo cookies)

sugar (+ 3 tablespoons)

unsalted butter (melted)

white chocolate chips

half-and-half

eggs (at room temperature)

Stir together the raspberries, water, sugar and cornstarch in a saucepan; bring to a boil and cook until sauce thickens, about 5 minutes. Strain with a mesh strainer, discard the seeds. Set aside.

Make Sauce:

Preheat oven to 325°F (162°C). Stir together the cookie crumbs, 3 tablespoons sugar and butter in a bowl. Press mixture into the bottom of a 9-inch spring form pan. (I used Oreo cookies, put the cookies inside a Ziploc bag and smashed with the bottom of a small pan.)

Melt white chocolate chips with half-and-half in a metal bowl set over a pan of simmering water, stirring occasionally, until smooth.

Gently beat together cream cheese and remaining 1/2 cup sugar with an electric mixer at low speed until smooth. Beat in eggs, one at a time. Stir in cornstarch, vanilla extract and white chocolate mixture. Mix well, but do not over mix. Pour half of batter over crust and drizzle with 3 tablespoons sauce on top. Add remaining batter, and spoon 3 tablespoons sauce on top. Swirl sauce on batter with a knife tip or a bamboo skewer to create the marbling effect.

Bake until center jiggles slightly and edges are puffed, 40-45 minutes. Cool at room temperature, then cover with plastic wrap and chill for at least 2 hours, or best overnight, before removing from pan. Top the cheesecake with the remaining sauce and fresh raspberries. Slice and serve cold.

Make Cheesecake:

Customise our raspberry cheesecake by adding white chocolate, yogurt or mascarpone, or, for a richer base, swap the digestive biscuits for shortbread

No-bake raspberry cheesecake

digestive biscuits

unsalted butter, melted

full-fat soft cheese

caster sugar

double cream

icing sugar, for dusting (optional)

Blitz the biscuits in a food processor or tip into a food bag and bash to fine crumbs using a rolling pin. Transfer to a bowl and stir in the melted butter until the mixture looks like damp sand. Tip the buttery crumbs into a 20cm springform tin and press into the base using the back of a spoon until you have a smooth, even layer. Chill until needed.

Tip the soft cheese, sugar, vanilla, and cream into a bowl and beat using an electric whisk until thick and creamy. Fold in about two-thirds of the raspberries, pressing the berries lightly against the side of the bowl as you do to squeeze out some of their juices and lightly ripple the cream.

Scrape the cheesecake mixture over the chilled base and smooth the top with a spatula. Chill for at least 6 hrs, or preferably overnight. Can be made up to two days ahead and chilled. To serve, carefully remove from the tin, scatter with the remaining raspberries and dust with icing sugar, if using.

Subway Raspberry Cheesecake Cookies Recipe

(111 grams) salted butter (softened)

oz cream cheese (room temperature)

(115 grams) granulated sugar

raspberry muffin mix

(114 grams) all-purpose flour

tsp baking powder

(100 grams) white chocolate chips

Preheat oven to 350°F (180° C).

Cream together butter and cream cheese. Add in sugar and mix until incorporated. 

Mix in egg and vanilla.

Add the muffin mix, flour, and baking powder to the bowl and combine. Stir in the white chocolate chips. The dough will be very sticky.

Scoop dough onto pan and cook for 12-14 minutes. The cookies are done when the edges start to brown just a tad.

Made these a few times now,  They really do taste just like the ones at subway ! Everyone loved them !!! And I tried them with blueberry mix as well they did not disappoint 😍

My family fell in love with these cookies. They are amazing. I tried them with blueberry muffin mix and zested lemon, very good but the Raspberry are my favotite.

Oh my goodness. They turned out perfect! Super easy to throw together too! They look and sound so fancy but are sooo easy. I had to order the muffin mix off Amazon. Do you think the Martha White brand 7oz strawberry muffin mix would work just as well? I got that originally since no where around me sold the mix listed in the recipe.. so now I’m curious if I could use that next time.

These cookies are so good. I’ve made them twice.  The second time I made them I pushed the center of the cookie dough after dropping it on the parchment paper with my thumb and filled it with a small amount of raspberry jam... made them really tasty.  I’m think if I rolled the scooped dough in crushed graham cracker crumbs then do the thumbprint it might me a take on raspberry cheesecake ...🤔

If you are having trouble finding the raspberry muffin mix in Jiffy brand, try Betty Crocker's or any other brand you can find in a 7 oz. pkg. Cranberry works well if you cannot find raspberry.

I am sooo happy I found this copycat recipe!  I bought these from Subway 2 days ago for the first time. OMG they are sooooo  AWESOME!!  I am making these tomorrow and plan on taking them to my brother's birthday party I know they will be a hit!!  Oh yeah I use salted butter in my baking as well.  I saw one of the cooking shows and they spoke about which to use and the baker said to use salted.  Because a pinch of salt brings out the flavor in foods.  This would be a great one to try one of each to see if that is true.  So thrilled I found you!!

Raspberry Cheesecake
