These delicious roasted artichoke hearts are topped with parmesan cheese and baked till crispy. They're a fantastic simple side dish or appetizer.

Roasted Artichoke Hearts

This simple, hearty dish is so delicious. Think pan-seared salmon with buttery artichokes and the addition of smooth orzo swirled in a rich creamy sauce. 

Salmon with Artichoke Orzo

unsalted butter

salmon

salt (divided)

tsp black pepper (divided)

garlic powder

½ tsp sweet paprika

garlic

onion

thyme

orzo

chicken broth

artichoke hearts

Parmesan

lemon juice

heavy cream

parsley (for serving)

chili flakes (for serving)

seasoning

Get your prep done before you start cooking. Pat the salmon fillets dry with a paper towel. Season both sides with garlic powder, paprika and ½ teaspoon salt and pepper.

Finely chop the onion, mince the garlic and halve the artichokes.

searing

Heat oil and butter over medium high in a large nonstick pan or skillet. Add salmon fillets and cook 3 minutes per side. Remove from skillet onto a clean plate and set aside.

sautéing

Reduce heat to medium, add garlic and onion. Cook until soft and fragrant for about 2 minutes. Stir in thyme, and the remaining salt and pepper. Next add orzo and cook for 1 minute.

simmering

Pour in broth and bring to a boil. To maintain a simmer, reduce the heat to medium-low. Cook uncovered until almost al dente and most of the liquid is absorbed, about 10 minutes. Stir frequently to keep the orzo from sticking to the bottom of you skillet and to release its starch.

cooking

Stir in Parmesan. Add artichokes and lemon juice. Pour in cream and simmer for 2 minutes or until the sauce starts to thicken. Return salmon to the skillet and simmer everything for 3 more minutes or until the salmon is heated through.

serving

Top with chili flakes, freshly ground black pepper and parsley. Serve immediately. Enjoy!

Crispy Parmesan Artichoke Hearts

artichoke hearts (, drained and patted dry)

extra virgin olive oil

eggs (, lightly beaten)

parmesan cheese (, finely grated)

panko breadcrumbs

Italian seasoning

fine sea salt

herb lemon aioli sauce

Preheat oven to 425°F and line a rimmed baking sheet with parchment paper or coat lightly with cooking spray.

Place the artichoke hearts in a bowl and coat with the olive oil.

In a medium bowl, mix together the garlic powder, parmesan cheese, panko, Italian seasoning, salt and pepper.

Dip each artichoke in the egg mixture, then in the cheese mixture.

Place on baking sheet and bake for 20 minutes, flipping halfway.

Serve hot with aioli dipping sauce.

My family loved them. They are difficult to roll in panko breading. They are wet from olive oil and egg and it makes the coating slide off. I rolled them in flour first, then egg, then breadcrumb cheese mixture like you would a chicken cutlet. It certainly helped the breadcrumb coating adhere better.

I'm usually not a huge fan of artichoke hearts because they're super chewy and dense. But this way of preparing artichoke hearts made them light and crispy! It was delicious!

Such a unique and unexpected recipe that did not disappoint! Easily, a new family favorite dish; my whole family loved it!
