A Lowcountry recipe popular from Charleston to Savannah, made from rice cooked with bacon and a tomato broth seasoned with peppers and onions perfected by the Gullah and Geechee.

Charleston Red Rice

This classic Red Rice is a Lowcountry side dish of long grain white rice that&#039;s baked with bacon, onion, garlic and tomato!

Preheat oven to 350° F. Grease a 2-quart baking dish; set aside.

In a large skillet, cook bacon over medium heat until crisp, about 7-8 minutes. Use a slotted spoon to remove bacon to a paper towel-lined plate, reserving the drippings in the pan. Melt butter in the same skillet over medium-high heat.  Add onion and cook, stirring, until the onion softens, 3 to 4 minutes. Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds. Stir in the tomato paste, kosher salt, sugar and pepper. Cook for 1 more minute.

Add the bacon, water and rice. Bring to a simmer, then reduce the heat to low. Cook, uncovered, stirring  occasionally, until the liquid has reduced slightly, about 8-10 minutes. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet as you stir.

Transfer to the prepared baking dish. Cover and bake until the rice is tender, about 40-45 minutes, stirring every 15 minutes.

Fluff the rice, garnish with fresh parsley, and serve.

On the surface this looks like a classic spring roll, with the shrimp beautifully displayed against the thin rice flour wrapper. Inside, though, red jasmine rice replaces the traditional rice noodles, and the vegetables are seasoned. You can find red jasmine rice at Whole Foods, distributed by Alter Eco. Bhutanese rice or brown rice may be substituted if you can’t find it

Spring Rolls With Shrimp, Red Rice and Herbs

mint leaves, coarsely chopped, plus additional leaves

Thai basil, coarsely chopped, plus additional leaves

rice flour spring roll wrappers

Toss the rice with 1 tablespoon of the rice vinegar and the soy sauce

Place the shredded carrots, peppers, sesame seeds and chopped herbs in a large bowl and toss with 2 tablespoons of the rice vinegar and salt to taste. Place the lettuce in another bowl and toss with the remaining vinegar and salt to taste.

Fill a bowl with warm water and place a spring roll wrapper in it just until it is pliable, about 30 seconds. Remove from the water and drain briefly on a kitchen towel. Place the wrapper on your work surface in front of you and arrange several whole mint, cilantro and basil leaves, vein side up, on the wrapper. Arrange 3 shrimp halves, cut side up, down the middle of the wrapper, leaving a 2-inch margin on the sides. Top with a handful of the carrot mixture, then with a handful of lettuce. Place a handful of rice over the lettuce. Fold the sides in, then roll up the spring rolls tightly, squeezing the filling to get a tight roll. Refrigerate until ready to serve. Serve with a dipping sauce of your choice.

An iconic side dish from the Lowcountry of South Carolina, Charleston red rice has a distinct grain and gets its signature flavor and color from bacon and tomato paste. Slightly sweet with a little kick, this side dish goes with nearly any Southern entree!

Baked Charleston Red Rice with Sausage

yellow onion (diced small, about 1/2 cup)

green bell pepper (diced small, about 1/2 cup)

oz beef smoked sausage (diced small)

tomato paste (half a 6-oz can, or 1/3 cup plus 1 tbsp)

garlic powder

onion powder

tsp kosher salt

tsp black pepper

tbsp Frank's red hot

Preheat oven to 350 degrees F.

Rinse the rice by putting the rice in a medium bowl and covering with an inch of cool water. Gently swirl the rice in the water with a clean hand. Drain in a fine mesh sieve and return rice to the bowl. Repeat until water is mostly clear, a total of about 4-6 times (In my experience, regular long-grain rice required about 4 rinses while Carolina gold rice required 6). On the final rinse, leave the rice in the fine mesh sieve over the bowl so it can continue draining any excess water while you&#039;re cooking the bacon, veggies, and sausage.

In a large cast iron skillet, cook bacon over medium heat. Remove bacon and drain on paper towel, leaving the bacon grease in the skillet.

Add finely diced onion, bell pepper, and smoked sausage to the pan with the bacon grease. Sauté about 5 minutes over medium heat, stirring occasionally.

Add tomato paste, sugar, garlic powder, onion powder, kosher salt, and pepper to the skillet and stir until everything is evenly coated in the tomato paste and spices.

Add uncooked rice to the mixture and stir until well coated. Continue cooking the dry rice over medium heat for about 3-4 minutes.

Add the water and Frank&#039;s Red Hot to the rice mixture, stir to combine, and bring to a boil. Turn off heat and crumble bacon into the pan.

Cover skillet with aluminum foil and bake for 30 minutes. Remove from oven and let rest for 10 minutes before removing the foil.

Fluff rice with a fork and enjoy as a side dish with your favorite Southern entree!

Red Rice and Sausage is a staple in the Southern United States, especially in the coastal areas of Charleston, SC, and Savannah, Ga. This span of low-lying coastal area is also known as the Lowcountry. Here in Charleston, red rice and sausage is a way of life. It's eaten with many different types of meals, but especially seafood. It's relatively easy to make but so flavorful.

Bring water to a boil and cook rice according to package directions. For the Instant Pot, [See Note 1].

In a 12-inch skillet, cook the bacon, then drain and set aside, reserving the oil.

Drain some of the bacon oil leaving 1 tablespoon in the bottom of the pan to cook the aromatic vegetables until softened, about 3-5 minutes. If you prefer not to cook with bacon fat, remove the oil from the pan and wipe clean with a paper towel and add 1 tablespoon of your preferred cooking oil.

When the vegetables have softened, add the andouille or smoked sausage and saute for 2-3 minutes.

Next, add the diced tomatoes and tomato paste and stir to combine.

Taste and season with salt and pepper being mindful that the bacon can be quite salty.

Add the cooked rice and stir to incorporate. Sprinkle with crumbled bacon.

Garnish with sliced green onions, optional.

An iconic dish in the Lowcountry region, Charleston Red Rice is a heavily seasoned baked rice recipe that gets its color from tomato paste.  Make a batch soon - it&#039;s delicious!

Preheat oven to 350°F.

Spray a 9”x13” baking dish with nonstick spray; set aside.

Place a large, deep skillet over medium heat.  Add bacon and cook for 5-6 minutes, or until crispy.  (Note: I used a 12” cast iron skillet.)

Transfer bacon to a paper-towel lined plate.  Leave bacon drippings in skillet.

Using the same skillet, add diced sausage, onions, bell peppers and celery; sauté, stirring occasionally, for 4-5 minutes, or until onions are translucent.

Add garlic; stir and continue sautéing for 1 more minute.

Rinse rice under cold water until the water runs clear.

Add rice to the skillet; stir and continue cooking for 1 minute.

Crumble the cooked bacon and add to the skillet along with the tomato paste, chicken stock, hot sauce, kosher salt, Cajun seasoning, black pepper, sugar and cayenne pepper.  Stir until well combined.

Reduce heat to low and simmer for 5 minutes.

Transfer contents of skillet into prepared baking dish.  Cover dish tightly with foil and bake for 30 minutes without uncovering.

Remove dish from oven, fluff the rice with a fork and continue baking (covered with foil) for 10-12 more minutes.

Garnish with chopped parsley before serving.

Red rice is a whole grain rice so all the bran is still intact. It has a slightly nutty flavor and can be used where ever you&#x27;d normally use brown rice.

Instant Pot Red Rice

Add the rice and water to your Instant Pot. Cook on high pressure for 20 minutes.Allow the pressure to release naturally for at least 10 minutes. You can then manually release the rest of the pressure or allow it to continue to release naturally.

I&#039;m sharing how to cook whole grain red rice in a rice cooker, Instant Pot pressure cooker, and on the stove. No soaking is necessary and all the tips you need to know. A video tutorial is included.

How To Cook Whole Grain Thai Red Rice (Cargo Rice)

IMPORTANT : Whatever cup that you use to measure the rice, will be the same cup you use to measure the liquid

Rinse the rice in several changes of water to get rid of any impurities. Not much starch will come out of this because the rice is whole-grain and unpolished. Drain off excess water

Use a heavy-bottom pot with a tight-fitting lid. Pour water into the pot and bring to a boil. When the water comes to a boil, add the rice and the rest of the ingredients. Give it a stir and bring it back to a boil and then lower the heat to let it gently simmer. Cover with a lid and let it cooks for the next 45-50 minutes for unsoaked rice and about 25-30 minutes for soaked rice or until the rice are soft and fluffy

Turn off the heat and let it rests for 10 minutes before opening the lid. After that, uncover the lid and fluff the rice with a fork. The rice is ready to be served

Cooking on the stove:

Put the rice and the rest of the ingredients in the rice cooker. Stir to mix. Close the lid and if your rice cooker has the option to choose the setting, choose the brown rice setting or multigrain setting. When it&#039;s done cooking, wait 10 minutes before opening the lid to fluff the rice with a fork or a rice paddle

Cooking with rice cooker:

Put all ingredients in the inner pot of Instant pot. Give it a stir to mix. Close the lid and turn the pressure release valve to sealing. Choose &quot;pressure cooker&quot; and make sure it&#039;s on &quot;high pressure&quot;. Set the timer to 25 minutes for unsoaked rice and 12 minutes for soaked rice. Then do natural release. This may take about 10-15 minutes. Carefully unlock the lid and fluff the rice with a fork or a rice paddle

If the rice still appears wet when you fluff it, don&#039;t panic. Close the lid back and press the &quot;warm&quot; button and let it warm up for about 10 minutes and when you check on it again, the liquid should have dried up

How To Cook Soft Fluffy Red Rice

If you&#39;re searching for a quick and tasty side dish to pair with your next Mexican-inspired meal, this 15-minute, 3-Ingredient Mexican rice recipe is just what you need!

Mexican Rice

This first step is optional but I find it helpful to rinse the rice first to get off that extra starch. You want to rinse it in cold water until the water runs clear and not cloudy. After you&#39;ve rinsed it well, then start the recipe. In a large skillet (or saucepan) stir together 1 cup basmati rice, 2 cups chicken broth and 10 ounce can red enchilada sauce.

Turn heat to medium-high and bring to a gentle boil. Stir well. Cover pot and turn down heat to low.

Cook for about 10-15 minutes until rice is tender. Stir mixture and season with salt and pepper, to taste.
