Perfect Roast Beef

I was a little nervous about this roast because I don't do it very often. However this recipe is perfect!
I bought a 3.5 lb bottom round roast. I didn't have any fresh herbs except rosemary, so chopped that with garlic, pepper, and olive oil,  and rubbed the roast with it on all sides. I let it come up to room temperature while I did other things.
I put it in the 450 f. with convection on, oven for 15 minutes,  reduced the temperature to 325 f (without convection) and roasted for about 1 hour 10 minutes, taking it out of the oven when internal temperature reached 127 f.
The roast rested, covered with foil,  while I got the rest of the meal together.
When I sliced it, I was Amazed! The roast was a beautiful shade of pink all the way through,  from end to end, not medium well or well done anywhere! I thought sure the center would be almost raw (if the end was pink), but no, it was perfectly pink all the way through! How does that even happen! The meat was on the lean side, and still perfectly tender.
I just had to write and tell you how great this recipe is. I've lost my fear of roasting meat, and will always follow this recipe!!

I made this last night for valentines dinner... with mashed sweet potatoes and roasted almond green beans.. it was one of the best meals I have even made.. ever! I highly recommend this roast recipe! I had a small striploin roast about 3 lb, followed this recipe. Did not have fresh herbs, I did had dry rosemary to my rub.  Cooking instructions, made my roast absolutely delicious !!!!. I made this yesterday with a 2 lb sirloin roast and it cooked wayyyy too quickly for my tastes! I think my oven runs a little hot; and with such a small roast is a challenge. I did it on 450 for 15 mins then 325 for 35 mins and internal temp was already up to 180F! I like medium rare so that was not ideal. However the recipe and rub are amazing! Just make sure to consider your own oven and the shape of your roast (mine was quite wide and thinner) ... I knew it would be quick but no idea that quick!

Rosemary Garlic Roast Beef Recipe

Preheat oven to 450˚F.

Prepare a roasting pan with a rack set over it; set aside.

Take the roast out of the fridge at least 1 hour before cooking, and up to 2 hours before cooking.

Pat dry the meat with paper towels.

Using a sharp knife, cut slits in the roast and insert the slivered garlic evenly around the whole roast.

In a small bowl combine olive oil, rosemary, thyme, salt, and pepper; mix until thoroughly incorporated.

Rub the rosemary mixture all around the roast.

Place roast on top of the rack that is set over the roasting pan.

Stick an ovenproof meat thermometer into the center of the meat.

Put prepared meat in the oven and roast for 15 minutes.

Reduce heat to 325˚F and continue to roast until internal temperature reaches 130°F for rare, 140°F for medium rare, and 150°F to 155˚F for medium to well done. This can take anywhere from 1 hour and 20 minutes to 2 hours, depending on the size of the roast and desired doneness.

Remove from oven and let roast rest for at least 20 to 30 minutes before cutting.

Cut and serve.

Season the beef with salt and pepper and let it sit, uncovered, in the fridge overnight.

Heat a sous vide water bath to 133F degrees. 

Place the beef in a vacuum seal bag (or zip lock freezer bag if you are using the water displacement method) with the remaining ingredients and seal.

Cook in the sous vide water bath for 36 hours.

Remove and place in an ice bath for 10 minutes. 

Remove from bag and reserve the bag juice to use as an au jus.

Use a sharp knife to thinly slice the roast beef and serve on sandwiches or alone.

3-4 lb top round roast beef* (at room temperature 1.5 to 2 hours before cooking)

Tbsp minced garlic (from 3 cloves)

tsp thyme leaves (or 1/2 tsp dried thyme)

tsp fine sea salt

tsp black pepper

Tbsp corn starch

dry red wine

beef broth

tsp black pepper (or to taste)

unsalted butter

Preheat oven to 450ºF. You’ll need a roasting pan with an oven rack to allow the air to circulate and to catch the drippings for gravy.

In a small bowl, mix together oil, rosemary, garlic, thyme, salt and pepper. Set aside for the flavors to meld for 5 minutes.

Pat the roast dry with paper towels and tie it with a kitchen string in 1-inch increments to create a more even thickness on the roast. Rub the roast all over with the seasoned oil. Put an oven-safe thermometer into the deepest part of the roast and set the roast on a rack inside the roasting pan.

Bake on the center oven rack at 450ºF for 15 minutes then (without opening the oven), reduce heat to 250ºF and bake for about 28-30 minutes per pound, or until the thickest part of the roast reaches 135-140ºF for Medium-Rare**. Note the temperature will continue to rise 5 degrees as it rests.

Remove from the oven, tent with foil, and rest 15 minutes while you make the gravy. When ready to serve, cut against the grain, shaving the meat into thin slices.

How to Make Roast Beef:

In a small bowl, stir together corn starch and cold water to make a slurry and set aside.

Set the roasting pan with any drippings over medium heat and add the red wine, scraping the bottom to deglaze the pan. Once wine is reduced by at least half, add beef broth and bring to a light boil. Add onion powder, garlic powder, salt and pepper.

Add the cornstarch slurry mixture to the gravy while stirring constantly (this prevents a lumpy gravy). Bring to a simmer and continue to simmer for 3 minutes until gravy is thickened. Turn off the heat and stir in butter until incorporated. Add more salt and pepper to taste. Strain gravy through a sieve if desired.

wanted a BBQ beef sandwich all day but didn't make a roast for it.  had roast beef on the fridge for lunch sandwiches and seen this recipe.  was simple and fast . hit the spit for what I wanted . wasn't no beef brisket but it still did the job.  all in all I would eat it again.
