Roasted Artichokes with Lemon-Shallot Vinaigrette

Cooking spray

artichokes,

lemon

garlic cloves, finely minced

avocado oil or olive oil

thyme

salt and black pepper

½ tablespoons champagne vinegar (may substitute white wine vinegar

½ small shallot, finely minced (1 tablespoon)

Dijon mustard

fresh thyme leaves

Spray a 9&#215;13-inch glass baking dish with cooking spray and set aside.

Using a large knife, cut each artichoke in half and use a spoon to scrape out the fuzzy choke. 

Brush all sides of the artichokes with lemon juice and place cut-side down in the baking dish. 

Roast artichokes for 15 minutes. Remove baking dish from oven and flip the artichokes over so the cut side is up. 

Sprinkle artichokes with garlic and drizzle with oil. Sprinkle with salt and pepper. 

Place a lemon slice and sprig of thyme on top of each artichoke half (sprinkle with dried thyme if not using fresh). Lightly spray artichokes with cooking spray. 

Cover the baking dish tightly with foil and return the dish to the oven. 

Bake for 35-45 minutes or until you can easily insert a paring knife into the heart (or the bottom of the stem) and the lower leaves are easily pulled from the artichoke. 

Remove from the oven and serve hot or at room temperature drizzled with vinaigrette. 

Leftover artichokes may be stored in an airtight container in the refrigerator for up to 4 days. 

Combine oil, vinegar, lemon juice, shallot, mustard, and thyme in a small bowl and whisk to combine. Season with salt and pepper to taste. 

Leftover vinaigrette may be stored in an airtight container in the refrigerator for up to 1 week.

To clean artichokes, first, cut off the stem/stalk. Peel off the tough outer layers by hand. When you reach the softer layers, use a serrated knife to cut off about 3/4 inches from the top. Now, cut artichoke in half length-wise. Then, using a spoon, remove the fuzzy choke on the inside.

As you clean the inside of each artichoke half, immediately add 1/2 tsp lemon juice to cover the surface to prevent the artichoke from discoloring.

On a large baking sheet, place each artichoke half in a piece of lightly-oiled foil paper that is large enough to fold around.

Season artichokes with salt and pepper, and nestle 1 garlic clove in the center of each artichoke half. Drizzle generously with quality olive oil (it's okay if some of the olive oil pools in the center or overflows onto the foil). Close the foil around artichokes.

Roast in the 400 degrees F heated-oven for 40 minutes.

Carefully open the foil pouches using tongs. Remove the roasted garlic from the center of artichoke, and close the foils back until ready to serve. Let garlic cool.

In the bowl of a small food processor, add the roasted garlic with the remaining vinaigrette ingredients. Pulse until smooth.

Remove the artichokes from foil. Arrange on a serving platter, generously drizzle the roasted garlic-dill vinaigrette. Top with shallots, capers and crumbled feta cheese. Enjoy!
