Roasted Baby Carrots Recipe

⅛ teaspoon freshly ground pepper

Place rack in the middle of oven along with a large, rimmed baking sheet. Preheat oven to 425’F.

Pat the carrots dry to remove any excess moisture. Toss the carrots with oil, salt and pepper.

Spread the carrots out onto the pan. Roast, stirring once or twice until just tender, 18 to 20 minutes.

I made this as a side dish to go with some broccoli cheddar soup I made off another recipe, and they turned out awesome! I cooked them a tad too long so they were a bit mushier than I’d hoped, but that was totally user error! :) They were delicious! Even my picky boyfriend liked them! Thank you!! ❤️

P.s. I added some dill and rosemary before roasting, really brought out the flavor!
