These tender cabbage steaks with blue cheese will melt in your mouth! They&#039;re incredibly flavorful, thanks to a homemade blackened seasoning, vegetarian, and easy to make.

Black and Blue Oven Roasted Cabbage Steaks

Preheat the oven to 400 degrees F. Line a large baking sheet with foil.

Slice the cabbage crosswise from top to bottom into 1/2- to 3/4-inch steaks. As you get closer to the core, you may want to slice some of the last steaks in half, but this is up to you. Roasting the cabbage makes it so tender that it doesn&#039;t matter if there are pieces of the core in some of the steaks. Place them in a single layer on the baking sheet(s). If you can&#039;t fit all of the steaks without some of them overlapping, use two baking sheets. Try to keep as many cabbage leaves intact as possible when you transfer the steaks. Discard or save any stray leaves for another recipe.

In a small mixing bowl, whisk together the olive oil, paprika, oregano, pepper, salt, basil, and cayenne pepper. Brush each side of the cabbage steaks with the mixture. Use a silicone brush if you have one to cover as much of the surface of the cabbage steaks as you can.

Roast the cabbage steaks for 23 to 25 minutes until golden brown and tender. If you are using more than one baking sheet, rotate them about halfway through the cooking time. Remove the baking sheet from the oven and sprinkle the blue cheese on the steaks. Cook for another 3 to 4 minutes until the cheese is melted and bubbling. Enjoy warm, sprinkled with chopped fresh chives.

Roasted cabbage steaks are one of my favorite ways to enjoy a head of cabbage. They can be served as a tasty side dish or a stand-alone meal with various toppings — a true meal prep ingredient!

Slice cabbage

Slice the cabbage. Preheat the oven to 400°F (200°C). Cut the bottom off the cabbage and stand it upright so that the flat end is on the cutting board. Cut the cabbage into 1-inch thick slices.

Arrange and season

Arrange on a baking sheet and season. Place the cabbage steaks in a single layer on a baking sheet. Brush the oil on both sides of the cabbage steaks and evenly sprinkle both sides with garlic powder, salt, and pepper.

Roast cabbage

Cook until tender. Roast the cabbage steaks for 40 to 45 minutes, rotating the pan halfway through, until the edges are crispy and the center is tender.

Preheat the oven to 425°F and line a baking sheet with parchment paper.

Remove any loose outer leaves from the cabbage, then use a sharp knife to slice off the bottom of the core to create a flat base. Stand the cabbage upright on a cutting board. Slice the cabbage vertically into 1-inch-thick steaks. Arrange in a single layer on the prepared baking sheet.

In a small bowl, stir together the olive oil, garlic powder, and salt. Brush half onto the cabbage steaks. Carefully flip, then brush with the remaining oil.

Roast for 30 to 40 minutes, rotating the baking sheet halfway, or until the cabbage steaks are well browned and tender in the middle. Season to taste with salt and pepper.

Serve as a side dish with lemon wedges for squeezing or try one of the serving suggestions in the blog post above.

Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.

Place the cut cabbage on the prepared baking sheet. Drizzle olive oil on top and sprinkle with cumin, salt and pepper. Use a brush to spread the olive oil and seasoning evenly throughout.

Roast in the preheated oven until the cabbage is tender and the edges are golden brown, about 30-35 minutes, flipping halfway through.

Serve warm with fresh parsley, if desired.

My husband never really liked cabbage but when I surprised him with this roasted cabbage with dinner last night, he couldn’t stop talking about it!!  So delicious and flavorful!  We will be eating cabbage more often now!

Cabbage is really sweet roasted. The cumin is just right. We did not flip over for fear of leaves separating. All was fine. The timing is spot on.
