In this spicy roasted cauliflower recipe, we toss cauliflower florets with a generous amount of ancho chili powder, smoked paprika, onion powder, garlic powder, salt, and cayenne pepper for some spice. For a spicy dish, add the full amount of cayenne, for milder palates, half the amount called for in the recipe.

This is my favorite cauliflower recipe. I am not a fan of cauliflower but when I prepare it this way it is fantastic. I love the spices and the crispiness of the cauliflower. It is easy to prepare and the aroma is nice too!

Our chili lime roasted cauliflower recipe combines perfectly roasted and browned cauliflower, ultra-flavorful spices, and fresh lime juice for an almost addictive cauliflower dish!

Roasted cauliflower coated in a savory-sweet honey garlic sauce is a quick 30-minute appetizer or main dish.

Roasted Honey Garlic Cauliflower

Preheat oven to 400°F. Line a large baking sheet with parchment paper. Place cauliflower florets on a baking sheet.&nbsp;Roast&nbsp;for about 15-20 minutes or until&nbsp;cauliflower is cooked and tender but still a little crisp. Allow cauliflower to cool for a few minutes (about 10 minutes).

While the cauliflower&nbsp;is cooking, make sauce on the stove. Add all sauce ingredients except the cornstarch + water. Bring to a low boil and stir until blended. In a small bowl, completely dissolve cornstarch in water, then add to the mixture. Stir until sauce boils again and cook until sauce thickens (about 2 minutes). Set sauce aside and allow to cool for a few minutes (it should still be quite warm, but not so hot as to burn your skin if you were to touch it). Sauce will thicken even more when cooling down.

When cauliflower has cooled down enough that you can touch them without burning yourself, add them to a large bowl. Pour in sauce and toss cauliflower in sauce and coat. Please allow cauliflower to cool down slightly before tossing in sauce, otherwise if they are too hot, it will thin out your sauce considerably. Serve while still warm. Garnish with fresh scallions if desired.

Name: Za’tar Roasted Cauliflower Steaks

za’atar

Preheat the oven to 400 degrees F.

Cut off the greens and the stem from the cauliflower. Hold your Cauliflower upright and cut 1-inch thick “steaks” from your cauliflower. I got about 4. You’ll have a few pieces that may fall off - you should definitely roast those too.

Mix the za’atar, lime juice,olive oil, sesame seeds, salt and pepper in a small bowl. Use a pastry or silicone brush each side lightly. Leave some of the mixture behind to put on it before putting in the oven.

Heat a pan for medium high with the 2 teaspoons of olive oil. Add the cauliflower steaks, pressing down and searing each side until golden brown, about 2-3 minutes. Flip and sear the other side.

Transfer the cauliflower steaks to a silicone sheet or foil on a baking sheet and roast for 15 minutes until the cauliflower is tender but still slightly firm.

Remove from the oven and sprinkle with more sesame seeds, a squeeze of lime juice and a second sprinkling of salt and za’atar. Top with  chimichurri  for an extra boost of flavour.

Za’atar Roasted Cauliflower Steaks

This cream of roasted cauliflower soup is decidedly rustic in texture and boasts a rich Mediterranean flavor combination that will surprise you in the best way possible!

Cream of Roasted Cauliflower Soup with Paprika, Cumin and Fresh Dill

cauliflower,

Private Reserve Greek extra virgin olive oil

Salt and pepper

sweet onion, chopped

garlic cloves, chopped

tsp Sweet Spanish paprika

tsp cumin

tsp ground sumac

tsp turmeric

vegetable broth

fat-free half and half (or heavy cream, if you prefer)

lemon, juice of

dill

Place cauliflower florets on a large sheet pan (use two sheets if you need to.) Sprinkle cauliflower with salt and pepper and drizzle generously with extra virgin olive oil. Toss to coat. Spread evenly on sheet pan. Roast in 425 degree F-heated oven for 45 minutes, or until cauliflower is tender and caramelized in some parts, turning over midway through. Remove from oven.

In a large heavy pot or Dutch oven like this one, eat 2 tbsp olive oil until shimmering but not smoking. Add onions and saute onion, over medium heat, until translucent. Add chopped garlic and spices. Stir for a brief few seconds until fragrant.

Now add 3/4 the amount of roasted cauliflower (reserve the rest of the florets for later.) Stir to coat cauliflower well with the spices, then add vegetable broth and water.

Bring to a boil, then lower heat to medium. Cover part-way and let simmer for 5 to 7 minutes.

Uncover and remove from heat momentarily. Using and immersion blender, blend cauliflower and liquid until you achieve desired smoothness (I keep mine a bit on the chunky side).

Return to a medium heat and stir in the fat-free half and half (or heavy cream, or plant-based milk), and lime juice. Then stir in the remainder of roasted cauliflower florets you reserved earlier. Cook briefly so that the soup is all warmed through. Test and adjust salt as needed.

Serve hot with your favorite crusty whole wheat bread.

For the time and effort and end result, this absolutely was not my favorite cauliflower soup.  Not at all.

I love all the ingredients and made it exactly as it said and really it just left me wishing it were different.  What a disappointment. :(

I made a few mistakes when making this soup, I used only half the spices listed because I thought it would be too much and I over blended the soup to a cauliflower purée. Cauliflower is a bland vegetable, so after I puréed it, the soup had no flavor, so I added in all the spices I held back, I added white pepper, salt &amp; the remaining roasted cauliflower, which gave the puréed soup the texture it needed. I made sure that I put the entire cup of dill in the soup and it was delicious.  When making this soup trust the recipe, use the spices in the amounts listed in the recipe and make sure to add the dill, it’s a critical component to the flavor of the soup.

I put this together in my instapot &amp; it turned out great. The aroma that comes from the pot affirms how flavorful the soup is. The flavors of the spices were complimentary to the cauliflower. Very pleased with this recipe.

The first thing to do in order to make this recipe for roasted cauliflower is rinse off your head of cauliflower. Just be sure to dry it off so that the moisture does not stay in the head because then you&#8217;re roasting cauliflower may get mushy.

The next step is to cut it. If you have never cut a head of cauliflower before, don’t be nervous because it is a very easy step.

Get a large cutting board so that when you do your cuts the cauliflower will stay on the board instead of all over the counter.

Next trim off any brown spots that might be there and take off all of the leaves.

Cut your veggie in half and then in quarters.

Hold the quarter of the cauliflower vertically and use a knife to slice off the woody center. You will then be surprised how the florets just fall right off.

If the florets are not small enough then you may have to cut them a little smaller, trying to keep them uniform in size for a more even result when roasting them.

Preheat your oven to 425 degrees and get a large baking sheet.

In a large bowl combine all of our spices and olive oil. Now add your cauliflower florets to the bowl and toss it all together.

 Place it all on a large baking sheet spreading it out evenly so that all of the pieces will cook the same.

Bake 25-30 degrees or until the roasted cauliflower is tender but also crispy and caramelized. Halfway through the roasting process, stir up florets to make sure that they are all browning up nicely.
