Roasting Chestnuts

Preheat the oven to 425 degrees.

With a serrated knife (a bread knife works great), slice a large ‘X’ on the flat side of the chestnuts.  Be sure you slice through to the nut itself which allows steam to escape when cooking and easy peeling.

Place scored chestnuts on a baking sheet with the X facing up.  Bake until the shell of the chestnuts are peeling back around the ‘X’(depending on the chestnuts aproximately 15-25 minutes). Refer to photos.

Remove from oven and place a kitchen towel over the pan allowing them to steam slightly for 15 minutes.  Chestnuts can be peeled when cool enough to handle (peel by pulling the shell away at the ‘X’).  Chestnuts are best eaten right after roasting (versus saving them for another day).

How To Roast Chestnuts In The Oven

Rinse chestnuts in cold water.

Using a small sharp knife or Italian Chestnut Knife make a long slit cut across the rounded side of a chestnut trying not to cut too deep into the nut.

You can perform the cut positioning chestnut on a cutting board flat side down.

But like to hold the chestnut with my fingers as I get a better grip and control over a slippery chestnut and can rotate it easily to make that long cut all across the rounded side.

Be very careful doing that, you can cut yourself. If for any reason it doesn’t feel safe, hold chestnuts in place on a cutting board.

Dip scored chestnuts in a bowl with water.

Repeat the process with remaining chestnuts.

You’ll need about 10 minutes to score 2 pounds (about 1 kilo) of chestnuts.

Let chestnuts soak in water for 1-2 hours.

Prepare chestnuts for roasting

Preheat oven to 430-450F (220-230C).

Drain the water and arrange chestnuts on a baking sheet, possibly slit side up.

Roast chestnuts in a preheated oven for 25 minutes. It might take a little more or less time depending on the size and quality of the chestnuts.

Once cooked, transfer chestnuts in an empty bowl, cover with a kitchen towel and let rest for 10-20 minutes.

Oven Roasted Chestnuts

Preheat oven to 425°F.

Wash and dry your chestnuts.

Place chestnuts on a cutting board. Use a sharp knife to cut a slit or an x into the flat side of each chestnut.

Place scored chestnuts in a single layer on a baking tray, with the x facing up.

Roast chestnuts in the centre of the oven for about 15-25 minutes*. Chestnuts are done when they smell nutty, the shells begin to curl, and they are hot to the touch.

Remove chestnuts from oven, and allow to cool enough to handle them. Peel warm chestnuts using fingers and a tea towel, working quickly.

Serve shelled chestnuts with salt and melted butter, if desired.

This Roasted Chestnuts recipe can be done over an open fire, or in the oven, and I have extra tips to ensure they are soft and easy to peel.

Slit chestnuts: Place one chestnut on a cutting board with the flat side down (rounded side up).  Grasp the chestnuts firmly between your thumb and pointer finger and use a serrated knife to make a long slit across the rounded side of the nut.  Be sure you cut all the way through the shell.  Then make a second cut, forming an x&quot;  on the rounded side of chestnut.  Making a slit in the chestnut is essential to ensure they don&#039;t explode in the oven and will make them easier to peel.

Soak: Place chestnuts in a bowl and cover them with water.  Let them soak overnight or for 10-12 hours. (Or, see my notes for a quicker soak option).

Roast: Preheat oven to 350ºF.  Remove the chestnuts from the water and pat them dry. Place them in a single layer on a baking sheet with the flat side down and slit side facing up. Roast chestnuts for 30-35 minutes or until you see that the skins have pulled back and the nut inside has softened.

Steam: As soon as you remove them from the oven, place the hot chestnuts on a damp kitchen towel, lifting the ends of the towel to form a bag.  Twist the bag closed and squeeze the chestnuts inside firmly (you should hear them crackle).  Let them sit in the towel for 10-15 minutes. This allows any extra steam to escape and will aid in the peeling process.

Peel: Once the chestnuts have had a chance to steam, you can start removing the skins. It&#039;s easiest to remove the skins when the nuts are hot so remove the shell immediately by gently pulling back on the &quot;x&quot; and peeling away hairy, papery skin around the chestnut to reveal the yellow nut inside. Discard any nuts that seems gooey or look like they are spoiled inside.

Enjoy: Eat them plain, serve them with soup or pasta, or store them in the fridge for up to 3 days.

How to Roast Chestnuts

Cooking chestnuts in the air fryer are an easy and more speedy way to roast them than in the oven. Delicious holiday treats are ready in minutes.

Air fryer roasted chestnuts

450 g Chestnuts

Place chestnuts in a bowl. Add hot water from the kettle onto the chestnuts and allow them to soak for 10-15 minutes.

Drain the water and pat dry the chestnuts with a towel.

Place the chestnut flat side down on a chopping board. Hold the chestnut between your thumb and index finger and using a serrated knife cut a slit or a cross on the top.

Air fry at 204C for 5-12 minutes. Smaller chestnuts will crack open more quickly than larger ones.

About 5-6 minutes for smaller chestnuts and 10-12 minutes for larger chestnuts.

Immediately transfer the air-fried chestnuts to a towel and hold it tight to trap the steam. About 2 minutes.

Peel the chestnuts while they are still warm.

Score Chestnuts: Place each chestnut flat-side down. Using a chestnut knife or a small paring knife, score either an &#39;X&#39; shape or a straight line across the rounded part of the chestnut, ensuring you cut through the shell. Flip it over and score a line across the other side. Do not skip this step - This prevents the chestnuts from exploding in the oven. Please be careful and use gloves or a kitchen towel for safe handling. See Note 2.

Soak Chestnuts

Soak Chestnuts: Place the scored chestnuts in a large bowl and fill it with hot water until the chestnuts are submerged. Let them soak for at least 2 hours on the countertop, up to overnight in the fridge. This softens and loosens the inner skin making them easier to peel. The longer they soak the better.

Par-cook

Par-cook the Chestnuts: (Optional but highly recommended for easy peeling) Add the chestnuts to a pot of boiling water and parboil for 4 minutes. Alternatively, par-cook the chestnuts in a microwave. First, add them to a heat-safe bowl and add enough water to submerge them. Microwave for 4 to 5 minutes or until you start to see the shell separate ever so slightly. Work in batches if you have a lot of chestnuts.

Roast Chestnuts

Roast Chestnuts: Preheat the oven to 425°F. Place the chestnuts in a single layer on a baking sheet, flat-side down. Roast in the oven for 15 to 20 minutes or until the inner nut is soft and tender and the outer shell has peeled back.

Peel and Serve

Peel: Wrap the roasted chestnuts tightly in a kitchen towel to steam until they&#39;re cool enough to handle. While still hot, peel off the hard outer shell and inner skin along the scored region. Serve and enjoy!

Pan Roasted Chestnuts (with Butter and Sugar) | 3 ingredients

Wash and drain 3 cups of chestnuts. Use a kitchen cleaver knife or a chestnut clipper to cut a slit or an &quot;x&quot; on the round side of each chestnut. Only cut through the shell, or for the most it&#39;s okay to cut ⅓ into the chestnut. Do not cut the whole chestnut through.

Place the chestnuts in a single layer on a frying pan, with the scored side facing up.

Add 2 cups of cold water to the pan. Sprinkle 2 tbsps of sugar over the chestnuts. Place 2 tbsps of unsalted butter in the middle of the pan. (Drizzle cooking oil over the chestnuts if you are going to use vegetarian oil to substitute butter.)

Put the lid on, cook the chestnuts, undisturbed, over medium high heat for about 20 to 25 minutes until there is almost no liquid in the pan.

Open the lid, use a spatula to stir fry the chestnuts for about 1 minute until there is no liquid in the pan. Turn off the heat.

Wash and soak raw chestnuts for 10 to 15 minutes in warm water - this makes the chestnuts easier to peel. Drain water and pat dry. (Pitch any nuts with blemishes, holes, or rattle inside their shell. Chestnuts should be firm or give only slightly when you squeeze them. If you feel a large movement between the skin and the flesh, this is an indication that chestnut may be rotten. Assess any that float as they may be rotten.)

Preheat Air fryer to 400 degrees F (204 degrees C)

Lay chestnut on cutting board with the flat side down and rounded side up. Score an &quot;X&quot; on the rounded side of the chestnut with a serrated knife. Be careful! Using a serrated knife makes this process easier.  (Some like to just make one large slash across the chestnut but we find the &quot;X&quot; scoring makes it easier to peel.) The purpose behind creating a score on the chestnut is to allow steam to escape during the cooking process. If you do not do this, they might explode in the air fryer- and who wants to clean up that mess?

Place chestnuts &quot;X&quot; scored side up in the air fryer basket and place in the air fryer.  Toss or shake air fryer basket halfway during the cooking process. Chestnuts are perfectly roasted when the shell and skin of the chestnut pulls back and curls up to show the bright yellow flesh of the chestnut. Keep a close eye on them as they can go from raw to fully cooked in just minutes. Small chestnuts can as little as 4 minutes in the air fryer.Medium ones take round 10 minutes.Large ones up to 15 minutes or as needed for the skin to pull back and show the yellow flesh of the chestnut. Many factors determine how long to cook chestnuts such as brand of air fryer, age and size of chestnuts and length of soak time. Don&#39;t leave your cooking nuts unattended.

Immediately, place air fried roasted chestnuts in either a dry tea towel or paper bag and tie tightly. You may even hear them crackle. Allow to rest in the tea towel or paper sack for 1 to 2 minutes. The internal hot steam that builds up in the bag or tea towel helps the peeling process.  (We like to serve plain roasted chestnut in a paper lunch sack as this way your guests can close up the bag in between peeling and eating and keep the chestnuts warm.)

Peel chestnuts straight away. We know they are still warm so use a tea towel or kitchen gloves as needed. The sooner you peel them, the easier it is. Do not allow them to get cold before attempting to peel. Use your fingers to peel the hard outer shell and the skin of the chestnut. Warm roasted chestnuts are easy to peel and the outer shell and skin come out together. Once they are cold, the skin has a tendency to stick and it is more difficult to remove.

We love to eat chestnuts warm right after peeling, one right after the other. You can try tossing them in brown butter and adding a little salt or use in your favorite recipe. Enjoy!
