An easy recipe for oven roasted chicken breast that is crispy-skinned, tender and juicy on the inside, and very flavorful.

Crispy Oven Roasted Bone-In Chicken Breast

bone-in, skin-on chicken breasts

olive oil

salt ((1/2 tsp if the chicken is brined))

garlic powder ((or granulated garlic))

tsp black pepper ((freshly ground))

tsp dark chili powder

cooking oil ((e.g. canola or vegetable oil))

If possible, prepare the chicken brine and brine the chicken breasts for 2 to 4 hours.

Preheat oven to 400F.

Dry chicken breasts with a paper towel and rub with olive oil all over. Evenly sprinkle salt and spices on each side and gently pat to make sure the seasoning properly adheres to the surface of the chicken.

Line a baking sheet with aluminum foil. Fit a cooling rack inside the baking sheet and set aside.

Heat 1/2 cup of cooking oil (you can use olive oil or any other oil you prefer) in a large skillet over medium-high heat. Place chicken breast skin side down on the skillet and cook for 2 minutes. Flip and continue cooking for another 2 minutes.

Transfer the chicken breasts onto the baking sheet, skin side up. Pour about 1 Tbsp of the cooking oil from the skillet over each chicken breast.

Bake at 400F for about 45 minutes, until internal temperature of the meat reaches 160F.

Let rest for 5 minutes and serve.

I used the recipe with the brown  sugar and my family simply loved it.  Easy to cook didn’t take a lot of time and it was good.

Delicious!  The whole family, including my picky boys, loved it.  Spice was perfect.  Omitted the brown sugar and still delicious.  I did have to bake for a full 45 min to get to 165 internal temperature.

Flavor profile is probably spot-on, I generally do not use any types of sugar to marinate anything. Sorry, Dr. told me not to. But the spice rub minus the brown sugar was still very tasty. Feel free to make spice/herb substitutions, everyone's tastes are different. I also cannot add salt to anything (same reason, Dr. said no). Please do be cognizant of the fact that different sized chicken breasts will call for different cooking times, it pays to pound them to even thickness before seasoning and popping them into the oven. If you don't feel safe doing that (I live in an apartment, and pounding the chicken is out of the question because of the noise that my neighbors would hear), simply try to fold the thin ends under to try to create pieces of even thickness. i am not a good cook at all and this recipe was so easy and the chicken turned out perfect!!

I made this tonight.  I didn't have lemons or paprika and it was still excellent.  I baked 18 minutes using very thin sliced organic chicken breasts.  Perfect time (used a thermometer as well).  Hardly any prep which was excellent.

This was so good and the chicken was extra juicy and tasty!

A recipe for a very tender and succulent oven baked chicken breast.

Slow Baked Chicken Breast (Moist & Tender)

chicken breasts

tsp kosher salt

tsp cane sugar

cayenne pepper

olive oil ((or vegetable oil))

butter

chicken broth

Preheat oven to 325F

Prepare the rub by mixing salt, sugar, cayenne pepper and paprika. Cover the chicken breasts with a thin layer of vegetable or olive oil first to ensure that the rub adheres properly. Cover each chicken breast with an even layer of the rub.

Place chicken breasts in a deep baking dish. Stick butter pats to the sides of the baking dish. Pour chicken broth into the baking dish carefully so as not to wash away the rub.

Bake at 325F uncovered for about 60 minutes until the internal temperature reaches 165F. To make sure the chicken tops are nicely browned and do not dry out, baste the chicken breasts in the juices 30-40 minutes into baking.

Remove from the oven, let rest for 5 minutes and serve your perfectly baked chicken breast.

boneless and skinless chicken breasts (about 2 pounds total)
