These Lemon Garlic Roasted Chicken Legs are loaded with flavor, perfect for a super quick dinner. The best part? No bowls to wash, super fast prep all in one pan!

Lemon Garlic Roasted Chicken Legs

chicken legs (skin on)

unsalted butter (melted)

olive oil

oregano

tsp smoked paprika

garlic (minced)

lemon juice

salt and pepper

lemon (sliced)

thyme (for garnish)

In a large ziploc bag add the chicken legs, melted butter, olive oil, oregano, paprika, garlic, lemon juice, salt and pepper. Close the ziploc bag and toss everything together well.

Place the ziploc bag in the fridge and marinate for a minimum of 30 minutes up to 24 hours.

Preheat the oven to 450 F degrees.

Transfer the chicken legs to a large casserole dish and place the lemon slices in between the legs. Bake uncovered for 30 to 35 minutes or until legs are golden brown and cooked through.

Garnish with fresh thyme and serve warm.

Roasted Chicken Legs with Onions

onions,

chicken legs,

garlic,

(45 ml) chopped fresh cilantro

lime

(10 ml) black peppercorns, crushed

(30 ml) honey

Salt

With the rack in the middle position, preheat the oven to 200 °C (400 °F).

In a large skillet, brown the onions in 30 ml (2 tablespoons) of oil. Set aside.

In a large baking dish, combine the chicken legs with the onions and the remaining ingredients, except for the honey. Season with salt. Brush the legs with the honey.

Bake for about 1 hour or until the meat separates easily from the bone. Mid-cooking, baste the legs with the cooking juices. Serve with Pineapple and Bell Pepper Ketchup (see recipe) and and a green vegetable, like wilted spinach.

The amount of fat called for slowed the caramelizing process of the onions. Easy recipe but a little light on flavour; don't leave the skin on the garlic cloves--an unnecessary job for later.

Great recipe, onions taste deliciously sweet. I added fennel seed and cooked the chicken a bit shorter since my pieces were small.

This was delicious! Super easy and with that pineapple ketchup, I call it relish....was amazing!!!

Why you dont peel the garlic ? This is really new for me !

Do I bake this covered or uncovered?  It was slightly dry when baked uncovered, first time I made it.  Otherwise, very good.

These Roasted Chicken Leg Quarters are marinated in the most delicious marinade and served as a traybake with Sweet Potatoes, Onions and Peppers!

Roasted Chicken Legs

Red Onions, quartered

Red Pepper, diced

Yellow Pepper, diced

Olive Oil

Salt & Pepper,

Chicken Legs (see notes)

tbsp Olive Oil

Honey

tbsp Lime Juice (can sub lemon)

tbsp Smoked Paprika

tsp Garlic Powder

tsp Onion Powder

tsp Cayenne Pepper (more or less to taste)

tsp Black Pepper

In a small bowl combine 1 tbsp smoked paprika, 2 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, 1/2 tsp cayenne pepper (or to taste), 1/2 tsp black pepper, 3 tbsp olive oil, 1 tbsp honey and 1 tbsp lime juice.

Combine in a large bowl with 4 chicken legs. Cover and leave to marinate for as long as you have time for (2-4 hours great, overnight best, but even 30mins is better than nothing).

Take chicken legs out and add 1lb/500g sweet potato, 2 peppers and 3 small onions to the leftover marinade. Add a drizzle of oil and pinch of salt and pepper and thoroughly mix.

Poor out onto an oven tray and nestle in the chicken legs. Pop in the oven at 210C/410F for 50-60mins, or until the veg and chicken is nicely charred and completely cooked through. Check after 30mins and if it&#39;s all charring too quickly, just take it out, flip the veg, baste the chicken and pop in at a slightly lower temp.

The internal temp of the chicken should be 75C/165F with the juices running clear.

recipe was easy and tasted good, if I had to change something it would be to use a little less cayenne,,lol. Hubby loved the spiciness though. I used a mix of white and sweet potatoes (what I had on hand), carrots and onion. No problems with over charring, baked in allotted time per recipe.

I made it for tonight dinner. Absolutely delicious!
