Roasted Cornish Hen is tender, juicy, and oh-so-flavorful! The whole family will love this easy dish!

Roasted Cornish Hen

cornish hens (about 1.5 pounds each)

olive oil (divided)

salt

black pepper

rosemary (crushed)

lemon zest

thyme leaves

garlic powder

potatoes (chopped)

carrots (chopped)

onion (chopped)

Preheat oven to 450°F.

Toss vegetables with 1 tablespoon olive oil and season with salt &amp; pepper to taste (add extra herbs if you&#039;d like).

Combine the remaining 2 tablespoons olive oil and herbs in a small bowl.  Brush hens with olive oil mixture. Twist wings to tuck under the bird.

Place hens in a large casserole dish or on a rimmed baking sheet. Arrange the prepared vegetables around the hends and palce in the oven. Reduce heat to 400°F.

Bake 55-65 minutes or just until hens reach 165°F with a thermometer and vegetables are tender. (Ensure the thermometer does not touch the bone.)

Remove from the oven and loosely tent with foil for 10 minutes before cutting.

Cut hens in half using kitchen scissors and serve.

An elegant and perfectly-portioned Roasted Cornish Hen recipe you can make whenever you want to impress. This Cornish chicken dish is made by marinating Cornish game hens in a lime-juice-garlic-fresh oregano based marinade overnight and roasting them in the oven for over an hour.

Roasted Cornish Hen Recipe

lime juice

extra virgin olive oil

garlic (peeled and minced)

oregano leaves (chopped - more as garnish)

Cornish game hens (about 1 pound each, rinsed and pat-dried thoroughly with paper towels)

water (or chicken stock)

½ small yellow onion (sliced thinly)

To make the marinade: Whisk together the lime-juice, olive oil, garlic, oregano leaves, cumin, salt and pepper in a bowl.

Divide the marinade in between two 1-gallon resalable plastic bags. Place two hens in each bag, make sure the marinade is distributed evenly (going into the cavity of the hens) and press to get as much air as possible out of it before sealing. Repeat the same process for the other two hens. Place them in the fridge and marinade for at least 4 hours or preferably overnight.

To roast the Cornish hens: Pre-heat the oven to 425 degrees.

Arrange slices of onion at the bottom of a casserole dish or a large ducth oven. Place hens, the marinade, and water on the bed of onions. Sprinkle the hens with freshly ground black pepper. If preferred, slice a fresh lime and place it around the birds.

Roast for 20 minutes. Reduce the heat to 375 F degrees and roast for 1 hour 15 minutes to 1 hour 30 minutes.

Let them rest for 20 minutes, garnish with fresh herbs, and serve.

Preheat the oven to 400º F. Combine dry seasoning ingredients in a small bowl. Rub each hen with olive oil, then sprinkle with the seasoning mix. Season or salt the insides as well. See note below for additional seasoning options.

Place the hens on a foil or parchment lined baking sheet or pan, then place in the oven. If baking with vegetables, see the notes section below.

Bake for 45–55 minutes, or just until the centers reach 165º. Then skin should be browned and crisp as well.

Remove from the oven and let sit at room temp for 5–10 minutes before serving.
