Roasted Sweet Potato Hummus

Preheat the oven to 400º F. Take a small sweet potato and poke 6 holes with a fork all over the potato.

Place the sweet potato on a foil-lined sheet pan and roast it for 60 minutes, or until fork tender.

While the sweet potato is roasting, drain the chickpeas over a colander, reserving the liquid in a bowl. Skip to step 8 if not removing the skins from the chickpeas.

To remove the skins for creamier hummus: rinse the chickpeas and add them to a small microwave-safe bowl.

Toss the chickpeas in 1 ½ tsp. baking soda and microwave them for 90 seconds.

Pour the hot chickpeas into a large bowl and cover with cool water. Gently rub the chickpeas between your hands to remove the skins. Drain off the water with the skins, and repeat the process until all the skins have been removed. It may take 4-5 changes of water.

Once the sweet potato is done roasting and is fork tender, cool it completely, then remove the skin with fingers and cut into large chunks. You’ll need 1 cup of roasted sweet potato.

Add the chickpeas (with skins on or off), ¼ cup of chickpea liquid from the can, sweet potato chunks and all other ingredients to a food processor or blender and blend until completely smooth, about 60 seconds. If things aren’t moving around very well, you can add 2 extra tbsp. at a time of the chickpea liquid.

Taste and adjust seasoning if necessary. Serve with crackers, chips, veggies, or as a sandwich spread.

Remove the loose papery outside skin from the garlic heads, but keep the cloves intact. Cut about 1/2 inch from top.  Place the garlic cloves each in a piece of foil that's large enough to wrap around. Lightly drizzle with olive oil. Close the foil up. Bake in heated oven for 40 to 45 minutes or until the garlic is very soft. Remove from heat and let cool briefly, then peel.

In the bowl of a food processor, fitted with a blade, place the roasted garlic, chickpeas, tahini, lemon juice, and water. Sprinkle salt, sumac and cayenne. Blend until smooth. Be sure to add a little more water as needed, until you achieve desired smooth texture. You can also add a little more lemon juice to your taste. Taste and adjust for salt and spices.

Spread the roasted garlic hummus in a bowl. Add a generous drizzle of quality extra virgin olive oil. Top with za'atar spice, and if you like, parsley, toasted pine nuts, and crumbled feta.

Serve with warm pita bread or toasted crostini and assorted vegetables. Enjoy!

Roasted Garlic Hummus

Try this smooth and creamy homemade hummus recipe with roasted garlic. 

Creamy Garlic Hummus

Place chickpeas and 1 tsp baking soda in a large bowl and cover with water by at least an inch. Let soak overnight.&nbsp;

Preheat oven to 400°.&nbsp;Strain chickpeas and place in a large pot. Add remaining teaspoon of baking soda and cover with water by at least an inch again. Bring to a boil then cover and reduce heat. Let simmer until tender and falling apart, 1 hour. Skim foam off the top as necessary.&nbsp;&nbsp;

If using,&nbsp;roasted garlic: Cut the top off of the head of garlic. Drizzle with olive oil and season with salt and pepper. Wrap in foil and place in a shallow dish. Roast until golden and soft, 40 minutes. Let cool then remove garlic cloves.

Drain chickpeas and place in the bowl of a food processor. Add garlic (if using), lemon juice, tahini, cumin, salt, red pepper flakes, and pepper. Blend until smooth.&nbsp;

Very good recipe. Everyone loved it. If you use canned beans just boil them until they're soft and then remove the skins. Makes a creamy hummus without the hassle of using dry beans.

Super creamy! It's no Shaya hummus, but it's worth making.

Here's How To Make Hummus That's WAY Better Than Store-Bought

Roasted Garlic Hummus is one of the best hummus recipes you'll make! It has so much flavor and it's the perfect dip for your favorite pita chips and veggies.

Tbsp olive oil, (divided)

(15 oz) can chick peas, (drained)

Tbsp tahini

tsp salt, (or to taste)

tsp cumin

water

parsley and red pepper flakes, (for garnish)

Preheat oven to 400 degrees. Cut about 1/4-inch from top of garlic to expose tops of cloves. Place garlic head on a sheet of foil and drizzle 1 1/2 tsp olive oil evenly over top of garlic.

Wrap foil up around garlic and roast 35 - 45 minutes until golden brown. Remove from oven and allow to cool.

To a food processor add chick peas, lemon juice, tahini, salt and cumin then pulse mixture 2 minutes. Scrape down sides and bottom of food processor, add remaining 2 Tbsp olive oil, set aside 3 - 4 cloves of the garlic and add remaining  (about 10 - 11) to food processor.

Pulse 1 minute, then add water (I used 3 Tbsp but if you like it thicker you may want to use 2) and pulse 1 - 2 minutes longer.

Plate hummus, make indentation in center and add 1 - 2 Tbsp more olive oil to taste (optional), then chop remaining roasted garlic cloves and sprinkle over top, sprinkle with parsley and red pepper flakes.

Serve with fresh veggies or pita chips. Store in refrigerator in an airtight container.
