Baked Apples and Pears with Thyme and Maple

Preheat oven to 375º F.&nbsp;

Heat oil in a Dutch oven or oven-safe skillet on the stovetop over medium heat. Spread apples and pears in a single layer flesh-side down in the Dutch oven or skillet. Cook 5 minutes, or until the flesh is golden brown.

Stir in maple syrup, ginger, cinnamon, thyme, and salt. Cover and transfer to the oven. Bake 30 minutes, or until the fruit is tender and has a strong, spiced aroma.

Transfer baked apples and pears to a serving dish and garnish with additional fresh thyme leaves if desired.

Roasted Pears in Ginger Syrup

1- inch fresh ginger (minced)

Preheat oven to 400 °F (200°F).

Peel and halve the pears. Remove the core and place them cut-side down in a large baking dish.

In a small bowl, combine the maple syrup, coconut sugar, water, cornstarch, and minced ginger. Pour the syrup over the pears into the baking dish.

Bake for about 25 minutes, or until the pears are soft and cooked. Remove from the oven, flip the pears and place under the broiler for 2-3 minutes or until slightly caramelized.

Serve warm or cold, and top with crushed peanuts and a dollop of coconut cream or vanilla ice cream. Baked pears will keep for up to 3 days in the refrigerator.

Simple to make and tastes great. Can easily be scaled up to serve more people. Try adding a bit more cornstarch to thicken the syrup.

Can I freeze these, to last longer than 3 days?

The pears were perfectly roasted and the ginger syrup was a delicious addition! Yummy!

Loved it.  Very easy to prepare.  Great recipe.

I made this using organic bosc pears, which I did not peel to retain all the goodness, and used raw sugar as that is what I had on hand. My guests opted for no nuts, as we had other desserts, but I would serve it with chopped pecans over peanuts, although I'm sure any nut would be good.  I also added cinnamon, as it is very cold here.  It was perfection.  Everyone loved it! Tastes like much more work than it is.
