These Roasted Sweet Peppers are so easy to make and really delicious dipped into a creamy goat cheese dip!

Roasted Sweet Peppers with Goat Cheese Dip

medium sized bag mini sweet peppers

olive oil

salt (heaping)

goat cheese

plain, non-fat Greek yogurt

lemon

garlic, roughly chopped

milk

Salt,

Pre-heat oven to 400 degrees F.  Wash and dry sweet peppers and then, on a large baking sheet, toss them together with the olive oil and salt.  Bake peppers until brown and caramelized, 25-30 minutes.

Make the goat cheese dip while peppers are roasting.  Add all ingredients to a blender, or food processor, and blend until creamy.  Pour into a small bowl and serve along side the roasted sweet peppers.

Packed with all the Greek flavor you love, these roasted peppers are too easy to pop in your mouth!

Sabra Olive Tapenade hummus

feta crumbles

red onion (chopped)

Tbsp green onion

Tbsp parsley (chopped)

Preheat oven to 425 degrees. Grease a rimmed baking sheet.

Place sweet peppers on the baking sheet in an even layer. Bake for 5 to 7 minutes.

Remove from oven and fill with 1 to 2 Tbsp of Sabra Olive Tapenade hummus.

Top with feta, red onion, green onion and parsley. Serve immediately.
