Creamy Tomato Pasta Bake

penne (or rigatoni)

olive oil

onion (diced)

garlic (minced)

Italian seasoning

heavy cream

marinara sauce (or pasta sauce)

½ ounces petite diced tomatoes (drained)

mozzarella cheese (shredded)

basil (or parsley)

Preheat the oven to 350°F.

Cook pasta in salted water al dente according to the package directions and drain.

Meanwhile, heat oil in a medium saucepan. Add onion and cook until tender. Stir in garlic and Italian seasoning and cook 1 minute or until fragrant. Add cream, tomatoes and marinara sauce. Simmer 2 minutes.

Place pasta in a 9x13 pan. Add sauce and toss to combine.

Top with shredded cheese and bake 20-25 minutes or until hot and cheese is bubbly.

Remove from the oven, cool 5 minutes and top with fresh herbs.

Bring a large pot of salted water to a boil and cook the penne pasta to al dente, according to the package instructions.

Heat a large non-stick skillet over medium heat, melt the butter and then add in the onions. Cook for about 5 minutes, or until they are translucent. Add the garlic and cook for another 1 - 2 minutes, or until aromatic. (Stir frequently to avoid burning  your garlic and onions.)

Creamy Rose Sauce is a rich and delicious tomato cream sauce. Toss it over tender pasta noodles for a hearty main course that’s easy enough for a busy weeknight, but elegant and tasty enough to serve for a date night dinner.

Cook pasta according to package directions. Reserve ½ cup of the pasta water. Once done, drain and set aside.

Meanwhile, start the sauce. In a large skillet over medium heat, heat up the olive oil. Once hot, add in the garlic and shallot and cook for 5 minutes. Stir in the tomato paste and cook for 3 additional minutes, stirring often.

Stir in vodka and then add in the cream and pepper flakes and mix to combine.

Mix in the cooked pasta as well as ½ cup of pasta water, the butter, and parmesan cheese. Season to taste with salt and pepper and cook for 1 more minute, stirring constantly.

Remove from the heat and serve with basil + an extra sprinkle of parmesan!

I made this last night and it was delicious!  I did add just a sprinkle of sugar like my grandma always did- it brought out all the flavors and took me back in time to her kitchen. Highly recommend this easy rose recipe!

Italian Pink Sauce is a luscious iteration of a classic marinara. This beautiful pink sauce is the softer, cozier version that marries velvety, rich cream with bright tomatoes. Each perfectly cooked noodle blanketed in sauce will turn an ordinary Tuesday dinner into an evening when time seems to slow down.

Italian Pink Sauce Pasta Recipe (velvety cream sauce)

penne (or any short-cut pasta-I used penne zita rigate)

(diced) onion

heavy cooking cream (35% fat)

Cook pasta:  Bring a large pot of water to a boil. Add pasta and cook according to package directions. Drain, return to the same pot, and set aside.

Cook onions and garlic:  To a large skillet (3 quarts/ approximately 3 liters), over medium heat, add the olive oil, onions, garlic, and salt.  Sauté 5 minutes or until the onions are translucent.

Add tomato paste:  Add the tomato paste and sauté for 30 seconds.

Add crushed tomatoes and spices:  Add the crushed tomatoes, basil and oregano, stir and bring to a boil.  Then lower the heat and simmer for 10 minutes with the lid slightly ajar.

Add remaining ingredients:  Remove from the heat, add the grated cheese and slowly pour in the cream and stir to combine.

Serve:  Add 2-3 ladles of sauce to the reserved pasta, and stir to coat. Divide into bowls, adding more sauce to your liking. Serve with extra Parmigiano-Reggiano and a spinach and arugula salad.

The texture of this sauce is what makes it so good… and you can make it more spicy if you want !

This is the kind of rose sauce I like.  It’s smooth and the cream to tomato ratio is perfect in my opinion.  This is a keeper.
