A breakfast roti recipe commonly eaten all across India, made using whole wheat flour, in the form of round circular shapes and served with any veg curry or side dish.

In a flat bottom vessel, add wheat flour, add salt and mix well.

Add little by little water and knead the dough.

Knead into a soft dough.

At this stage add oil, mix and knead into a very soft dough.

Cover and rest the dough for 20 min.

After it is rested well, press and knead the dough again.

Beat the dough well with a rolling pin to make it even more softer.

Once the dough appears soft, divide the dough into medium ball shaped sizes.

Dust some floor on the rolling board.

Take each dough ball, put it on the board and flatten the dough into a round circular disc shaped chapati.

Similarly, make chapatis of the remaining balls.

Place the chapati on the tawa.

Cook the bottom side for few seconds.

Flip and cook the other side for few seconds.

Flip again and press at the corners and the roti begins to puff up.

Flip and press the corners of the other side too and it puffs up.

Apply oil all over the roti on both the sides.

Take it out and serve hot with any veg or non veg side dish.

Method 1 for roasting the chapathi:

Here we are making the phulka first and then apply oil.

Firstly, place the chapati on the tawa.

Flip and cook the bottom side completely.

Take the chapathi out and place the chapathi with half cooked part over the flame.

The side which was half cooked gets cooked completely by puffing up.

Take it out and serve hot.

If required apply oil or butter on both sides of the roti.

Serve hot with veg curries or non veg curries as side dishes.

Method 2 for making the chapathi:

Roti making is an art that can be mastered with little practise. With precise instruction you can be an expert roti maker too.

In a large mixing bowl take flour, 2 tbs oil and salt. Add gradually add ¾ cup and mix with fingers until crumbly.

Gradually add more water and bring all flour together to make a dough. Add 1 tsp of oil on sides of bowl and knead the dough for 1-2 minutes until the dough holds together. Rest the dough for 7-10 minutes.

After resting, knead again for 1-2 minute, the dough will be soft but not at all sticky and very pliable.

Oil the rolling pin and board or the flat surface on which you intend to make roti.

Divide dough two large portions. Make a big ball of each portion.

Place the griddle on the medium flame for heating.

From each ball with the help of rolling pin make a circular flat shape. Spread 1 tsp oil on it and dust it with whole wheat flour. Now roll the dough to form a log.

Divide each log in 9 equal portion. Shape each portion in a round ball and then press the ball to make a flat circular disc.

Dust each circular disc with wheat flour, and make circular roti with rolling pin. Use wheat flour to dust as required.

Place the roti on hot girdle, flip the roti after 3-4 sec while still undercooked. The other side of roti has to be fully cooked before flipping to the first side. Now, cook the first side of roti completely

.Take 1 tsp oil and smear on of roti after taking it off from griddle/tawa. Follow same instruction with all chapati roti and pile up roti one on top of other. When all rotis are cooked store in a hot pot or in aluminium foil.

Place two cups of flour and salt in a bowl.

Trickle in water, a little at a time, until the dough comes together and is not sticky. Knead for another minute or so. The dough shouldn&#39;t feel sticky but it may seem a  bit rough. That&#39;s okay. Resting the dough will resolve this.

Make the roti dough

Place the dough in the bowl and cover with a tight lid or a damp kitchen towel. Set aside for at least 30 minutes to an hour. After resting the dough should feel much more pliable. Knead it briefly into a smooth ball.

Divide the dough into 10 equal-sized balls -- called &quot;pedha&quot; in Hindi. Keep the rest of the dough covered while you work on each roti.

Rest the dough

Dust the working surface. With the rolling pin, roll one ball of dough into a three-inch round. Brush a small amount of oil on it with your fingers or a pastry brush. Fold over once, brush a little more oil, then fold over one more time to form a triangle.

Roll the triangle into a six- to seven-inch round as best as you can. You can also make the roti triangular, if that&#39;s easier. Focus not so much on the shape but on rolling out the roti so it&#39;s of even thickness. If you are learning, make smaller and thicker rotis - you will eventually be able to make thinner rotis with some practice.

Roll the rotis

Heat a tava or griddle over medium heat. Place the roti on the hot griddle and wait for the roti to turn opaque with small bubbles. This should only take a few seconds.

Flip the roti over and press on the edges with a spatula to help the roti puff up. After about 15 seconds, flip the roti once more. You want the roti to be opaque all over and have small, pale brown spots scattered across the surface. There should be no black spots or large char spots.

As soon as the rotis comes off the griddle, brush on some oil and store them wrapped in a soft kitchen towel until it&#39;s time to serve.
