This is delicious and a great way to use up leftover chicken. I followed the recipe with only two adjustments: 1) I used only one can (13.5 oz) of coconut milk but added about 1/3 c. of peanut butter. It was plenty thick and creamy and I loved the peanut flavor. 2) I added one thinly sliced zucchini because I happened to have it on hand and wanted to use it up. Thank you!

Looking over the ingredients I thought it sounded more Thai than Chinese... so I modified it and was over the moon with the results. First I just threw everything in the crockpot (minus the noodles and the coconut oil since it was no longer necessary). I find the flavors have more time to develop and it's easier for me. Second... I added about a cup of reduced fat peanut butter. I wanted it to taste like a chicken satay soup and I wasn't disappointed. 10/10 will make again.

Really good, comforting soup! The broth was nice and rich, and that was with me using one can of full-fat coconut milk and one can of light, plus an extra two cups of chicken broth. I also threw in a few few handfuls of baby spinach, a shake or two of fish sauce, and two minced Thai chilis . Pro tip: if you want to have extra for leftovers, cook your noodles separately and add to each individual serving—that way they don't get mushy. Top with crispy shallots/onions if you've got 'em!

Made this tonight and the whole family loved it.  A little spicy so next time will reduce the Cayenne pepper. But otherwise super tasty.  I used rice noodles instead of Ramen and increased the amount of noodles.  Thanks for the recipe.

Thank you for your recipe. I've made this over 10 times now. I cook my romaine noodles separately, then add them to the soup. This doesn't make the soup too thick. I also use 2 tbl. spoons of curry and 1 tsp. of chili powder to give it more depth of flavor.

I was looking for recipes to use my leftover Costco chicken and came across this one.  I started Keto so I had the ingredients except for the red peppers so I just doubled the carrots.  OMG my family loved it and I loved how easy it was to make.  I had to try it and ate around the noodles since that's not on the Keto program.  YUM. FYI the squeeze of lime takes it to the next level of YUM.  I added a little extra garlic salt and pepper.

Easy to make and the kids loved it too. Added 1/2 cup more chicken broth and a 2nd ramen noodles per other suggestions and used Costco rotisserie chicken.  Definitely a do-over for simplicity and quick prep. With a busy family with school and sports, made a great dinner in a hurry.

Awesome soup. Easy to make. Sometimes I boil carcass of rotisserie chicken and use that for broth. Also add a tsp of sesame oil when adding garlic and substitute soy sauce for salt. My family can’t get enough!

Everyone loved it.  I don't love tumeric, so I added the seasoning mix from the noodles instead.  I would definitely add some fish sauce next time,  but it was delicious.

This has become a family favorite. I make 3-4 times a year. We absolutely love this soup!!

I used light coconut milk ( since nutritionists seem to still be unsure of the effect of the fat on the body and my husband  had heart  bypass surgery at a young age.) also used angel hair pasta-about 5ounces. It was perfect.  Everyone loved it. I am sure the full fat coconut milk would make it even better. I have never been a huge fan of regular chicken soup but this was wonderful, wonderful, wonderful.

Made this tonight!  So yummy!  I didn’t have a few things so swapped ingredients... used boneless skinless instead of thighs... only had a can of coconut milk so added more broth... and left off cilantro.  Since I have littles I puréed the veggies.  My teen had 3 bowls!

Just made this! Turned out so good. My kids loved it and so did I! Didn’t have coconut milk or red bell peppers so used heavy cream and green bell peppers. 

 I will be making it again.

Made this many times and it is one of our favorite recipes. We add 2 packs of ramen so it is a little thicker consistency. Sooo goood!

I’ve made this multiple times and love it. I usually double the carrots and noodlesplus im. A little more liberal with my chicken stock.

Delicious! If you aren't a fan of spice cut the Cayenne in half, otherwise it was very good!

This soup is the best.  I add a tablespoon each of chili garlic sauce, fresh minced ginger, and turmeric.  I also added extra broth and another bag of ramen.  I make it everytime I have congestion or a cold or whenever I'm craving soup with a little kick!

This recipe sounds delicious. After 60 yrs of home cooked meals I can pretty much tell, as long as you know the difference between TSP and TBSP., lol, you should be ok. Like Ina Gartnen, I despise cilantro, so I use parsley. It’s the only thing I do not like.  82 yrs of age I try recipe from around the world thanks to the internet. So slow cooked chicken, here I come. Sour cream with the sauce sounds perfect.  By the way I am also into tangines with preserved lemons . So yummy.

I made this a couple months ago. Loved it so much I had to look it up again to make it for dinner tonight. My chicken took a bit longer, the first time, because it wasn't completely thawed.

The first time I made this everyone was starving and we had to eat at a certain time.  I set the cooker for 3 1/2 hrs and as the time was approaching the chicken didn't really look done so I frantically began to preheat the oven... however to my surprise it was perfect!  So if you're making this and your chicken doesn't look done, don't worry!!  The only thing I would caution is that 4 min to broil is way to long.  I set it to three and it was about to burn.  Next time I'll do only two.  Other than that it was amazing!!🍗😋

Pretty bland and mediocre. Nobody in the family was impressed. If you’re looking for something to excite your taste buds, this is not it. Won’t be trying this recipe again.

Went straight in the bin. Could not serve this abomination to my family. Ruined a whole chicken. Editor. You need to check this recipe as 1 tablespoon of chili powder is enough to exterminate an entire nest of rodents.

A rotisserie is a piece of cooking hardware, not a flavoring! Putting a chicken into a slow cooker will never make it a rotisseried chicken. Probably tastes good,though.

Absolutely foul. Way too much chilli powder. Too hot to eat and tastes bitter.

This Is Not A Drill! Slow-Cooker Rotisserie Chicken Actually Works.

This Chicken Curry is a mildly spiced tomato-y chicken curry using Rotisserie Chicken. It will remind you of Chicken Masala, but it is so much easier.

Easy Rotisserie Chicken Curry

coconut oil (or vegetable oil)

onion

celery

garlic

½ teaspoon Garam Masala

all-purpose flour

chicken stock

tomatoes

Worcestershire sauce

sauce

Add 1 tablespoons coconut oil, ¼ cup chopped onion, and  ¼ cup chopped celery to a medium microwave-safe bowl. I use a 2-qt. batter bowl. Microwave on HIGH for three minutes.

Add ½ teaspoon chopped garlic, ½ tablespoon curry powder, and ½ teaspoon Garam Masala to the veggies. Stir and microwave for two minutes on HIGH.

Sprinkle 2½ tablespoons all-purpose flour over the softened vegetables and stir to distribute evenly and break up any lumps.

Whisk 1 cup chicken stock and 1 cup diced tomatoes in juice, canned into the veggies. Season with ½ teaspoon Worcestershire sauce and 2 shakes Sriracha sauce. Microwave on HIGH for five minutes or until the sauce thickens.

Add 2 cups cooked chicken, diced and microwave for 2-3 minutes or until warm throughout.

Serve immediately over Jasmine or Basmatic cooked rice.

Easy Rotisserie Chicken Curry: Quick Microwave Meal for Two

This Chicken and Leek Pasta Bake is a quick and easy family dinner with a lot of flair, thanks to the white wine and cream. Serve with crispy, green salad.

Chicken and Leek Pasta Bake

(10½ oz) macaroni

(2 tbsp) butter

leeks,

milliliters (1 cup) white wine

milliliters (1 cup) single cream

(1lb

(1½oz) panko

(1½ oz) Parmesan cheese

Preheat the oven to 180°C / fan 160°C / 355°F / gas mark 4.

Cook macaroni in boiling salted water according to packet instructions, then drain.

While the pasta is cooking, melt the butter in a large frying pan.

Gently cook the leeks over a medium heat until softened, which would take about 5 minutes.

Turn up the heat and pour in the wine. Let it sizzle until the liquid has reduced by half.

Pour in the stock, stir and let it bubble for 5 minutes.

Pour in the cream, stir and let it bubble for another 5 minutes.

Tip in the chicken and pasta and stir until everything is covered with sauce.

Spoon the mixture into a shallow ovenproof dish. Mix together breadcrumbs and Parmesan and sprinkle over the top.

Bake in the oven for 25-30 minutes until golden and crusty on top.

Serve with a green salad and a glass of white wine. Enjoy!
