<p>Put the grapefruit juice, most of the mint and the sugar in a large jug. Crush the ingredients together with the end of a rolling pin to release the flavour from the mint and dissolve the sugar. Add the rum, mix well and top up with soda water and ice. Add the sliced grapefruit and remaining mint before serving.</p>

This extra sweet cocktail is a mix of rum, coconut rum,&nbsp;Kahlúa, a splash of vanilla, a little milk, and if you need just a smidge more sweetness, a drizzle of sweetened condensed milk.

1. Bring the sugar and pomegranate juice to a boil over high heat in a medium saucepan. Reduce the heat to medium and simmer until thickened, about 8-10 minutes. Set aside to cool.&nbsp;*The Pomegranate Caramel will make enough to drizzle over 8 drinks

Rum Punch

oz pineapple juice

oz orange juice

oz lime juice

oz gold rum

oz white rum

oz grenadine and lime

Add all of the ingredients into a cocktail shaker with ice and shake for 30 seconds.

Strain into a glass filled with ice.

Pour the juices, rum, sugar syrup, grenadine and Angostura bitters into a large jug and give it a good stir. Pop into the fridge to chill for 1 hr.

'Love your drink recipes!  'Had a cocktail at a California Beach hotel with the same ingredient list that I just loved so I thought it was a Jungle Bird. I made your Jungle Bird recipe and loved it, but felt like I should be drinking it at a swim-up bar.  Turns out the one I had was a little less sweet, a little less fruity, and more booze forward so I modified your Jungle Bird recipe to replicate it. I reduced the pineapple juice and simple syrup and increased the Campari. The one I finished with is very similar, but feels more at home in the evening with other adult cocktails.
1.5oz dark rum (Myers)
1.5oz Campari
1 oz pineapple juice
1/2 oz lime juice (1Tsp)
1/4oz simple syrup (1/2Tsp - I used agave syrup)
If you like a Boulevardier or other Campari drink as much as I do you may enjoy this slightly tropical take.

In a cocktail shaker, combine the all ingredients and add ice.

Shake for about 10 seconds.

Blend until a slushy texture.

Pour blended drink into a prepared martini glass and serve immediately

I used canned coconut milk and got the same watered down flavour. Second attempt I used less orange juice but it still dominates in flavour

It looks wonderful, but I've tried every way I can think of and it's just not very good. I tried it frozen with coconut rum and with Malibu and it tasted watered down. I tried it on the rocks and the OJ overpowers the coconut. It needs to be a little thicker and a little sweeter. I used unsweetened coconut milk, but maybe sweetened vanilla coconut milk would be better. Or go all the way to cream of coconut.

That's really refreshing! I didn't have orange juice but had cranberry juice cocktail and it turned out great. I did add a splash of diet 7-up for a little sweetness and a bit more sparkle, and even without coconut rum (just regular Bacardi), it was just coconut-y enough.

I made my own sunshine!  Ha!  Everything that I love is in this drink.  It was so delicious.  I'm such a sucker for anything with coconut, so I couldn't pass it up.  Thank you!

Learn how to make classic mojitos at home with this foolproof recipe! These not-too-sweet mojitos are minty-fresh, fizzy and delicious. You'll just need white rum, club soda, fresh lime and mint, and sugar. Recipe as written makes 1 cocktail.

Classic Mojito

Club soda or sparkling water (I like Topo Chico)

In a sturdy, heavy-bottomed, tall cocktail glass, add the sugar and 3 sprigs of the mint (we&#8217;ll reserve the last sprig for garnish). 

Muddle the mint with the sugar about 5 to 10 times, until the mint is very fragrant (not so much that the mint completely falls apart). 

Pour in the rum and the lime juice, and gently stir a few times to help dissolve the sugar. Fill the glass with ice. 

Fill the glass with club soda nearly to the top. Gently stir in a circular motion to combine, then use your spoon to drag some of the muddled mint higher up into the glass.

Taste, and stir in more sugar if desired. Add a drop or two of bitters, if desired. 

To garnish, place the lime round in the glass. Gently clap the remaining sprig of mint between your palms (this releases some of the oils) and tuck it into your glass, leaving the top exposed. Serve cold, with a wide straw.

We  didn't have enough white rum so we used 3 oz of rum and 3 oz of tequila, wow, revved it up a notch!

Many nurseries carry Mojito Mint starts each Spring. I have had mine for three years now, planted in a 12" pot and it has survived outdoors year round.
