Rump steak

Take the steaks out of the fridge 30 mins before cooking them. Pat them dry and season.

Heat a non-stick heavy-based frying pan over a very high heat. Drizzle in the&nbsp;oil, then&nbsp;add the butter,&nbsp;garlic and steaks, nestling the herbs around them. With a pair of tongs,&nbsp;turn the steaks every 30 secs to 1 min so they get a nice brown crust. As a rough guide, each steak will take 3 mins in total for rare, 4-5 mins in total for medium and 7-8 mins for well done. If you have a digital cooking thermometer, the middle of the steak should be 50C for rare, 60C for medium and 70C for well done. If your steak has a thick layer of fat running down the side, hold&nbsp;the steak on its side with a pair of tongs and push&nbsp;the fat into the pan for 2 mins or until golden brown.

Transfer the steak to a plate. Cover in foil and leave to rest for 5 mins before serving.

(95 grams) American mustard

How to Cook Rump Steak

Room Temperature

Preferably bring steak to room temperature before cooking.

Season

Season well on both sides with salt &amp; pepper.

1st side

Add oil to a pan and bring to hottest setting, allow oil to get hot before adding steak. Keep it set to the hot setting throughout cooking!Rump Steak cooking time on each side - Based on a 1-inch thick cut. Add more time for a thicker cut or less for a thinner cut.Rare - 2 min Medium Rare - 3 minutesMedium - 4 minutesWell done - 5+ minutes

Flip

After the first side has had the right cooking time, flip to the other side.

2nd Side

Add butter and fresh thyme into the pan. Once the butter has melted in the pan time for the same as before for the desired doneness.Rare - 2 min Medium Rare - 3 minutesMedium - 4 minutesWell done - 5+ minutes

Butter

During this final cooking time use a spoon to continuously coat the steak with the melted butter whilst it is cooking.

Rest

Remove from pan and place steak on a warmed plate to allow it to rest for at least 8 minutes. Enough time to make our easy peppercorn sauce to go with it!

The Ultimate Beef Stir Fry In A Sticky Asian Sauce

ml Soy Sauce

ml Honey

Sriracha

Ginger

garlic (minced)

bell peppers Red (yellow, orange)

courgette (chopped)

600 g rump steak (skirt steak, stir fry steak)

spring onions

basil

make sauce

To make the sauce combine the soy sauce, honey, sriracha, ginger and garlic in a mixing bowl or measuring jug.

heat oil

Heat 1 tablespoon of olive oil in a large non stick skillet over a medium heat. When the oil is hot, add the pepper and courgette. Fry until golden and tender. Remove from the pan and place on a plate. Set aside.

add steak

Return the skillet to the heat and add another tablespoon of oil. Add the sliced steak and cook without turning for 2-3 minutes. Turn and cook undistrubed for another 2-3 minutes. Pour the sauce into the pan and simmer for about 5 minutes, until the sauce has thickened and coats the beef. Add the peppers and courgette back in and toss to coat in the sauce.

Divide the rice into 4 bowls and spoon over the beef and peppers. Serve with extra spring onions and basil.
