sabich

Sabich or sabih is a Jewish-Iraqi sandwich that is very popular in Israel. It is prepared with pita bread, eggplant, egg, hummus, tahini and amba.

Add a large volume of oil into a deep skillet. Heat to 350 F (180˚C), and fry the aubergine slices on both sides until they are dark brown.

Remove them from the oil, drain them for 10 minutes in a colander and then place them on paper towels to remove excess oil.

Lightly warm the pita bread and split in half or cut on one side.

Spread the inside of each pita with 1 tablespoon of hummus and 1 tablespoon of tahini.

Stuff the pita with a few slices of fried aubergines and hard-boiled egg, then add 1 tablespoon of amba on top and 1 teaspoon of harissa or z'hug (optional).

Serve immediately.

To make the pickles, put all the veg in a sterilised 1-litre jar. Put the vinegar, sugar, salt and spices in a pan with 400ml water and bring to the boil. Leave to cool, then pour over the veg. Seal and leave to pickle at room temperature for 48 hrs. Will keep in the fridge for up to four weeks.

To make the amba sauce, heat the oil in a pan set over a medium heat, then cook the garlic and chilli until just soft. Tip in the spices and cook for 1 min, add the mango and stir to coat, then add the vinegar, sugar and 100ml water. Cover and simmer for 10-15 mins until the mango is soft. Season to taste and squeeze over the lime juice. Will keep in the fridge for up to one week.

For the tahini sauce, combine the ingredients with 80ml water and season to taste. It should be the consistency of double cream.

Toss the tomatoes, cucumber and spring onions with the oil, season and squeeze over the lemon juice.

Heat some olive oil in a frying pan over a medium-high heat and cook the aubergines in batches for 5-8 mins on each side until just golden. Season, then reduce the heat and continue to cook until soft.

Toast and split open the pittas, then stuff with the aubergine slices, eggs, hummus, salad, pickles and amba sauce. Drizzle over the tahini sauce to serve.

For Amba, peel the mango and cut the flesh from the core.

Roast the fenugreek and mustard seeds briefly in a pan without oil.

Squeeze the lemon.

Peel the garlic.

Put all the ingredients for Amba in a blender and puree properly and then put it in a sealable jar. Amba can be kept in the fridge for about 5 days.

For Amba

Cut the aubergine into finger-thick slices, lay them out on kitchen paper and salt them. After 10 minutes, dab the water off the slices.

Heat the oil in a pan and fry the aubergines on both sides until golden brown. Then place the fried aubergine on kitchen paper.

Boil the eggs for approx. 7 minutes (longer if desired), rinse and peel.

Cut the tomato and cucumber into cubes. Pluck the parsley.

Spread the hummus on the pita bread and top with aubergine, tomato and cucumber.

Spread the tahini sauce, amba and parsley over the top.

Either roll the bread or simply fold it in.
