St. Patrick’s day is approaching and I thought to share with you my favorite breakfast for St. Patrick’s Day. Lentil Crepes with zesty jalapeno and fresh cilantro is my take on going green. These kid-friendly, gluten free and egg-free crepes are delicious and healthy way to start a good go-green morning. You need Hulled Yellow Mung (or Moong) Lentils to make these crepe. However, Pink or Red Lentils will also be fine. It is very important to pre-soak lentils previous night. That results in very fine texture crepes and crepes cook very evenly too. <img alt="Mung Lentils Breakfast Crepe" src="https://media.chefdehome.com/750/0/0/munglentilscrepe/moonglentilscrepe_main1.jpg" />You can make two variations to these crepes depending on your diet preference. First - If you are not vegetarian, feel free to replace half of water with 1 large egg in the batter instead. That’s what I do for my husband if he is not in Vegetarian Breakfast mood. Second - If you prefer Vegan, replace non-fat yogurt with juice of 1 lime (about 1 and 1/2 tbsp). <img alt="Recipe - Gluten Free Moong Lentil Crepes" src="https://media.chefdehome.com/750/0/0/munglentilscrepe/moonglentilscrepe_main2.jpg" />Lentils are gluten free, so for both variations, crepes will still be without gluten, but they taste delicious. I even enjoy’em plain with some ketchup on the side Or filled, like I did today with some sautéed red onion, red peppers, cilantro and some ketchup. Go-Green Mung Lentils, Cilantro-Jalapeno Breakfast Crepes

Cup Cilantro, washed, leaves and stems roughly chopped

Jalapeno,

Garlic, Optional but recommended

Mix Vegetables, Optional for filling, I used red bell pepper, red onion

Tomato Ketchup,

tbsp

tsp Salt, adjust per taste

tsp Black Pepper

tbsp Yogurt, non-fat plain yogurt

Wash and soak mung lentils overnight in 2 cups water. Rinse lentils in running water in morning until water runs clear. 

Add all crepe ingredients, 1/4 cup water, yogurt, salt, pepper, jalapeno, cilantro, lentils in a blender jar and blend until smooth.  Add more water 1 tbsp at a time to make batter smooth but not runny. (little thinner than pan cake batter). Now add baking soda and leave aside.

Heat a heavy bottom skillet and spray with oil. Add 1/3 cup of batter and spread quickly yet gently to 5-6 inch circle. Don't worry about the shape, it will get better as you make'em often. Spray top of crepe with oil. Let is cook med-high heat for 2 minutes or until edges start to brown a bit.

Flip with flat spatula and cook other side for 1 more minutes or until crepe is fully cooked. Remove crepe to baking sheet. Keep'em warm in pre-heated oven until ready to serve.

Just before serving, fill each crepe with sauteed vegetables and drizzle some ketchup over the top or serve it on side. Enjoy go-green breakfast crepes with St. Patrick's day inspired drinks or a cup of green tea.

Traditional Irish soda bread is a deliciously quick and easy to make. It is perfect next to a bowl of stew or toasted for breakfast. See the section above for 5 flavour options.

Combine buttermilk and flour in a glass container, and leave to hydrate for 5 minutes.

Sprinkle the dough with the salt and soda then mix well into the batter. 

Stir in any additional flavours, then place on your baking pan. Slice a cross into the top of the loaf about 2 cm deep.

If you want to add a topping, brush the top of the loaf with beaten egg, milk or water then sprinkle on seeds or cheese.

Bake at 400F (200C) for 30-40 min (until a toothpick comes out clean).

Delicious! I made the cinnamon raisin variation &amp; loved that it was not super sweet. I used some kefir that had turned to curds &amp; regular kefir. Great recipe &amp; excited to try the variations.

This beef and Guinness pie is essentially traditional Irish beef stew filled with onions, carrots, celery, garlic, beef broth, and herbs, all topped with some lovely and simple store-bought puff pastry. Simple, delicious, and marvelously hearty.

Beef Pot Pie with Guinness

all-purpose flour

A.1. Steak Sauce

Sea salt and black pepper (to taste)

puff pastry ((preferably Dufour brand))

Dump the flour in a shallow bowl and lightly toss the meat in it to completely coat it.

Heat 1 tablespoon olive oil in a large, heavy-bottomed saucepan or Dutch oven over medium heat. Working in batches, lightly brown the meat on all sides, adding more oil to the pan as needed. Drain on paper towels.

Add the remaining tablespoon oil to the drippings in the pan along with the onion and garlic and cook, stirring occasionally, over medium heat until softened, 3 to 4 minutes. Add the carrot and celery, reduce the heat to medium-low, and cook for 5 to 6 minutes.

Return the meat to the pan, then add the stock or broth, Guinness, canned tomatoes, Worcestershire sauce, steak sauce, and chopped herbs and stir, using a wooden spoon to scrape any bits stuck to the bottom of the pan. Season to taste with salt and pepper, then bring to a boil. Reduce the heat to low and gently simmer, uncovered, until the meat is tender and the sauce has thickened, stirring occasionally and skimming any fat from the surface, 1 1/2 to 2 1/2 hours.

Spoon the stew into an ovenproof pot or dish about 7 inches in diameter. Let cool. Alternatively, if you&#39;d like a nice dome to your pot pie—and, hey, who doesn&#39;t?!—heap the filling in a slightly smaller baking dish.

Preheat the oven to 400°F (200°C).

Brush the outside edge of the pot or dish with water, then gently place the sheet of pastry over the stew, pinching the pastry against the edge of the pot or dish to seal. (lf you like, you can crimp the pastry to form a decorative edge.) Brush the pastry generously with the egg wash and bake for 30 to 40 minutes, until the pastry is puffed and golden brown. Serve hot from the oven.

This Irish Apple Cake, is a moist and sweet with a crunchy top, that can be served cold or warm with chilled cream or hot custard.

¼ cup cup milk

Preheat the oven to 375 degrees. Prepare a 9-inch round baking pan by spraying with oil or coating with butter.

Sift the cake flour, baking powder, salt, cloves and nutmeg into a large mixing bowl.

Cut the butter into the flour and rub it in using your fingers or a pastry cutter until the mixture resembles fine bread crumbs.

Toss in the sugar and combine it with the flour mixture.

Peel and slice the apples into similar 1&quot; to 2&quot; sized pieces.

Add the apples into the flour mixture and mix them thoroughly.

Beat the eggs and add a dash of milk. Add to the apples and flour and combine well with a large spoon. Add more milk as needed to fully moisten the flour. The result is a pretty sticky mixture.

Transfer the dough into the prepared cake pan and flatten the top surface using the back of a large spoon.

Sprinkle two tablespoons of sugar over the top of the cake.

Bake the cake in the preheated 375 degree oven for 45 to 50 minutes. Cool for 5 minutes in the pan, then transfer to a wire wrack to finish cooling.

When cabbage has lost much of it's volume and started to turn shiny, slightly translucent, and has lovely browned bits, it is ready to serve.

This pan boxty is essentially an Irish potato pancake. Just a few ingredients--grated potatoes, a little flour, and butter--constitute this classic Irish dish. Lovers of colcannon, rösti, latkes, and hash browns will find comfort here.

Pan Boxty ~ Irish Potato Pancake

russet potatoes (unpeeled)

all-purpose flour ((2 to 3 tablespoons))

Butter ((about 4 tablespoons))

herbs ((optional))

Grate

Scrub the potatoes but don&#39;t peel them. Line a bowl with a flour sack towel or some cheesecloth. Grate the potatoes onto the cloth, then gather the ends of the cloth and squeeze the liquid from the potatoes into the bowl. Set the potatoes and cloth aside, and let the potato liquid in the bowl sit until the starch settles, 10 to 20 minutes. You should have 8 to 10 cups of grated potatoes.

Toss

Carefully drain the water from the starch in the bottom of the bowl, reserving the starch and discarding the water. Add the grated potatoes to the bowl, a small handful of flour (maybe two tablespoons or so), and a generous pinch of salt, and toss to coat the potatoes.

Melt a generous blob of butter in a large cast-iron skillet (10 to 12 inches) over medium heat. Add the potato mixture and pat it down into an even layer. It should be 3/4 to 1 inch thick. Cook over medium heat, letting it turn a nice golden brown. Brown one side before turning it over. Don&#39;t increase the heat above medium to rush it, but do peek occasionally to make certain the potatoes aren&#39;t browning too quickly. You want the outside to turn pale brown by the time the inside is slowly becoming tender. Flip the boxty.  Cook the pan boxty on the other side until crisp and golden on the outside, tender and creamy on the inside, about 40 minutes total, depending on the heat and the size of your skillet. Again, be patient and don&#39;t crank the heat or the outside will scorch while the inside remains underdone.

Serve

Cut the boxty into 4 wedges and serve it straight from the skillet.

Preheat oven to 350º F.Grease 13 x 9-inch baking dish.Place bread cubes in prepared baking dish.

Heat evaporated milk in medium saucepan over MEDIUM-HIGH heat; bring just to a boil. Remove from heat. Add 1 1/2 cups morsels; whisk until smooth.

Combine egg yolkssugarliqueur and salt in large bowl.Slowly add milk mixture; whisk until smooth.Pour over bread; pressing bread into milk mixture.

Bake for 35 to 40 minutes or until knife inserted in center comes out clean.Top with remaining 1/2 cup morsels.Serve warm with a dollop of whipped cream and dusting of cocoaif desired.
