La ricetta tradizionale della torta pasqualina.

Torta Pasqualina

400 grammi di farina bianca

cucchiai d’olio extravergine d’oliva

Sale

Acqua al bisogno

500 grammi di bieta

250 grammi di ricotta (o stracchino)

uova

cucchiai di parmigiano grattato

cucchiai di pecorino grattato

Pepe

Noce moscata

Impastare farina, olio, acqua e sale fino a formare una pasta compatta e senza grumi. Ricavarne 4 panettini della stessa dimensione e dello stesso peso e metterli a riposare coperti con un panno di cotone per un’ora.

Preparare il ripieno cuocendo la bietta lavata e tagliata grossolanamente in una padella antiaderente senza acqua e a fuoco basso in modo che non perda sapore quindi una volta pronta eliminare l’acqua di cottura che si forma automaticamente e sminuzzare. Ripassare velocemente in padella con poco olio.

Mescolare la bieta ripassata con 2 uova, 2 cucchiai di parmigiano grattugiato, 2 cucchiai di pecorino grattugiato, sale e pepe.

In un’altra ciotola unire alla ricotta 3 uova, noce moscata a piacere, 3 cucchiai di parmigiano e 2 cucchiai di pecorino mescolando per bene in modo che il composto si amalgami per bene quindi aggiungere sale e pepe al bisogno. Unire i due composti e mescolare per farli amalgamare.

Prendere i panetti di sfoglia, stenderli con un matterello su un piano infarinato quindi adagiarne due, uno sull’altro, sul fondo della tortiera oliata. Farli aderire bene in modo che non si formino bolle.

Versare sulla sfoglia il composto livellando per bene in modo che la superficie resti liscia.

Adagiare uno strato di sfoglia rimasto sulla superficie della torta facendolo aderire per bene quindi con le nocche della mano praticare 4 fossette (senza spingere troppo) e aprire le 4 uova rimaste all’interno di queste fossette.

Chiudere la torta con l’ultimo strato di sfoglia, eliminare la pasta in eccesso e spalmare con olio extravergine di oliva. Infornare in forno caldo a 180°C per 50 minuti circa.

Cook the beef:

Add the beef to a pot of boiling water and cook it for about 2 hours. You can also use an Instant Pot to cook it faster. If using an Instant pot cook it on high pressure for 1 hour. Transfer the meat to a bowl and let it cool before chopping.

Cook the potatoes and carrots:

Add the potatoes and carrots to a large pot and cover with water. Season with a teaspoon of salt. Bring the water to a boil and cook the potatoes and carrots until they are fork tender, should take about 15 minutes. Drain and cool slightly.

Prep the veggies and meat:

Chop the meat, potatoes, carrots and pickles; they should all be small pieces about ¼ inch by ¼ inch. Drain all the liquid from the diced pickles and the peas. I usually place them in a paper towel lined bowl to soak up all the extra liquid.

Make the salad:

Add all the veggies and meat to a big bowl, then add the mayo and mustard, season with salt and pepper and mix everything together.

Serve:

The salad is often decorated to make it more visually appealing and festive. The decoration typically involves arranging colorful vegetables, herbs, and other garnishes on top of the salad in an attractive and creative way. For simplicity, I simply smoothed out the top and topped it more mayonnaise. Now, serve the salad immediately or put it in the fridge to stay cold.
