Incredibly flavorful, quick, 30-minute healthy dinner recipe with tomato pesto, salmon and rice baked in foil.

Tomato Pesto Salmon and Rice Recipe Baked in Foil

heavy duty foil sheets

instant rice ((you can use brown rice))

water

Sundried Tomato Pesto

Preheat oven to 400F.

Place rice and water in a small bowl and stir to combine.

Lay out the foil sheets and divide the rice mixture evenly over each foil, squeezing the water out as much as possible. I just spoon out some rice, then hold the spoon to the side of the bowl and tilt the spoon a bit to drain out the excess water.

Top rice with salmon fillets; season with salt and pepper, and rub with a drizzle of olive oil.

Add a tablespoon of tomato pesto on top and spread it over each fillet.

Sprinkle some garlic over fillets.

Place a sprig of fresh thyme over each fillet.

Fold the sides of the foil over the fish, covering completely; seal the packets closed.

Transfer fillets to a jelly roll pan or large baking sheet.

Bake for 20 to 22 minutes, or until salmon is cooked through.

Transfer foil packets to plates.

Carefully open up the foil packets and serve.

What kind of salmon do you typically buy?

I did not have honey, so I added in a bit of some teriyaki sauce to achieve that same sweetness as the honey. And babyy, it was so delish

This recipe is definitely a keeper! Super easy and I usually have all those ingredients. I had a thicker salmon steak then was shown so I should have cooked it a bit longer. It was still good, I microwaved it for 30 seconds. Perfect!

How do you add minced garlic to a skillet for five minutes without it turning into charcoal? Is everyone eating burnt garlic salmon here? Garlic is super delicate. It'll burn in oil in thirty seconds. The rest of the recipe is okay, I suppose, though I would simply marinate the salmon beforehand. Much easier. 

Bizarre directions.

This recipe is delicious, easy to ake, easy to clean up. I made one change, added a splash of whitecwinevto the butter, olive oil and lemon juice.  Took the salmon oh when it was cooked and boiled off some of the liquid and the sauce was scrumptious.

Absolutely delicious! I have never left a comment on a dish before, but this recipe was too good not to. This was my first time cooking salmon steak and I normally try to find recipes that have many reviews, but I saw this one and it sounded/looked so yummy I decided to try it. So glad I did!  SO SCRUMPTIOUS!!!

This turned out fantastic! It was my first time cooking salmon steaks, I always buy fillets. I used our cast iron skillet and am sooooo happy I read the reviews about replacing the honey with teriyaki. I think that was a strong move. My husband would not be too keen on the honey, so I almost passed over this recipe. This was incredibly easy and I even juggled making two side dishes while cooking the salmon because the seasoning/sauce was all easy to prep.

Flourless Salmon Piccata in Foil - A healthy and incredibly delicious dinner with flourless piccata sauce poured over salmon and cooked in foil.

salmon fillet

STAR Capers

Preheat oven to 375F.

Line a baking sheet with a large piece of foil.

Season salmon with salt and pepper and set over prepared foil; set aside.

In a nonstick skillet, add butter and olive oil; cook over medium-high heat until butter is melted.

Lower heat to medium and add minced garlic to the skillet; cook for a minute or until fragrant; swirl the pan around so that you do not burn the garlic.

Stir in lemon juice and continue to cook for 1 minute.

Remove from heat and stir in the capers.

Pour the sauce over prepared salmon.

Arrange a few slices of lemon over the salmon.

Fold the sides of the foil over the fish, covering completely and sealing the packet closed.

Place into oven and bake until cooked through, about 18 to 20 minutes.

Remove from oven, open up the foil and put fish under the broiler for 2 minutes, or until slightly browned on top.

Remove from broiler, garnish with fresh parsley and serve.

Honey Garlic Sauce Salmon

butter, (divided)

skin-on salmon fillets, (each fillet should be around 4-ounces)

cumin

smoky or sweet paprika

Italian Seasoning

salt and fresh ground pepper, (to taste)

garlic, (minced (about 1 tablespoon minced garlic))

honey

lime juice

green onions (for serving)

lime wedges (for serving)

Heat olive oil and 1 tablespoon butter in a large (10 to 12 inches) cast iron skillet over medium-high heat.

In a small bowl combine cumin, paprika, Italian Seasoning, salt, and pepper; mix until incorporated.

Season salmon fillets with prepared seasoning and transfer to skillet, skin side down. (PLEASE SEE MY NOTES)

Cook the fillets for 4 to 5 minutes, or until cooked three quarters of the way through.

In the meantime, combine honey, soy sauce, and lime juice in a bowl; whisk until well combined.

Flip the fish over and add 1 tablespoon butter to the skillet. (If working in batches, at this point you want to place all your fillets back in the skillet.)

Wait until butter melts and add minced garlic over the fish.

Pour the prepared honey soy sauce over the fish and continue to cook for 2 more minutes, or until cooked through and sauce has slightly thickened. Spoon the sauce over the fillets while cooking.

Remove from heat.

Garnish with sliced green onions and serve with lime wedges.

Miso Salmon Curry is creamy, wholesome, and irresistibly delicious. Serve this vibrant dish over a bed of rice or quinoa for a mouth-watering meal you'll want to enjoy again and again. The time indicated here assumes you already have cooked rice or quinoa to serve with this, so adjust accordingly as needed.

Miso Salmon Curry

Heat olive oil in a large pan over medium heat. Once hot, add the onions and
carrots, then cook for 5-7 minutes, until softened.

2. Turn the heat down to medium-low, then add ginger and garlic. Cook for 1 minute.

3. Add miso paste to the pan and cook for 1 minute, then add the red Thai curry paste and cook for 1 more minute (add a splash of water or stock if it seems too dry).

4. Pour in the coconut milk and stir until well combined. Then, add vegetable stock, sea salt and honey, then let the liquid come to a light simmer. If it&#8217;s boiling turn the heat down slightly, if it&#8217;s not simmering turn the heat up a little.

5. While the curry simmers lightly, remove the skin from your salmon and cut it into 1” pieces (if possible as the fish counter to remove the skin before you bring it home to make it even easier).

. Carefully add the salmon pieces into the curry and let it cook for 5-7 minutes, until the salmon is cooked through and opaque.

. Turn off the heat, then stir in the leafy greens and lime juice. Let the heat slightly wilt the greens for about 2 minutes.

. Garnish with fresh cilantro and serve over cooked rice or quinoa. Enjoy!

Hi Elizabeth, this was delicious, and my partner thought it was better than our usual curry take out :) I had to make some guesses in the directions - as written, the temperature of the sauce wasn't cooking the salmon so I had to turn it up to medium again, and I couldn't see where the Thai paste came in, so I scooped some of the sauce and mixed it in when I added the salmon.  Will definitely be making it again!
