Best grilled salmon kabobs, prepared Mediterranean-style with a garlicy, zesty marinade, zucchini and onions! Serve these with your favorite Mediterranean salads and sides and a little Tahini sauce or Tzatziki (lots of ideas up in the post).

Mediterranean Salmon Kabobs 

1.5 lb Salmon fillet,

zucchini, sliced into rounds

red onion,

Kosher salt and pepper

lemon,

garlic cloves,

tsp chopped fresh thyme leaves

dry oregano

tsp cumin

tsp mild chili pepper (I used this Aleppo pepper

tsp coriander

In a small bowl, whisk together the marinade ingredients of extra virgin olive oil, lemon juice and zest, garlic, oregano, thyme, cumin, Aleppo pepper and coriander.

Place salmon pieces, zucchini and onions in a large mixing bowl. Season with kosher salt and pepper, and toss briefly. Now pour the marinade over the salmon and toss again to make sure the salmon is well coated with the marinade. Let the fish marinate for about 15 to 20 minutes (see Cook's Tip)

Beginning with salmon, thread salmon, zucchini and onions through skewers (if using wooden skewers, be sure to have soaked them for 30 minutes before using.)

Heat an outdoor grill (indoor grilling instructions in notes). Arrange salmon skewers on top and cover the grill. Grill salmon kabobs for 6 to 8 minute, covered, or until the fish is opaque throughout, turning once midway through cooking (using tongs is the best way to turn the salmon skewers)

Quick and easy to make, these Prosciutto Wrapped Salmon Skewers will knock the socks off of your usual busy weeknight dinners.

Prosciutto Wrapped Salmon Skewers

salmon fillets, (frozen)

proscuitto

olive oil

black pepper

Take out the fillets and thaw, but do not thaw all the way through. It’s much easier to thread the salmon onto the skewers when it’s still a bit frozen. 

Soak the skewers in water for 10 minutes.

Preheat oven to 425˚F.

Line a baking sheet with parchment paper, or aluminum foil, and set a rack over the baking sheet. Set aside.

Take the almost thawed fillets and cut into long pieces; you’ll need 8 in total. I get 4 fillets - they each weigh about 4-ounces - and I cut each fillet, longwise, into two pieces.

Put skewers through each piece of salmon.

Wrap prosciutto around the salmon.

Brush olive oil over each prosciutto wrapped salmon and season with crack of black pepper. You can also add salt, but keep in mind that prosciutto is salt-cured, air dried ham.

Transfer prepared skewers to previously prepared baking sheet and place skewers on top of the rack.

Bake in the preheated oven for 10 to 12 minutes, or until salmon is cooked through and prosciutto is crispy.

Remove from oven and serve.

These healthy salmon and lemon kebabs are delicious and easy to make, loaded with omega 3s in every bite! Seasoned with fresh herbs, lemon, and spices and grilled to perfection.

Heat the grill on medium heat and spray the grates with oil.

Mix oregano, sesame seeds, cumin, and red pepper flakes in a small bowl to combine; set spice mixture aside.

Beginning and ending with salmon, thread salmon and folded lemon slices onto 8 pairs of parallel skewers to make 8 kebabs total.

Spray the fish lightly with oil and season kosher salt and the reserved spice mixture.

Grill the fish, turning occasionally, until fish is opaque throughout, about 8 to 10 minutes total.

Cut salmon into 1.5 inch size pieces. Place it in a bowl.

Season

Season salmon with garlic parsley salt, thyme leaves, oil, and juice from 1/2 of a lemon. Toss together and let it marinate for 10-15 minutes.

Slice

Slice remaining lemon into very thin strips. Starting and ending with a cube of salmon, thread the salmon onto to a skewer. Add a slice of lemon between each piece of salmon.

Grill

Preheat the grill to medium high heat. Grill salmon until it&#39;s golden, about 8 minutes.
