Light Italian One Pot Salmon &amp; Orzo Recipe

salmon

c. diced yellow onion

garlic

14.5 oz can Basil, Garlic & Oregano diced tomatoes

chicken broth

c. DeLallo whole wheat orzo

salt

tsp pepper

tsp Italian Seasoning

c. Parmesan cheese

Tbsp chopped Parsley

In a large skillet over medium heat olive oil. Saute onions 3 minutes until translucent. Add garlic and saute 30 seconds or until fragrant.

Add whole wheat orzo to skillet and stir to coat. Saute about one minute. Stir in tomatoes, Italian Seasoning and chicken broth. Bring to a boil, reduce heat and simmer 8 minutes, stirring occasionally.

Stir in Parmesan cheese.

Season salmon with salt and pepper. Nestle salmon pieces into orzo. Cover skillet and simmer 8-10 minutes or until salmon is cooked through and pasta is al dente.

Remove lid from skillet and simmer to reduce broth is there is extra.

Garnish with fresh parsley and serve.

One Skillet Salmon with Lemon Orzo

tsp sweet paprika

dry orzo pasta

juice from ½ lemon

Get your prep done before you start cooking: Grate the Parmesan cheese, finely chop the onion and mince the garlic cloves. Pat the salmon fillets dry with a paper towel. Season both sides with garlic powder, sweet paprika and ½ teaspoon salt and pepper.

Heat oil and butter over medium high in a large nonstick pan or skillet. Add salmon fillets and sear, 3-4 minutes per side. Remove from skillet and set aside.Reduce heat to medium, add garlic and onion. Cook until soft and fragrant for about 2 minutes. Stir in thyme and the remaining salt and pepper. Add orzo and toast for 1 minute.

Pour in broth and bring to a boil. To maintain a simmer, reduce the heat to medium-low. Cook uncovered while stirring occasionally to prevent the orzo from sticking, until almost al dente and most of the liquid is absorbed, about 8 minutes.

Add spinach, stir and simmer until wilted for about 2 minutes. Stir in lemon juice and Parmesan. Add more broth, if needed. Taste and adjust salt.

Return salmon to the skillet and simmer for 2-3 minutes, or until the salmon is heated through.

Top with freshly ground black pepper and chili flakes. Enjoy!

Creamy Salmon &amp; Spinach Orzo is my go-to one-pan dinner when I need something quick, easy, and delicious. It’s ready in 30 minutes and packed with tender &amp; flaky salmon, creamy orzo, spinach, roasted red bell peppers, Parmesan, and a splash of lemon juice. 

Salmon Orzo

½ teaspoon smoked paprika

black pepper

Italian seasoning

orzo (uncooked)

chicken stock

heavy cream

red bell peppers (chopped (canned or jarred))

Parmesan cheese (freshly grated)

Pat the salmon fillets dry using a paper towel. Season with smoked paprika, salt, and pepper.

Heat a large, high-sided skillet (I used a cast iron skillet) on medium-high heat for about 2-3 minutes. Once hot, add olive oil and swirl to evenly coat the skillet. Place the salmon fillets in the skillet, skin-side up. Sear the salmon for about 3-4 minutes, then flip carefully and cook for an additional 2-3 minutes.

Carefully remove the salmon fillets from the skillet. Use a paper towel to wipe off excess fat, if needed.

Add olive oil and chopped onion to the same skillet. Sauté for about 2-3 minutes or until translucent and soft. Then, add minced garlic and Italian seasoning. Sauté for an additional 30-60 seconds or until fragrant.

Add uncooked orzo and toast for 1-2 minutes. Pour in chicken stock. Bring to a boil and reduce the heat to medium-low. Let it simmer, stirring occasionally, for about 6-10 minutes or until the orzo is tender and cooked through.

Add in heavy cream, chopped roasted red pepper, Parmesan cheese, spinach, and lemon juice. Cook, stirring occasionally, until the spinach wilts.

Return the cooked salmon back to the skillet. Let it warm through on medium heat. Garnish with fresh basil and coarsely ground black pepper.
