This grilled summer salmon salad is one of my new favorite snacks! Satisfying, delicious and easy to share, it's a great simple dish for a party and another option to make a sandwich.

Summer Salmon Spread

salmon filets, (about 1 inch in thickness each)

kosher salt and pepper

plain greek yogurt

mayonnaise

dijon mustard

red bell peppers

green onions, (thinly sliced)

feta cheese

dill

chives

Note: this is easiest to make if you have leftover salmon! But in case you don’t, start by grilling it.

Preheat your grill to the highest setting.

Season the salmon all over with salt and pepper and the garlic powder. Place the salmon on the grill and close the lid. Grill for 3 to 4 minutes, then gently flip and grill for 2 to 3 minutes more until it’s cooked through. Remove the salmon and let it cool. Flake it with a fork until it is in pieces.

In a bowl, mix together the yogurt, mayo and mustard. Add in the salmon, peppers, onions, feta, dill and chives. Taste and season with a bit more salt and pepper (this will be determined by how seasoned your salmon is to begin with).

Once made, this stays great in the fridge for a few days! Serve with crackers, on croissants or lettuce cups, in sandwiches, pita and more.
