Literally translating to ‘green sauce’, salsa verde is often served in Italy as an accompaniment to light pasta dishes, as a dressing for summer salads or paired with roasted chicken or fish for a main meal. Whilst it is similar in appearance to green pesto, particularly the classic pesto alla Genovese, they are not the same thing, though they are often confused outside of Italy. The key difference between pesto and salsa verde is that the latter does not contain pine nuts or cheese, two of the key ingredients in the traditional Ligurian pesto. Salsa Verde Recipe

tarragon fennel fronds, roughly chopped

pack fresh parsley, roughly chopped

garlic, crushed (use wild garlic if you have it)

Dijon mustard

capers,

extra virgin olive oil

2tbsp red wine vinegar

1tsp sea salt

Combine the chopped herbs, garlic and salt in a large bowl.

Mix in the mustard and the chopped capers. Pour in the olive oil and combine thoroughly.

Finally, slowly add the vinegar, tasting the sauce as you go to ensure it doesn’t become overpowered.

Serve with pasta or a fresh salad. Buon appetito!

Seared tuna with avocado salsa verde is a super-simple summer dish that is elegant enough for entertaining, but quick enough for weeknight dinners.

Seared Tuna with Avocado Salsa Verde

cilantro

garlic

capers

lime juice

red pepper flakes (optional)

kosher salt (divided)

tsp. black pepper

olive oil

avocado (diced)

Combine cilantro, garlic, capers, lime juice, red pepper flakes, 1/4 tsp. each of the salt and black pepper in a blender or mini food processor. Blend, gradually pouring in all but 1 Tbsp. of the olive oil, until mostly smooth. Transfer mixture to a bowl; gently toss with diced avocado.

Heat a grill pan or cast-iron skillet over high heat. Rub tuna steaks with reserved 1 Tbsp. oil; sprinkle with remaining 1/2 tsp. salt and 1/4 tsp. black pepper. Cook the fish for 3 minutes. Turn and cook until desired degree of doneness, 3 minutes longer for medium rare.

To serve, slice tuna steaks and spoon avocado salsa verde overtop.

Whenever I need to escape my backyard, I make this sauce.  It instantly evokes Italy, especially when spooned over Tuscan Grilled Skirt Steak (try it over this Creamy Polenta!). The sauce is made up of herbs, capers, garlic, shallots and anchovy.  Don’t be put off by the anchovy—it adds depth of flavor, but you won’t taste it. The sauce is also fabulous over fish, chicken, eggs, pasta and grain bowls (and I’ve been known to eat it straight with a spoon!). *This recipe is adapted from my book, The Food Processor Family Cookbook (Sonoma Press, 2016).

Italian Salsa Verde

garlic clove,

shallot

anchovy fillet,

rosemary

thyme leaves

parsley

walnuts

Plop the garlic and shallot into a mini food processor, and process until finely chopped. Scrape the sides.

Add the capers, anchovy, rosemary, thyme, parsley, walnuts and red wine vinegar.  Season with salt and pepper.  Process until finely chopped, scraping down the sides occasionally.

Add the olive oil and process until incorporated. Taste the sauce—it should be herby but bright. If you need to, add more vinegar, salt and/or pepper. Transfer the sauce to a bowl and let it sit at room temperature for at least 10 minutes (or up to 1 hour) to let the flavors meld.

This salsa verde recipe is a classic Mexican salsa that&#039;s easy to make at home with tomatillos, jalapeño peppers, cilantro, onion, &amp; garlic.

Salsa Verde

tomatilllos (medium-sized)

jalapenos (1 for mild, 2 for spicy)

white onion (medium, quartered)

In the oven, place the cooking rack 4-6 inches below the broiler.  Turn on the broiler and place the tomatillos, jalapeno peppers, and garlic on a baking sheet. Broil for 4-5 minutes, then flip all the ingredients using a spatula, and broil for another 4-5 minutes. They should be slightly charred and blistered. Let them cool to the touch.

Transfer the tomatillos, peppers, onion, and garlic into a high-powered blender or food processor. Add the oregano, cumin, and salt, and blend until smooth. If the salsa is too thick for your liking, add one tablespoon of water at a time and blend until it reaches your desired consistency.

Tomatillo Salsa Verde Recipe

tomatillos

hot green chiles

onion

chicken broth broth

cilantro ((stems removed, then chopped))

lime juice (add to taste)

Add tomatillos, chiles, onion, and garlic to a large saucepan. Add enough broth just to just barely cover the vegetables.

Sprinkle in a little salt and bring to a boil on high heat. Cover and immediately reduce heat to a gentle simmer. Continue simmering for approximately 15 to 20 minutes or until the tomatillos and peppers are tender. Remove the lid in the last 5 to 10 minutes.

Let the salsa cool slightly then transfer to a food processor or a blender (an immersion blender is fine too). Add the lemon juice, salt, pepper, and fresh cilantro and pulse until the mixture reaches the desired consistency.

Use it as a dip, or sauce in chilaquiles or your favorite enchilada recipe. 20-Minute Roasted Tomatillo Salsa Verde Recipe

lb (680 grams) Tomatillos (husks removed and quartered)

lb (200 grams) Poblano Peppers (cut

oz (375 grams) White Onion (skin removed,

Jalapeño (sliced in 1/2, seeds and ribs removed (optional))

Cloves of Garlic (large and unpeeled)

tsp Fine Sea Salt

Tbs Fresh Lime Juice

Fistful Fresh Cilantro

Set oven rack on the second setting from the top. Preheat the oven to broil.&nbsp;

On an unlined sheet pan, evenly place the tomatillos, poblano peppers (flesh side down), onion, jalapeño if using and garlic. Roast for about 10-12 minutes tossing and turning the vegetables once while roasting. The veggies will be blotchy with charring and softened when ready. Cool long enough to handle, then remove the garlic from its husk and add either to a food processor or blender along with all the roasted veggies, salt, lime juice, cilantro and water. Blend or process to a course puree&#039;. Taste for salt adjustment and thin with more water as needed, then scoop into serving bowl or into storage containers. It will thicken as it chills. 

Store in a lidded container in the refrigerator for up to one week or in the freezer for up to a month.&nbsp;&nbsp;

I LOVE salsa verde!  But I have to laugh at the "freeze for up to a month".  I made a HUGE batch of it with the windfall of tomatillos from my garden FOUR YEARS ago.  I froze it all in half quart containers and since I'm the only in my family who eats it, it's taken me a while to eat through it all.  Because it's a "liquid" of sorts and fills the whole container with just a thin layer at the top exposed to a tiny bit of air, the quality really didn't decrease at all during that time (air exposure is what kills the taste of things in the freezer).  I'm finally ready to stock up again with another windfall of tomatillos in the garden.  THanks for sharing your recipe!  I never saved the first one I used!  Yum!

This is my absolute favorite salsa verde recipe! I add one extra clove of garlic and don’t use any water at all. My husband and I literally eat it by the spoonful. Great in tacos, burritos, quesadillas and eggs!

It had been a good 20 years since I’d tried my hand at salsa verde, and I knew when I saw this recipe that I needed to change that ASAP. Roasted Tomatillo Salsa Verde

Made with a handful of ingredients, this salsa verde comes together in less than 20 minutes! Perfect with just chips or as a topping, this green salsa is beyond flavorful!

tomatillos ((675 grams))

lime juiced

jalapeńo (or serrano pepper, seeded (optional))

Remove and discard the husks and rinse the tomatillos in cold water.

Position an oven rack about 6 inches from the broiler. Preheat the oven to High broil (500F). Line a baking sheet with foil or lightly brush with oil.

Cut the tomatillos in half and place cut side down in an even layer on the baking sheet. Scatter the onion and garlic around the tomatillos.

Broil for 5 to 6 minutes or until the tomatillos are starting to char and turn black.

In the container of a food processor or blender, combine the charred vegetables, cilantro, lime juice, jalapeño, and salt. Blend until finely chopped or desired consistency. Taste and add more salt if needed.

Transfer to an airtight container and let the salsa sit for at least 1 hour before serving. Salsa can be refrigerated for up to 5 days.

Roasted Salsa Verde Recipe with Tomatillos or Green Tomatoes To Can or Freeze

peppers:

Preheat oven to 425 degrees.

Place tomatillos and/or green tomatoes in a large roasting pan. Add chilies, onion, garlic and mix.

Roast vegetables for 30-35 minutes, stirring at the halfway mark, until the tomatillos/tomatoes are starting to break down.

Scrape the roasted vegetables into a large stockpot and add the remaining ingredients. Bring to a boil and simmer, uncovered, about 10 minutes. While simmering, prepare water bath canner, lids and 4 pint or 8 half-pint jars if planning to can (or wash freezer-safe jars or containers for freezing).

Blend the salsa further, if desired, with an immersion blender. Ladle into prepared jars leaving 1/2-inch headspace for canning (to freeze you&#39;ll need a good 1+ inch headspace for freezing to account for expansion).

To Can: Wipe rims, seal, and process in a boiling water bath for 15 minutes, turn off burner, remove lid and let sit for 5 minutes. Remove jars to a cloth-lined surface and let cool 12-24 hours before testing the seals, labeling, and storing for up to 18 months.

To Freeze: Let salsa cool and then transfer to clean freezer containers. Label and freeze for a year for best flavor.

I ended up with 18 pints and it turned out delicious.  Thank You for the recipe...

I made this as written, and I would caution folks to add the cumin in stages...I dumped in the whole 4 tablespoons and the salsa tasted just a bit bitter. I canned it anyway, and maybe it will mellow out by the time I take it out to use. Next time I may leave out the cumin and add some before serving. I do have a LOT of green tomatoes to use up still this fall!

We made this salsa using 2/3 green tomatoes from our garden and 1/3 tomatillos.  It was excellent!  Great flavor and nice and thick. I cut the cumin in half though, and I still would reduce that slightly when we make it again next year.  My husband said it is the best green salsa he's ever tasted.
