This homemade saltine cracker recipe fills your home with the most delicious smells but they taste even better! Crispy and buttery - crackers made from scratch are so good you&#039;ll never buy them again. Difficulty level: 2/10

Saltine Cracker Recipe

all-purpose flour

baking powder

unsalted butter

milk (you can substitute non dairy milk if you need to)

crystals

egg egg

water

Blend the egg white with the water to make an egg wash. Set aside.

Mix together the flour and baking powder.

If you are adding seasonings mix those in with the dry ingredients.

Cut butter into flour mixture until it forms coarse crumbs.

Add the milk and knead gently to form a ball.

Divide in 4 parts and roll out paper thin on a floured surface. The thinner they are the crisper they will be.

Cut the dough into squares or desired shapes. (a pizza wheel works great for that!)

Place on an ungreased cookie sheet and prick all over with a fork.

Brush with the egg wash and sprinkle with salt (or cracked pepper ..or..)

Bake at 325 until golden brown..about 15- 20 minutes. (check after 10 minutes)

Let cool before serving. They crisp as they cool.

If you have never tried saltine toffee before, I have to warn you that this stuff is very addictive! I don't think it's possible to stop at just one piece.

Preheat oven to 425 F. Line a rimmed cookie sheet with aluminum foil. Fill sheet with all 40 saltine crackers in a single layer.

In a medium saucepan over medium-high, melt butter and brown sugar together and bring to a boil. Stir occasionally until combined and sugar is melted.

Then boil undisturbed for 5 minutes.

Remove from heat and pour caramel mixture over the cracker layer. Spread with a wooden spoon if needed to cover them evenly.

Bake in preheated oven for 4-5 minutes, or until just bubbly.

Remove from oven and sprinkle immediately with chocolate chips. When chips begin to melt, spread them over crackers with an icing spatula. Transfer pan to refrigerator until firm, about 2 hours. Break into pieces and store in an airtight container.

Like a dreamy mash-up between a Key lime and lemon meringue pie, this surprisingly fast and easy dessert is adapted from Bill Smith, the chef at Crook's Corner, a Chapel Hill, N.C. restaurant that specializes in Southern comfort food. He was inspired by the lemon pies he ate at seafood restaurants in Atlantic Beach, N.C., while vacationing there as a child. While a food processor makes quick work of the saltine cracker crust, you don’t really need any special equipment — you can just as easily make it with your hands. Top it with whipped cream just before serving, and if you’re feeling flush, sprinkle it with flaky sea salt as they do at Crook's Corner, and citrus zest as we do: a lazy summer’s day in pie form.

Atlantic Beach Pie

sleeves saltine (with salt) crackers (about 60 crackers/200 grams)

sugar

unsalted butter (1 stick), at room temperature

(14-ounce 396-gram) can sweetened condensed milk

120 milliliters lemon or lime juice, or a mix of the two

kosher salt

Make the crust: Heat oven to 350 degrees. Using a food processor or your hands, pulse or crush the crackers finely (stop before all the crackers turn to dust; it’s O.K. if you have some little pieces). Add sugar, then butter.

Pulse to combine or work the butter in with your hands until the crumbs hold together like dough. Press into and up the sides of a 9-inch pie pan. Freeze for 15 minutes, then bake for 12 to 15 minutes or until the crust gets a little color.

Make the filling: While the crust is cooling (it doesn't need to be cold), in a medium bowl, whisk egg yolks into condensed milk, then whisk in the lemon or lime juice (or both), and salt, making sure to combine them completely.

Pour into the shell, and bake for 14 to 16 minutes until the filling has set. Refrigerate until completely cold, 4 hours up to overnight. Serve with fresh whipped cream, lemon or lime zest and a sprinkling of flaky sea salt, if desired.
