Sambal Oelek. A VERY spicy chili paste sauce made with bird’s eye chilies, onion, shallots, garlic, tomatoes and oil. A flavourful sauce used to cook your favourite dishes with or used as a condiment. Beware this is very spicy! I share a less spicy version below.

Very Spicy Sambal Oelek (20-minute. Recipe)

tbsp avocado oil

bird’s eye red chilies

bird’s eye green chilies

tomatoes (I used cherry tomatoes

shallots (halved)

onion

garlic

avocado oil (for later)

tbsp sugar

tbsp salt

chicken powder (omit if vegan)

In a hot wok or deep pan set over high heat add 2 tbsp avocado oil, followed by your chilis, onion, shallots, tomatoes and garlic cloves. Char them until the edges are browned. Remove from stove.  Transfer to a blender or food processor.

Blend on high until the ingredients are grounded finely.

Pour the ingredients into the same wok or pan (I would recommend doing this outdoors on a portable stovetop to prevent inhaling hot chili smoke which can lead to a coughing fest!)

Bring the liquid to a boil and add ½ cup avocado oil, sugar, salt and chicken powder. Stir to mix.  Allow this to simmer on low heat for 10 minutes uncovered.

Allow this to cool and transfer to a mason jar.  Serve as a condiment with your favourite dish!

This is an authentic sambal oelek chili paste recipe. You only need three simple ingredients and 10 minutes to make a chili sauce to rival anything you can buy in a jar.

Sambal Oelek Chili Paste

chili peppers chili peppers

rice wine vinegar

salt

Cut the stems of the chili peppers and chop into ½ inch pieces

Blend

Transfer the chili peppers to a food processor or blender and pulse until a smooth paste forms, scraping down the sides occasionally.

Add the vinegar and salt and blend until well combined.

Store

Transfer the chili paste to a jar or airtight container and store in the fridge.

10-Minute Sambal Oelek Red Chili Paste (Better Than Walmart!)

red chili peppers (, washed & de-stemmed)

tbsp oil

tbsp vinegar

garlic (, minced)

¾ tbsp palm sugar

Heat oil in a wok or skillet on medium-high heat. Add in chili peppers and garlic. Stir-fry for about 2-3 minutes, or until garlic is fragrant and chili peppers are soft.

Remove from heat and transfer the ingredients into a molcajete. Add all the remaining ingredients and grind until a rough paste forms. Alternatively, you can add all of the ingredients into a food processor and pulse until roughly combined.

Add sambal oelek into a jar and cover tightly. Refrigerate until ready to use. ENJOY!
