Simple San Marzano Pasta e Fagioli

lb. chicken sausages

mirepoix – chopped celery, carrot, and onion*

garlic,

bay leaf

San Marzano tomatoes

cannellini beans

chicken broth

lb. small pasta – I used orecchiette

baby spinach

Parmigiano Reggiano cheese

Remove the chicken from its casing. In a large pot, brown the chicken sausage over medium high heat and drain the excess grease. Set aside.

Crush the San Marzano tomatoes and sauce in a food processor and set aside. Drain the cannellini beans. Place in a food processor. Refill the can with water, add to the food processor, and puree until very smooth.

In the same large pot as step one, saute the mirepoix, garlic, oregano, salt, and bay leaf (with a little olive oil if needed) until soft and fragrant. Add the tomatoes, pureed beans, and broth. Simmer for 20 minutes. Saucy.

Add the pasta and simmer for another 20 minutes until pasta is cooked through as sauce is reduced. Throw in the baby spinach and the chicken sausage from step one. If needed, add water or broth to adjust the consistency of the pasta before serving. Top with cheese.

Save some for lunch tomorrow. It makes awesome leftovers.

Your schedule sounds crazy.  Exciting times though.  Now chicken sausage is definitely something we don't have in the UK but I'm thinking that the recipe would still work well without it. Also if your ever up for some gardening San Marzano tomatoes are wonderful to grow.

A simple weekend braised beef rage that is perfect for a warming Sunday supper. Just set it up and let it slowly simmer all day until the meat is fall-apart tender. It’s seriously the most comforting meal!

Weekend Braised Beef Ragu with Pappardelle

medium onion, chopped finely

EACH: tomato paste AND balsamic vinegar

(28-ounce can) crushed tomatoes

rind (optional)

bay leaves thyme

basil (a handful or so, no need to be exact)

pappardelle, parsley, and parmesan cheese

Season the chuck roast pieces with salt and pepper all over. Heat the oil in a large, dutch oven over medium high heat. Add the beef into the pot and allow it to sear on each side for roughly 5-7 minutes or until browned, remove the beef to a plate. Add another drizzle of oil if the pan needs it. Saute the onions for 4-5 minutes or until translucent, stirring as needed so that they don't burn. Add the garlic and let cook for another 1-2 minutes. Add the tomato paste and allow it to cook, stirring frequently for 1 minute.

STOVE TOP: Deglaze the pan with beef broth. Scraping with a wooden spoon to loosen anything that might be stuck on. Add the balsamic vinegar, crushed tomatoes, diced tomatoes, parmesan rind, bay leaves, fresh thyme, basil, sugar, and red pepper flakes. Allow the sauce to gain a simmer, stir once. Cover and lower the heat to the lowest setting and let cook for 2 ½ - 5 hours or until the meat easily shreds with two forks. You may need to add a splash of water or broth if too much evaporates or if your beef is taking longer to cook. Mine took about 3 hours to get the meat to just fall apart. I shredded the beef and then let it simmer for another 10-15 minutes in the sauce. Season with salt to taste. Feel free to skim any excess fat off the top and remove the parmesan rind, bay leaves, and basil leaves before serving. Serve over pappardelle with a sprinkle of parsley and freshly grated parmesan.

SLOW COOKER: Transfer the meat, sauteed onions, garlic, and tomato mixture to a slow cooker. Add all the remaining ingredients to the slow cooker (except those for serving.) Cover and let cook on the low setting for 6-8 hours. Check for doneness around 6 hours, using two forks to shred the meat. You'll know it's done when it falls apart easily. Season with salt to taste. Feel free to skim any excess fat off the top and remove the parmesan rind, bay leaves, and basil leaves before serving. Serve over pappardelle with a sprinkle of parsley and freshly grated parmesan.

Make the Tomato Soup

Put the tomatoes, butter, and onion in a large saucepan or Dutch oven. Bring it up to a low bubble, then turn the heat to medium low. Cover partially with a lid; let it simmer for 45 minutes. Stir every 15 minutes or so to prevent scorching on the bottom.

Remove Onion Chunks

Remove the onion pieces using tongs. I leave the garlic in there, but that&#8217;s up to you!

Blend the Tomato Soup

Using an immersion blender, blend up the soup until it&#8217;s a smooth as you want it. Taste and adjust; you can thin it out with milk, water, broth, cream, whatever you want; I just leave it as-is!

Serve: 

Serve tomato soup with garlic bread, grilled cheese, croutons, crackers, pesto, whatever you like!

Delicious and very rich! I made a double batch in my instant pot so I can freeze half for another time. After reading Lindsay's note about it not being quite as good in the IP, I decided to give the onions and garlic a few minutes of saute time with the butter before I added the tomatoes. 
Served with fresh warm bread and pesto, and a few of us added some mozzarella pearls and chili flakes to the soup. Will definitely make this one again!

I used onion powder and garlic powder since I didn't have any fresh ingredients and it turned out great in the Instant Pot.  The hardest part was waiting for it to cool down so we could eat it!!

I made this tonight (with the house garlic bread for dipping) and it was great! I did everything as listed on the recipe (except maybe shaved a few minutes off the simmering time ... other than that part of it, very much in the spirit of SOS, which I love!). So nice on a chilly night.

Not only is this recipe easy, it tastes amazing! I’ve made this twice already this fall. Since we had leftover fresh herbs from thanksgiving, we tossed in thyme and basil, which I took out with the onion. Also added some vegetable broth and a splash of cream at the end. Homemade Italian Marinara Sauce Recipe

San Marzano Tomatoes (whole tomatoes, undrained)

extra virgin olive oil

sweet onion (diced (to save time

garlic (minced,

kosher salt (to taste)

red pepper flakes ((optional) use less if preferred)

water (to rinse out the cans)

Heat oil and saute onions

Heat a large high-sided skillet over medium heat, add olive oil. Once it’s shimmering, add the diced onion and saute for about 5-7 minutes, reduce the heat to medium-low (careful not to burn).

Hand crush tomatoes

While onions are sauteing, pour tomatoes into a large bowl and crush using your hands. Pour 1 cup of water into the cans, swirling around to get all of those tomato juices, set aside.

Add garlic, tomatoes

Stir in the garlic, as soon as it’s sizzling, add the hand-crushed tomatoes (do not let the garlic brown) this is what causes bitterness. Then add reserved tomato water.

Stir in spices and herbs.

Stir in salt, red pepper flakes, stirring to combine. Place the basil sprig on top of the sauce (including the stem), once it wilts, submerge in the sauce.

Simmer sauce

Simmer, uncovered for at least 15 minutes, until thickened. It should be slightly reduced and somewhat thickened. For a thicker sauce, continue to cook for up to 60 minutes. Taste, adding additional salt if needed.
