Pan Fried Potatoes with Herbs are buttery, savory, and make for a great weeknight dinner side. They take under 30 minutes to make and pair well with just about everything. All you need are waxy potatoes, herbs, garlic, salt, and olive oil to make this one-pan side dish.

Toss potatoes - In a mixing bowl, toss the potatoes in 2 tablespoons of olive oil, salt, and pepper. 

Cook garlic - Heat a skillet on medium heat and add the remaining 1 tablespoons of olive oil. Once the olive oil heats, add garlic and cook until fragrant, about 1 minute. 

Pan-fry potatoes - Add the potatoes to the pan and cover the skillet with a lid. Cook the potatoes for about 12-15 minutes until tender on the inside, stirring halfway through.

Make potatoes crispy - Remove the lid and turn the heat up to medium-high. Cook the potatoes for an additional 5 minutes, or until the potatoes become golden and crispy. 

Season potatoes and serve - Remove from heat and toss with herbs. Serve warm if eating as a side or at room temperature if serving as a salad topping.

In a large skillet on medium-high heat, add olive oil and the cubed potatoes. Cover and gently stir until golden brown, about 6 minutes.

Add in the onions and green peppers and let simmer for another 2-3 minutes.

Then add in the cubed tomatoes, bouillon cube, salt and pepper. Mix, cover, and simmer for 10 minutes.

These crispy sauteed potatoes are a fantastic potato side dish that you can make on the stove top. Pan fried potatoes are easy to make, and the seasoning can be varied endlessly.

Wash the potatoes, and dice them into 1/2-inch thick cubes.

Heat up olive oil in a frying pan over medium heat.

Add the potatoes to the frying pan, along with the seasoning. Stir to coat the potatoes evenly with oil and spices.

Cover the potatoes with a lid or aluminum foil. Leave them to cook for about 5-10 minutes, or until they are golden brown on the bottom.

Flip the potatoes, and allow them to fry until they are golden on the other side, and soft enough to easily pierce with a fork, about 5-10 minutes.

Serve the sauteed potatoes immediately while they are warm and crispy.

Fried Potatoes and Onions - Easy Southern Fried Potatoes and Onions Recipe

medium Russet potatoes (peeled)

Heat

Heat oil in a sauté pan or cast-iron skillet over medium-high heat.

Slice

Slice onions and potatoes to ¼-inch thick.

Carefully add potatoes and onions to hot oil.  Season with salt and pepper. Add garlic powder and red pepper flakes.

Cook

Cook, stirring often, until potatoes and onions are well browned and tender, about 10-15 minutes. If desired, cover skillet to help with cooking and produce a creamier texture.

Drain

Transfer to a plate lined with paper towels to drain the excess oil for a few minutes, top with chives, and serve!

This quick and easy recipe combines savory soy sauce marinated chicken with crispy boiled potatoes, finished off with a delicious buttery sauce and fresh parsley garnish perfect for a comforting weeknight meal.

Cowboy Butter Chicken and Potatoes Recipe

½ pounds boneless, skinless chicken breasts, cut into vertical strips (about ½ – ¾ inch thick)

¼ cup (64 g) soy sauce

(54 g) extra virgin olive oil, divided

black pepper

baby potatoes, halved

Marinate Chicken

In a large bowl, combine the chicken strips with 1 tablespoon of olive oil, soy sauce, kosher salt, and black pepper. Mix well to coat evenly and set aside while preparing the potatoes to allow the flavors to infuse.

Boil Potatoes

Bring a large pot of salted water to a boil. Add the halved or quartered baby potatoes and cook for 8-10 minutes until they are just tender when pierced with a fork. Drain the potatoes thoroughly and set aside.

Sauté Potatoes

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the boiled potatoes in a single layer, cooking for 4-5 minutes and flipping halfway through until the potatoes turn golden brown and are fork-tender. Cook Chicken

In the same skillet, add the remaining 2 tablespoons of olive oil over medium-high heat. Once hot, add the marinated chicken strips in a single layer, taking care not to overcrowd the pan; cook in batches if needed. Sear the chicken for 1-2 minutes per side until nicely browned and cooked through to an internal temperature of 165°F (74°C). Reserve the marinade for later use.

Reduce Marinade

Pour the reserved marinade into the skillet with the chicken. Allow it to cook and reduce by half over 1-2 minutes, intensifying the flavor and creating a savory sauce.

Toss with Potatoes and Butter
