Savory Cottage Cheese Bowl

low fat cottage cheese (I like Good Culture)

chives scallion greens (divided)

black pepper

Persian cucumbers

½ medium bell pepper

grape tomatoes

chopped (roasted shelled pistachios)

Kosher salt

In a small bowl, combine cottage cheese with 1 tablespoon chives and pepper, to taste.

Layer cucumbers, peppers and tomatoes on top then garnish with remaining 1 tablespoon chives and pistachios.

Sprinkle with a pinch of salt and pepper, to taste.

High-Protein Cottage Cheese Veggie Dip with Za’atar

cheese

mini bell peppers (red yellow and orange)

mini cucumbers (sliced in quarters or halved)

radishes (quartered or veggies of your choice)

extra virgin olive oil

dill (plus more for garnish)

Za’atar

Combine cottage cheese and dill in a small bowl, drizzle with olive oil and top with Za’atar and fresh dill.

Place on a plate or small platter with cut up fresh veggies.

Perfect light dinner after a catered work lunch!  I love savory cottage cheese.

I have this all the time.  I put mine in the mini food processor and whipped smooth.  Everyone kept asking what kind of dip did you make.  I top with Trader Joe’s green goddess seasoning .

Greek Cottage Cheese Bowl

2% cottage cheese

dill (divided)

cherry tomatoes (quartered)

mini cucumbers

fresh yellow or orange bell pepper

salt and black pepper

Kalamata olives

feta

Extra-virgin olive oil (optional for drizzling)

In a small bowl mix the cottage cheese and half of the fresh dill.

Pour into a bowl.

Top with cherry tomatoes, cucumbers and bell peppers; season with pinch of salt and pepper.

Add olives, feta, and remaining fresh dill. Drizzle with olive oil if desired.

Just made this and it was delicious! I didn’t have dill but it was still so good. I did drizzle with the EVOO and I think that made it so tasty.  Instead of salt and pepper, I sprinkled with everything bagel seasoning.

Can't believe I never thought of this! I love savory flavors with cottage cheese. I didn't have cucumber but I used avocado in its place and it was perfect!

Absolutely addicted to this dish - simple, quick, filling, low carb,high protein AND delicious! Been experimenting with additional add-ins like edamame and avocado just as I had them to use up yet rest assured the recipe is pure perfection as is!

This was so savory and delicious, highly recommend!  The combination of feta and cottage cheese and olives is so refreshing and savory.  I made it for lunch, it was very filling.  Easy and felt like a treat yet I had everything on hand.

Delicious! I'm an avowed cottage cheese anti-fan and this won me over. I'm not sure if it's because I used Gina's recommended brand (and noticed that the curds are smaller than I'm used to) or because of the variety of toppings, but I was happily surprised. So creamy, easy, quick and filling on a very hot day in Seattle. A keeper!
