<em>Tired of sweet? This Savory Oatmeal is packed with flavor and is a perfect way to start your day.  Easily customizable, it's perfect for a quick breakfast or Meal-Prep! </em>

Savory Golden Oatmeal

Garlic,

Carrot, grated

tbsp Roasted Red Peppers, diced

tsp Turmeric

tbsp Fresh Herbs

tbsp Vegan Cream Cheese (I use Kite Hill)

Low-Sodium Vegetable Broth

Salt and Blak Pepper,

First, add a small splash of Vegetable Broth to a medium sized pot; add the minced Garlic and sauté over Medium, until translucent.

Add in another splash of Vegetable Broth,  and then add the Carrot, Roasted Red Pepper, Fresh Herbs and Turmeric. Let cook for another 2-3 minutes. Stir in the Cream Cheese into the mixture until it is evenly incorporated.

Next, add the Oats and Remaining Vegetable Stock to the pot. Increase the heat to high until the mixture starts to boil, then bring it back to medium heat and cook until your desired consistency is reached, stirring frequently.

Transfer the mixture to a bowl and top with additional Herbs, Vegetables, and/or a drizzle of Nut Butter. Enjoy warm.

My best savory oatmeal experience thus far! Had fun improvising with what I had on hand—used dried rosemary instead of fresh herbs, omitted roasted red pepper, and water instead of broth but added a tbsp of soy free soy sauce to keep umami/depth and I used the tahini/acv substitution. Outcome was great and I think it would pair really well with some fried oyster mushrooms on top. Thanks, Caitlin!

Breakfast Hash Browns and Veggie Skillet -&nbsp; a homemade version of my favorite restaurant breakfast! Crispy seasoned hash browns and sautéed vegetables topped with creamy avocado and spicy salsa. Served up with a side of toast and a bottomless cup of coffee, it's breakfast perfection!

Breakfast Hash Browns and Veggie Skillet

potatoes

olive oil

salt (or

paprika

black pepper (or

onion

oregano

garlic

green bell pepper

red bell pepper

zucchini (chopped)

mushrooms

grape tomatoes (halved)

spinach

avocados (peeled, pitted, and sliced)

salsa (your favorite)

cilantro (optional)

Cook the frozen diced potatoes according to package directions, using oil if the directions call for it. Sprinkle with the salt, pepper, and paprika, and stir.&nbsp;

For the Breakfast Hash Browns

Meanwhile, heat the olive oil in a skillet over medium heat. Add the onion and sauté 5 to 6 minutes until translucent.

Add the garlic, oregano, salt, and pepper, and cook 1 minute.

Add the peppers, zucchini, mushrooms, and tomatoes. Sauté 4 to 5 minutes until the vegetables start to become tender.

Add the spinach, stir, and cook through 2 to 3 minutes until slightly wilted.&nbsp;

For the Skillet Veggies

Plate the hash browns and veggies with avocado slices and salsa on the side. Sprinkle with chopped cilantro, if using.

To Serve

This savory breakfast bowl makes a healthy, balanced option for a plant-based breakfast. It contains healthy fats, complex carbohydrates and protein to cover all your macronutrients and it's full of flavour and nutrition. Try making it ahead of time for healthy breakfasts all week.

Savory Vegan Breakfast Bowl

serving medium or firm tofu, crumbled

turmeric

salt and pepper

dash or soy sauce

water

white onions

avocado

salsa

brown rice

In a small dish, mix up the tofu scramble ingredients then set aside. If you&#8217;re only making one serving, I&#8217;d recommend mixing it up in a dish before cooking. If you&#8217;re making a whole package of tofu, you can add everything right into the pan as it&#8217;s easier to mix.

Next, cook the kale, mushrooms and onions. To make them, add them to a skillet over medium-high heat with either a splash of water or 1/2 tsp olive or avocado oil. Cook for 5-8 minutes until tender and browned. Don&#8217;t stir too often in order to let them brown. Once they&#8217;re cooked, scoop into a bowl.

In the same pan, add the tofu mixture and cook for 5 minutes until heated through and starting to brown. Alternatively, you can just add the tofu scramble mixture to the kale and mushrooms as they cook and serve it all mixed up.

To assemble the breakfast bowls, add the tofu scramble to the bowl with the kale mixture then add brown rice, avocado and salsa. Serve right away or pack up for meal prep.

I'm trying to eat more veggies for breakfast so this was perfect! I prep a big batch of tofu scramble and brown rice, and chop the veggies on the weekend so it's super quick to make during the week.
