A fresh take on your traditional waffle, these savory Crispy Cheddar Cornbread Waffles are the perfect vehicle for chili, and so much fun to eat!

Crispy Cheddar Cornbread Waffles

all purpose flour

yellow cornmeal

tsp sugar

tsp baking powder

tsp baking soda

salt

buttermilk

eggs

butter

cheddar cheese (shredded)

chunky chili

sour cream

extra cheddar

cilantro

Whisk together the dry ingredients.

In a smaller bowl, whisk together the buttermilk and eggs.&nbsp;

Add the wet ingredients to the dry, folding together until just combined. Don't over mix -the batter should be shaggy, vs smooth.

Add in the melted butter, and cheese, folding together gently. Again - don't over mix!!

Heat your waffle maker. I like to use a high setting (but yours may be different - keep an eye on it!)

Grease the waffle maker, then add around 3/4 cup of batter for large Belgian style waffles. Use 1/2 cup for the flatter, less deep waffle irons.

Cook until browned and crispy.

Top with hot chili, sour cream, extra cheese and a little cilantro.

Devour!

The waffle maker is an excellent tool to not only make delicious sweet waffles that are more of a dessert, like Belgian waffles, but can be used for delicious savory meals too, like these incredible Potato Waffles. They taste very similar to potato pancakes or latkes but are thicker and have a crisp, golden crust that the waffle maker creates.

Potato Waffles

lbs potatoes (about 6 medium potatoes),

onion,

black pepper

egg, beaten

Tablespoons all purpose flour

Grate the potatoes and onion on a box grater, most of the potatoes on the medium holes of the box grater and 1/4 of the potatoes on the small holes of the box grater. 

In a large bowl, combine the potatoes, onion, 1 teaspoon salt, ground black pepper, egg, and flour until evenly mixed. Remove excess liquid from that settles at the top of the bowl with a large spoon. 

Spoon 1/4 of the potato mixture into the preheated waffle iron, close and cook until golden and crisp on the outside, 5-8 minutes. You should have about 4 waffles total, if you use a Belgian waffle maker. 

Serve the potato waffles hot, with butter, sour cream and green onions.

I made this recipe yesterday &amp; today but yesterday, I substituted the egg with a mashed banana &amp; today, I substituted with baking powder &amp; white distilled vinegar &amp; they were delicious!

Thank you Olga for sharing this amazing recipe! I tried it worked very well, I have added some oregano and cheddar with a little if pesto sauce and gave very nice taste.

Hi Olga, i found your recipe and tried tonight with BBQ lamb.  We used 3 potatoes and the rest of your ingredients… just the 2 of us these days.  For a first timer, it turned out great!   We will look tor recipe mods that add a bit more kick to it (yeah, i did put catchup and more salt on it for that FF taste!).  And your video was the thing that showed me that making it was very possible… Nice job!.  Jim

These savory waffles filled with spinach, ham, and cheddar cheese make a quick breakfast for a busy morning. The addition of whole wheat flour makes these crispy waffles more wholesome and hearty.  Makes 4 waffles

Savory Waffles with Spinach, Ham, and Cheese

baby spinach (roughly chopped)

deli ham (roughly sliced)

cheddar cheese

all-purpose flour

whole wheat flour

garlic powder

milk

tbsp butter

oil spray

Preheat the waffle iron to medium to medium-dark setting.

In a large mixing bowl, combine spinach, deli ham slices, and cheddar cheese. Add the flours, baking powder, garlic powder, and salt. Toss together roughly with kitchen tongs.

Pour in milk and melted butter and toss everything with kitchen tongs to moisten. The batter will be on the thick side. Add more milk if you prefer a looser batter—but this is not a batter that you pour.

Oil spray the hot waffle iron if needed. Put a fourth of the waffle batter on the hot waffle iron and close the lid (Flip it upside down if your waffle iron has the feature). Cook until golden and crisp. (Waffle irons vary in cooking time, so adjust the time accordingly.)

Gently take the waffle out of the iron and place on a wired rack. Serve the waffles with sour cream and hot sauce or other favorite topping.

To keep these waffles warm, keep them in a warm 175˚F oven while you cook the next one. Make sure to place the waffles on a wire rack to prevent them from getting soggy.

Great recipe! I made these for my 18 month old and he loves it! Although, I didn't have ham, but it still tasted great. I also added some mushroom powder for extra nutrients for the lil one Thank you!

These waffles sound great. Can't wait to try them for a savory supper with eggs. I have to lower the sodium count for 2 family members with health issues, so I want to replace the ham.  Would it work to add chopped mushtrooms?  I haven't tried using fresh mushrooms in a waffle iron.

Easy to make and deliciously savory!  This is the first time I used a waffle iron and so I didn't really know the outcome....the irons were definately HOT and browned a bit more than yours, but they turned out amazing!  I think this is a great recipe to subsitute left over deli meats and cheeses (plus supergreens)....roast beef (w/horseradish) &amp; cheddar, turkey (with dry ranch dressing) &amp; swiss, pepperoni &amp; provolone, and sausage &amp; jack.  So many choices! PS - I didn't have spray, so I basted the irons with avocado oil.

These Savory Waffles by Chef Capon have cheddar, bacon, and scallions as the star ingredients. They are a total treat for brunch!

Bacon Cheddar Savory Waffles

all-purpose flour ((10 oz by weight))

sugar

tbsp baking powder

eggs (separated)

unsalted butter (melted)

bacon

2.5 oz grated cheddar cheese

scallions (chopped)

Preheat your waffle iron. Mine only has one setting anyway, but you want the iron to be pretty hot.

Preheat the oven to 200 degrees F.

In a large bowl, whisk to combine the flour, sugar, salt and baking powder. Set aside.

In another bowl, whisk to combine the egg yolks, milk, and butter. Set aside.

In a large (and very clean) bowl, use a hand mixer to whip the egg whites to soft peaks.

Add the wet ingredients to the dry, and mix until they are almost combined. Add the egg whites, bacon, cheese, and scallions to the bowl, and gently fold them in until combined.

Portion the batter into your waffle iron (the amount will vary by waffle iron, but I use about one cup per waffle), and cook for approximately 5 minutes, until golden brown.

When the waffle has finished cooking, place directly on the wire rack in the oven, to let the steam escape. Finish cooking the remaining waffles, and enjoy!

Really has great potential, but next time we will omit sugar. It was too sweet. We also added basil in the batter. It was a good Father's Day breakfast!! Thank you :)

I've made these twice now, without sugar and they are delicious! I used ranch mixed with hot sauce as a topping and added a fried egg. My favorite brunch meal now.

a bit sweet to be considered savory but still tasty

A lovely recipe but the sugar is really not needed. I wondered when I was making them why I was adding sugar to a savoury recipe and they do taste sweet. Without the sugar the combination is delicious. I followed the tip about popping them in the oven after the 5 minutes cooking time and it did help to crisp them up.

I made these using my oat waffle recipe and its sooo amazing! I added spinach and jalapeños.

Waaaaay too much sugar in these but otherwise a nice mix. The oven at the end is a great improvement to all my waffles now.

I added a tsp of cayenne.
I make my Buttermilk Syrup and the cayenne added to the waffles, marries the 2 together..Thank you for this recipe!! I also add a 1/2 cup powdered milk..it gives it a little xtra plush!!!

I cut the sugar to 3 T. I serve them with my cayenne buttermilk syrup

Thank you so much. What I love about this recipe, I can bake the waffles ahead of time and then reheat in my waffle maker. I follow it to the T, I will add different items, ex.cheeses, savory peppers, sundried toms, ect...

The recipe was great but in my opinion too sweet for savory waffles, and they come out not very crispy so you definitely need to leave them in the oven for a bit, very nice you added that tip. I think most American recipes are delicious but sometimes overly sweet, I would use at least half the amount of sugar, but if you like super sweet, leave it as is :)

Unexpectedly sweeter than I imagined, couldn’t taste much of the bacon or cheddar.  Good but not what I was expecting.   So e folks ate with salsa, others had syrup,  it good plain.  

These waffles are incredible!!! Made them for Fathers Day breakfast, and they were a huge hit! Love the tip about crisping in the oven after making. They are an excellent balance of sweet and savory , salty goodness. We also sprinkled extra cheese on top of the batter before cooking the waffle, and it added a crispy cheesiness to the top that was even better!! Thanks for this recipe!!!

These have to be THE BEST waffles I have ever made One thing I found was mixing the melted butter with cold milk caused the butter to harden which didn't cause any problems but I think when I make them again, I will warm the milk up a bit.
