These Crispy Fish Tacos topped off with a homemade Grilled Corn Salsa are perfect for your next Taco Tuesday, picnic, or backyard gathering. They are easy to make and some of the freshest tacos you'll ever make.

Crispy Fish Tacos with Grilled Corn Salsa

sparkling water

flour tortillas,

cod fish fillet,

all-purpose flour

cornstarch

organic egg

oz cherry tomatoes, halved

red onion, chopped

Grill corn on the cob for 3 to 5 minutes per side or until slightly charred.

Remove corn kernels from the cob and place in a large bowl along with red onion, tomatoes, 1/2 tsp salt, 1/2 tsp black pepper, cilantro leaves, and avocado. Squeeze lime juice over ingredients and mix.

Cut fish filets into large chunks and season evenly with 1/2 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder.

Whisk (paid link) flour, cornstarch, egg, and 1/2 tsp garlic powder in a large bowl. Slowly pour in Mountain Valley Sparkling Water. Lightly stir until combined.

Heat skillet at medium-high heat and add an inch of cooking oil. Dip fish in the batter and fry for 3 minutes per side.

Serve with soft tortilla shells and shredded cabbage. Top with corn salsa.

Grilled Shrimp Tacos

lb large raw shrimp (large shrimp,)

corn tortillas (you can also use flour tortillas)

cabbage mix

Cilantro (optional)

In large bowl, combine seasoning, oil, garlic, and lime juice.  Add shrimp and stir to coat.  Tails can be removed before or after cooking.

Thread shrimp onto skewers (if using wooden please soak them for at least 30 minutes first) if desired or place directly in grill pan or grill basket on outdoor grill.

Heat to medium temperature and cook shrimp about 2-3 minutes on each side.  You’ll know they are done when they are opaque and start to turn pink.

Warm tortillas in a pan, directly on grill, or over flame of gas stove (optional).

Fill each tortilla with cabbage mix, avocado slices, and shrimp.  Top with cotija cheese, a squeeze of lime, a drizzle of ranch dressing, and cilantro (optional).

Crispy Air Fryer Fish Tacos

Preheat are fryer for five minutes at 380 degrees.

Add the panko, garlic powder, chili powder, onion powder, cumin, salt, and black pepper to a shallow dish or bowl. Stir to combine.

Add egg and water to another shallow dish or bowl. Whisk to combine.

Pat fish dry with paper towels. Use a sharp knife to cut the fish into four 1x4 pieces. Sprinkle with salt and pepper.

Dip each piece of fish into the egg. Let the excess drip off. Coat in the bread crumbs. Use your fingers to make sure the breadcrumbs are pressed into the fish. Repeat with remaining fish.

Add half of the fish to the air fryer. Spray the top generously with olive oil spray. Cook for 4 minutes. Pull the tray out and flip the fish over. Spray with olive oil spray. Cook another 2 minutes until golden brown and crispy. Wipe the bottom of the air fryer clean after each batch. It&#039;s super quick and easy and prevents the fish from burning later on. Repeat with remaining half of the fish.

While the fish cook. Add the lime juice, honey, garlic, salt, cumin, chili powder, and olive oil to a medium bowl. Whisk to combine. Add the cabbage, jalapeño, pineapple, cilantro, and red onion. Toss until coated in the dressing. Season to taste with salt and pepper.

Warm tortillas in the microwave. If desired, char the tortillas over an open flame.

Add a little bit of slaw to each tortilla. Top with a piece of fish. Cover with more slaw. Serve with sour cream and a squeeze of lime juice.

If using frozen shrimp, defrost first

In a bowl, soak the shrimp in buttermilk for 10-15 minutes while you prepare the other ingredients.

In a separate bowl, mix the cornstarch, panko breadcrumbs, paprika, garlic powder, cayenne pepper, salt, and pepper.

Remove the shrimp from the buttermilk, letting any excess drip off, then coat them in the breadcrumb mixture.

Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.

In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey or sugar until smooth.

Warm the tortillas by wrapping them in foil and placing them in a warm oven.

Add a layer of shredded cabbage to each tortilla, followed by the crispy shrimp. Drizzle generously with bang bang sauce.

Top with chopped cilantro, a squeeze of fresh lime, and any optional toppings you like. Serve immediately with extra lime wedges on the side.
