Secret Sauce Cauliflower Curry

Ounces Cauliflower florets

Cups Butternut squash cubes

Medium Onion diced

Cloves Garlic

﻿﻿﻿Preheat a 5qt or larger stock pot or dutch oven on the stovetop.

﻿﻿Add the diced onion and garlic to the hot pan to brown over medium heat.

﻿﻿Add a few splashes of water to the pan to deglaze the bottom and saute the onions and garlic until onions are translucent.

Add the remaining ingredients into the pan.

Stir well to combine and simmer on medium heat for 30 minutes.

Serve with brown rice, quinoa or barley and garnish with optional garnishes.

Bacon Cheeseburger with Secret Sauce

lb turkey ((I use organic Fulton Farms*))

salt

pepper

white onion, sliced thin

olive oil spray

Tbsp non-fat Greek yogurt ((45 g))

Tbsp pickle juice ((45 g))

Tbsp sweet relish ((30 grams, or dill if you hate it!)*)

Tbsp honey mustard ((7 g, feel free to use yellow mustard instead*))

Tbsp ketchup ((7 g))

brioche hamburger bun*

Tbsp burger sauce ((30 grams))

turkey burger

cheddar ((14 g))

Tbsp Caramelized onions ((15 g))

bacon, cooked*

lettuce

tomato slices ((50 g))

sliced pickles

Weigh and season the meat.

Weigh the meat into 4 oz balls and place them on a plate or sheet pan. Season the balls liberally with a thick pinch of kosher salt, a good sprinkle of garlic powder, and a few cracks of pepper.

Cook the patties.

Heat a heavy-bottomed pan to high heat. Spray with a light mist of avocado oil spray. Carefully smash the meat flat, then add the patties to the pan, seasoned-side down. Season the uncooked tops while they cook for about 2-3 minutes, then flip, add sliced cheese, and cook the other side for a couple of minutes to cook through.

Caramelize the onions.

To caramelize the onions, add sliced onion to a hot pan, spray with a mist of olive oil spray, and sprinkle with kosher salt. Cook hot for a minute or two and then turn it down to medium and cook for 15-20 minutes stirring occasionally until soft and sweet.

Make the burger sauce.

Make the burger sauce by stirring together your Greek yogurt (reduced fat mayo is great too for just a few more fats), pickle juice, relish, honey mustard, and ketchup. Set aside.

Assemble and enjoy.

Spray the buns with olive oil spray and toast on a skillet. Top the bottom bun with 2 Tbsp of the burger sauce, then build your burger topped with lettuce, tomato, 1 slice of bacon, caramelized onions, and sliced pickles. Dig in!
