Recipe video above. One batter magically transforms into a warm butterscotch pudding with PLENTY of butterscotch sauce bubbling underneath! This pudding has terrific butterscotch flavour from the dark brown sugar as well as the golden syrup (see recipe for subs).

Self Saucing Butterscotch Pudding

(50 grams) dark brown sugar (, packed (Note 1))

(185 grams) plain flour ((all purpose flour))

2.5 tsp baking powder

/ 7 tbsp unsalted butter (, melted)

(125 milliliters) milk ((full

golden syrup ((Note 2))

(150 grams) dark brown sugar (, packed (Note 2))

tbsp cornflour / corn starch

(500 milliliters) boiling water

Vanilla ice cream

Preheat oven to 180°C/350°F (160°C fan).

Grease a 6 cup baking dish (1.6L/1.6Q) with butter.

Butterscotch Sauce: Whisk sugar and cornflour in bowl. Set aside.

Pudding batter: Place sugar, flour and baking powder in a separate bowl. Whisk to combine.

Add butter, egg, milk and golden syrup. Whisk until mostly lump free.

Scrape into baking dish and smooth surface.

Sprinkle Butterscotch Sauce sugar mixture all over surface.

Pour boiling water over the surface over the back of a dessert spoon held as close to the batter as you can (to soften the pour so it doesn't break the surface of the batter).

Transfer to oven, bake 40 minutes or until skewer inserted into the cake part comes out clean.

Cut through pudding to reveal butterscotch sauce underneath.

To serve, scoop pudding into a bowl then douse with butterscotch sauce. Top with ice cream!

Our simple butterscotch self saucing pudding is the ultimate winter comfort food. A soft and fluffy sponge pudding covered with sweet and rich butterscotch sauce. 

Butterscotch Self Saucing Pudding

(50 grams) brown sugar

(190 grams) self raising flour

butter

(125 grams) milk

golden syrup

(100 grams) brown sugar (for sprinkling)

tbs cornflour

(375 grams) boiling water

Preheat oven to 160 degrees celsius fan-forced (180 degrees celsius conventional). Grease a large 6 cup capacity (1.6 litre) baking dish and set aside. 

Place the brown sugar, self raising flour, melted butter, egg, milk and golden syrup into a bowl and mix until well combined. Pour into the prepared dish.&nbsp;

Mix the remaining brown sugar and the cornflour together and sprinkle over the pudding base.&nbsp;

Carefully pour the boiling water over the top (see notes).

Bake in the oven for 40 minutes or until the top is golden and firm to the touch.&nbsp;

Serve with ice-cream or custard.&nbsp;

Conventional Method

Place the brown sugar, self raising flour, melted butter, egg, milk and golden syrup into the Thermomix bowl and mix together on Speed 5, 20 seconds or until well combined.

Pour into the prepared dish. 

In a clean Thermomix bowl, mix the brown sugar and cornflour together on Speed 6, 10 seconds.

Sprinkle over the pudding base. Carefully pour the boiling water over the top. 

Bake in the oven for 40 minutes or until the top is golden and firm to the touch. 

Serve with ice-cream or custard.

Easy Butterscotch Self Saucing Pudding

Think self-saucing chocolate but oh-so much better – a spongey pudding cooked in a thick chocolatey sauce with surprise pockets of part-melted Daim bars. We recommend serving with lashings of double cream or generous scoops of vanilla ice cream.

You’ll also need…

1.5 litre ovenproof baking dish, greased with butter

Heat the oven to 170°C/150°C fan/gas 3½. In a medium saucepan, gently heat the butter and caster sugar, until the sugar has dissolved into the melted butter. Turn off the heat and add the milk.

Sift the cocoa powder and flour into a large mixing bowl. Make a well in the middle and pour in the milk mixture and the beaten eggs. Whisk to make a smooth thick batter. Pour the batter into the prepared baking dish.

For the sauce, mix together the cocoa powder and sugar in a small bowl, then pour over the boiling water and stir until the sugar dissolves. Pour the sauce evenly over the top of the cake batter, then press in the Daim pieces. Put the baking dish on a shallow oven tray (to catch any drips and prevent the bottom from overcooking) and bake for 30 minutes. Remove from the oven and leave to stand for 5 minutes before serving with cream or ice cream.

This oozy, decadent self-saucing pudding is the ultimate winter dessert.

Chocolate Self Saucing Pudding recipe. The BEST self-saucing recipe in my opinion! This Chocolate self-saucing Pudding recipe results in a soft and fluffy chocolate cake with lots of ooey gooey, rich chocolate sauce.

Chocolate Self-Saucing Pudding

Cup Butter ((55 grams))

Cup Milk

tsp Vanilla Extract

Cup Sugar ((100 grams))

Cup All Purpose Flour ((125 grams))

tsp Baking Powder

Tbsp. Cocoa ((7 grams))

Salt

Cup Brown Sugar ((100 grams))

1 and 1/2 Cups Boiling Water

Preheat the oven to 180°C (350°F) and grease a 20cm baking round baking dish.

Melt the butter, milk and vanilla extract in a saucepan on a low heat until the butter melts.

In a bowl mix the sugar, flour, baking powder, cocoa and salt together.

Pour over the wet ingredients and mix all together until just combined.

Pour into the prepared dish.

In a small bowl mix the brown sugar and coca together and sprinkle in a layer over the chocolate mixture.

Pour over the boiling water (I pour mine over the back of a spoon to stop the water pushing the brown sugar mixture to one side).

Place in the oven for 30-35 minutes. The top will be set but underneath will still be bubbly and liquid.

I have been making this pudding for years and we never get sick of it. Team it with some good vanilla ice cream and a dollop of cream and you have wonderful heartwarming food. Fantastic for those cold winter nights.

Introducing an incredibly moist banana cake that makes its own cinnamon caramel sauce! This self-saucing banana pudding is super moist, cinnamony, and packed with banana flavor.

Self-Saucing Banana Pudding Cake

oat flour

almond flour

coconut sugar

baking powder

tsp baking soda

cinnamon

almond milk

tbsp melted coconut oil

Preheat the oven to 350 °F (175°C).

Whisk together the dry ingredients. In a large bowl, whisk together the oat flour, almond flour, coconut sugar, baking powder, baking soda, cinnamon, and salt.

Mash the bananas. Using a fork, mash the bananas until smooth. Alternatively, you can add the bananas to a blender and blend until smooth. I generally use 2 and 1/2 bananas but the exact amount will depend on the size of your bananas. You want to end up with 1 cup of mashed bananas.

Incorporate the wet ingredients. Add the mashed bananas, almond milk, melted coconut oil, and vanilla to the dry ingredients. Mix until well combined using a wooden spoon. The batter will be thick. It is normal.

Transfer to a baking dish. Transfer the batter to a 10×7-inch baking dish and spread it into an even layer using a spoon. Set aside.

Make the sauce. In a small saucepan, warm the water over medium heat. Once warm, remove from the heat and add the coconut sugar. Whisk until the sugar is fully dissolved. Note: if the sugar has trouble dissolving, place the saucepan back on the heat for a few minutes.

Pour it over the batter. Slowly pour the coconut sugar water over the pudding batter. I recommend pouring it over the back of a spoon. This way you won’t make holes in the batter and distribute it more evenly. Note: It will look a bit messy at first, with the sauce floating on top of the cake, but as it bakes, the cake will rise, and a sauce will form at the bottom.

Bake. Bake for 22-25 minutes, or until the top looks cooked. Remove from the oven and allow the pudding to cool for 5-10 minutes before serving. You will end up with a moist banana cake with a thick sauce at the bottom!

You can store this pudding for up to 5 days in the refrigerator.

I love this pudding. The best part is that, despite being gluten-free, it has an excellent taste. The non-vegan members loved it too. They were surprised to know it was vegan. Bravo Thomas!

Thomas, you have created an amazing and wonderful dessert. I followed the directions faithfully--however I didn't have a 10x7 pan. I used an 8x8 pan and baked it an extra 20 minutes or so, pulling it out of the oven when the top was brown and the sides pulled away a bit from the pan. I had some when it cooled a bit, so delicious, and there was another serving with warmed almond milk on it.... and some left for today! Thank you!!

Thanks for sharing this. it is superb. I modified it the second time I made it by adding some organic cacao nibs, which give it a chocolatey element without overwhelming the other flavours.

This pudding is quick and easy , but so  Just sweet enough thanks to the natural sweetness from the bananas . Even though i made one last night , it was so good i have to make another again tonite

This is a beautiful desert and so easy to make. I took it to our friend's house, reheated for 10 mins and served it with ice cream. The flavour was great, no sauce as I cooked it earlier in the day and reheated it later, it was lovely and moist though, everyone had seconds so not so good for the waistline! Thank you.
