This soft and fluffy shaved ice is healthy and tastes absolutely amazing. It's perfect for hot summer days or if you want a low calories dessert. Serve with fruits and your favorite toppings and you won't get bored of it!

Matcha Shaved Ice Dessert

milk

matcha powder

Pour 300ml of milk in 2 bowls respectively.

Add in 2-4 drops of sweetener in each bowl based on how sweet you would like it. Mix well.

In one bowl add 1/2 tsp of matcha powder and mix well to create matcha milk

Pour mixtures into two separate molds that come along with the ice maker machine

Freeze overnight or based on the machine instructions.

Prep sweetened frozen milk

Set up shaved ice machine as per instructions on the manual.

Meanwhile chop up the melon into squares or scoop into round shapes. Cut up matcha daifuku and set both aside.

In a medium to large bowl, shave the frozen milk and matcha milk alternatively as you wish until you get a mountain-like shape.

Decorate the bowl with fruits and daifuku around the bowl.

When ready to eat, drizzle a layer of the homemade or store bought condensed milk sauce over the toppings and shaved ice.

Make shaved ice

Bingsu (shaved milky ice) is a popular Korean summer dessert. Create this classic patbingsu with a canned sweetened red bean easily at home. You don&#039;t even need a shaving machine.

Patbingsu (Korean Shaved Milky Ice with Red Beans)- No shaving machine needed

heavy or light cream. (optional)

tbsp sugar

(18 oz) can sweetened red beans

sweet rice cakes (optional)

sweet condensed milk

In a bowl whisk together milk, cream (if suing) and sugar until the sugar dissolves. Pour into a gallon size zip bag and laying flat in the freezer, Freeze it for at least 3 hrs.

Take the bag out of freezer and thaw in on the counter for 5-10 minutes. Using a rolling pin, pound the bag to break up the solid milk into large chunks flipping the bag back and forth. When you see the milk it broken into somewhat large slush chunk, stop the pounding.

Scoop the milk chunks into the individual serving bowls and top with red beans, about 3-4 tablespoonfuls per serving, and rice cakes if using. Drizzle with sweet condensed milk and serve immediately.

Homemade Fresh Fruit Shaved Ice is the perfect summer treat! Fresh fruit is so much healthier than those store-bought syrups and you can make any flavor!

HOMEMADE FRESH FRUIT SHAVED ICE

½ cups fruit (strawberries, pineapple, etc)

Tbsp lemon or lime juice

water

sugar

Start by cleaning all the chosen fresh fruit well. Remove stems, core berries if needed, clean as well as you would if you were just snacking on the fruit. 

Place fruit in a blender or food processor and blend until pureed.

Pour the mixture into a saucepan and add the lemon or lime juice, water and sugar. Cook over medium heat, stirring occasionally until boiling. Turn heat down slightly and continue to simmer for 5 minutes before removing from heat.

Let syrup cool completely and then strain with a fine mesh strainer to remove all seeds and pulp. You can use the syrup immediately or store in the refrigerator. I prefer to use the syrup once it has been chilled for at least an hour or two so that the ice doesn&#39;t melt so quickly.

Fill your blender about half way with ice, pulse a few times on high until all is blended and shaved consistency. 

Continue to place shaved ice into individual bowls or cups, then pour the syrup over crushed ice until well coated. 

Serve immediately and enjoy!

Shaved ice

Halo-halo is a Filipino dessert that is a mix of shaved ice, evaporated milk, and many other ingredients. This specific style is also delicious, but not tradtional--riffing off the Filipino food chain Razon&#039;s take on halo-halo.

Filipino Halo-Halo (w/ Leche Flan)

110 g dark brown sugar

banana (sliced)

salt

Filipino leche flan (pre-made & refrigerated)

shaved ice (about 4 cups of ice cubes)

tbsp macapuno strings

¼ c evaporated milk

avocado

In a saucepan over medium heat, add ½ c cup of dark brown sugar and ¼ cup of water together. The liquid will begin to bubble so you will need to stir consistently to prevent the caramel from burning. Cook for about five minutes or until the liquid has the consistency of honey.

After you get this consistency, reduce the heat to medium-low heat and add the sliced bananas into the pan. I like to spread the slices throughout the pan evenly. Continue to cook and stir for about six minutes or until the sauce has the consistency of molasses (see photo for consistency just as you stop cooking and remember that the sauce will continue to thicken as it cools).

Remove the sauce from the heat and place into a glass container to cool to room temperature. Stir in the ⅛ teaspoon of salt and taste. If you want it less sweet, you can add water. If you want it sweeter you can add more sugar.

Move the sauce into the fridge to chill before assembly.

Caramelized banana sauce

Gather all your ingredients and your glass. I like to use a tall glass so I can layer all the ingredients properly. I also like to chill all my ingredients in the fridge for at least 30 minutes before assembly so that I can enjoy a nice and cold dessert. It also prevents the shaved ice from melting.

Banana sauce: this may thicken in the fridge, you can just stir it around to loosen it for easier layering. If it’s too thick, add one teaspoon of water and stir vigorously.

Flan: slice the flan into about one by two-inch slices so it fits on top of the glasses.

Shaved ice: use a strong blender to make shaved ice out of ice cubes OR use a snow cone/shaved ice machine. I used about four cups of ice for two servings.

Assembly: (Please note these portions are suggestions, you can adjust however you please) Add about two tablespoons of macapuno to the bottom layer of glass. Then, add two tablespoons of the caramelized banana sauce on top. For the third layer, add half of the shaved ice (or how much you would like to add). Carefully, spoon ⅛ cup of evaporated milk over the shaved ice. At this point, I like to add a little bit more of shaved ice on top--about two teaspoons if you’re really counting. Finally, top with flan slices and a scoop of ice cream.

Serve and eat immediately.

Assembly

Korean shaved ice desserts (bingsu) are a fun and delicious way to cool down in the summer. My favorite is the traditional patbingsu with sweet red beans, soft soft rice cakes (injeolmi) and fruits. I&#039;ve been eating it every summer for my whole life!

How to make sweet red beans

Pick out any broken or brownish beans and discard them. Put the good beans in a strainer. Rinse them under cold running water, then transfer them to a large, heavy saucepan. Add 4½ cups water and cover. Place over medium-high heat and cook for 10 minutes until the water is boiling. Reduce the heat to low and simmer for 1 hour 30 minutes, until the beans are tender but not mushy. Remove from the heat and drain. Return the beans to the pot and add the sugar, salt, and vanilla extract. Stir with a wooden spoon for about 4 to 5 minutes over low heat, until the beans are drizzle-able. Allow the beans to cool thoroughly. Transfer to an airtight container, and refrigerate for up to 2 weeks.

How to make injeolmi rice cake

In a microwave-safe bowl, combine the rice flour, sugar, salt, and water. Mix the ingredients thoroughly with a spoon until it becomes smooth. Cover the bowl with heat-resistant plastic wrap, making sure to leave a small gap for steam to escape. Microwave the mixture for 1 minute. Carefully take the bowl out of the microwave and uncover it. Hold the bowl steady with a kitchen cloth to protect your hand from the heat, then use a small wooden spoon to vigorously stir the mixture until it becomes elastic. Prepare a cutting board and sprinkle soybean powder on it. Transfer the hot rice cake onto the soybean powder. To prevent sticking, lightly wet your fingertips with cold water. Now, flip the rice cake over with your hands, pressing and shaping it into a square shape. Use a kitchen knife to cut the square into small pieces.

How to put the patbingsu together!

Begin by refrigerating a 2- to 3-cup serving bowl until it becomes cold. This will help keep the patbingsu chilled while serving. Once the bowl is cold, place 2 cups of shaved ice in the bowl as the first layer. Gently drizzle the whole milk over the sweet red beans. Add ½ cup of sweet red beans over the shaved ice. Add the mango and strawberry pieces (or fruits of your choice). Take the remaining 1 cup of shaved ice and build it up on top of the fruits, creating a mountain-like appearance. Add a ½ cup of sweet red beans over the shaved ice mountain. Place the rice cakes on the top layer. Drizzle the condensed milk over the entire patbingsu, adding a touch of sweetness and flavor.

Serve

Serve the patbingsu immediately with a spoon. Mix and eat the different layers together.

First, add water and sugar to a saucepan. Bring to a simmer and allow sugar to dissolve.

In the meantime, peel and cube the mangoes into small pieces. Add them to the pot and bring to a simmer again for 10 minutes, or until the mangoes are soft.

Once softened, roughly mash the mangoes with a potato masher and let the mixture reduce into a syrup-like consistency, about another 15 minutes. Remove from heat and let cool for a few hours before serving.

Add 1-2 cups of ice cubes to a blender and mix until the ice is crushed (like shaved ice). Transfer ice to a cup and pack it in.

Add about a &frac12; cup of fruit mixture overtop the ice. Enjoy as-is or drizzle with chamoy and garnish with tamarind or chamoy candies. Happy eating!

I'm hopeful for this recipe, but haven't prepared it yet! How many cups of mango cube slices add up to 2 mangos like the recipe calls for? I have frozen mango cubes and am unable to make my own accurate estimate.
