Your favorite flavors from Shawarma made into a Salmon Shawarma Salad with a Kale-Tabouli-ish base!

Salmon Shawarma Salad

lemons, juiced

olive oil

garlic,

salt and freshly cracked black pepper

cumin

paprika

oregano

red pepper flakes

shedded dinosaur kale

quinoa

parsley

mint

cherry tomatoes, halved

Persian cucumbers, diced

Homemade Pita Chips

Lemon Vinaigrette

lemon, juiced

red wine vinegar

shallot,

kosher salt and black pepper

In a large zip-top bag, combine the lemon juice, 1/2 cup olive oil, garlic, salt, pepper, cumin, paprika, oregano and red-pepper flakes. Add the salmon, zip the top of the bag and give it a quick shake to combine. Refrigerator for 2 hours.

Preheat a cast iron to medium high heat. Remove the salmon from the marinade and grill for 3-4 minutes on each side until crispy but not overcooked. Remove and set aside to rest.

For the Salmon

Transfer the salmon to a large bowl and toss to combine with the quinoa, parsley, mint, cherry tomatoes and cucumbers and lemon vinaigrette. (to make the lemon vinaigrette, just whisk everything together)

Divide the shredded kale amongst 2 bowls and top with a hefty portion of the salmon tomato mixture. Drizzle with tzatziki or serve it on the side. Also pita chips on the side.

Grilled Chicken Shawarma

plain Greek yogurt divided

tsps Organic Shawarma divided

lemon juice

tsp sicilian sea salt

chicken breast

cucumber

lettuce leaves

pita pockets halved

step 1

Mix 1 cup yogurt and 1 teaspoon Shawarma Seasoning in small bowl. Cover and refrigerate until ready to serve.

Mix oil, lemon juice, remaining 1/4 cup yogurt, remaining 4 teaspoons Seasoning and salt in small bowl. Reserve 2 tablespoons of the mixture; set aside. Place chicken in large resealable plastic bag or glass dish. Add marinade; turn to coat well.  Refrigerate 1 hour or longer for extra flavor.

Remove chicken from marinade. Discard any remaining marinade. Grill over medium heat 6 to 8 minutes per side or until cooked through (internal temperature reaches 165°F), brushing with reserved marinade.

Slice chicken into thin strips. Serve in pitas with cucumber, lettuce and yogurt dressing.

Homemade Juicy Chicken Shawarma Sandwich

boneless skinless chicken thighs

onions, thinly sliced

No slice, cutting or oven used to make these 10 Minute Ground Turkey Shawarma Lettuce Wraps. A cross between a salad and taco with warm shawarma flavor from our own homemade shawarma seasoning. Perfect for a sunny summer day.

10 Minute Ground Turkey Shawarma Lettuce Wraps

Tbsp kosher salt

Tbsp cumin

coriander

garlic powder

tsp ginger

tsp allspice

tsp cardamom

tsp turmeric

turkey - 7-15% fat

onion,

Tablespoons of prepared shawarma seasoning, divided

Pita bread

Romaine lettuce

turnips (lifit)

Hummus or taratore sauce

Tomatoes

Sumac onions ** sumac needed

Parsley

Feta cheese

Lemon

In a small bowl, combine your seasoning ingredients and whisk until combined. This will make more than we need for this recipe but I like to make a bit extra to use for another day. Store in sealed jar in a dark cool place, be sure to label.

Shawarma Seasoning

Heat a large skillet, 12-14" is ideal to medium-high heat. 

Add your olive oil, once hot and glistening, add your ground turkey and diced onions. Using a spatula or wooden spoon, mix to ensure even cooking. Cook for 3-4 minutes.

Next, 3 Tablespoons of your shawarma seasoning and continue cooking for another 5-8 minutes until the turkey is fully cooked through.

Remove from heat and add your final tablespoon of shawarma spice.

Begin assembling your lettuce wraps:

Smear a bit of hummus on your romaine lettuce
