Slow-cooked lamb with cheesy potato crust

1 Preheat oven to 180°C. Heat olive oil in a large non-stick pan set over medium heat. Add onion and garlic to pan; cook until onion softens. Add celery and mushrooms and cook for 2—3 minutes. Add lamb mince and cook, breaking up mince with a wooden spoon, for 5 minutes or until mince browns. Add tomato purée and beef stock; bring to the boil. Reduce heat to low and simmer for 25 minutes.

2 Meanwhile, add kumara to a large saucepan of water and bring to the boil. Reduce heat and simmer for 20 minutes or until kumara is cooked through; drain. Transfer cooked kumara to a blender or food processor with milk; blitz into a purée and season with pepper.

3 Grease 6 x 1 1/2-cup-capacity pie dishes. Add frozen peas to mince mixture; stir well and switch off heat. Spoon mixture into dishes and top with kumara purée; scatter with parmesan and spray with olive oil. Transfer dishes to oven and cook for 20 minutes, or until topping is golden.

4 Remove pies from oven, leave to cool for 5 minutes and serve.

Healthy Shepherd's Pie

roasted garlic cauliflower mash

tbsp extra virgin olive oil

carrots (diced)

celery (diced)

onion

lb ground turkey 93% lean

peas (frozen)

chicken broth (low sodium

thyme

tbsp rosemary

salt and pepper

Prepare the roasted garlic cauliflower mash according to the instructions.

Preheat the oven to 375 F.

Bring a large skillet to medium heat. Add the olive oil, carrots, celery, onions, garlic, salt and pepper. Satue 7 minutes or until almost softened. Add the ground turkey breaking it up with a saptula while it cooks approximately 7-8 minutes.

Add the tomato paste and broth. Bring to a boil then once it is boiling turn off the heat.

Add the rosemary, thyme and peas. Stir to combine then transfer the mixture to a large baking dish and top with the prepared roasted garlic cauliflower mash in an even layer.

Bake 20-25 minutes until the pie is lightly browned around the edges.

Serve immediately or store in the refrigerator up to 7 days. May be stored in the freezer up to 30 days.

bingingwithbabish's SHEPHERD'S PIE: Unlike most St. Patty's Day celebrations, shepherd's pie is full of distinctly Irish ingredients. Treat yourself to this easy, flavorful, comforting classic - and leave out the green food coloring.  There are peas and chives, those are all the green you need.

SHEPHERD'S PIE

For the Mashed potatoes

lbs Yukon Gold potatoes

oz aged white cheddar

unsalted butter

chives

Kosher salt

White pepper

milk

For the Stew

carrots

Rosemary sprigs

Thyme sprigs

garlic (peeled)

ground lamb (or ground beef, for cottage pie)

Tomato paste

tbsp flour

Dark Irish Stout

bone broth

Peas (fresh

Madeira (optional)

puck frozen Demi Glace (optional)

Start by peeling and cutting Yukon Gold potatoes in half. Put them in a large sauce pot and cover with cold water.

- 3 lbs Yukon Gold potatoes


Boil for about 20 minutes, or until a paring knife cuts through with no resistance. Drain and place back in the warm pot.

Place over medium-low heat, stir around and cook gently for about 1 minute.

Kill the heat and add aged Irish white cheddar, unsalted butter, and chives (optional).

- 3 ½ oz aged white cheddar
- ½ cup unsalted butter

Using a masher, or potato ricer, mash everything together. Add kosher salt and white pepper to season.

Add egg yolks to milk and beat together. Add to the now-kind-of-cooled-down potatoes and giving it one more mix and mash.

Start by finely mincing onion and carrots. Chop a few sprigs of rosemary and thyme and crush the garlic.

- ½ large onion
- 4 medium carrots
- Rosemary sprigs
- Thyme sprigs
- 3 cloves garlic (peeled)


In a lightly oiled and preheated stainless steel pan, place ground lamb (or ground beef if you prefer). Break it up in the pan until brown. Drain any excess fat, but leave 2-3 Tbsp in the pan.

- 1 pound ground lamb (or ground beef for cottage pie)


Add the finely minced onion and saute for 2-3 minutes, until soft and translucent around the edges. Add the carrots and saute them for 2-3 minutes.

- ½ large onion

Make a hole in the middle of the pan and add the crushed garlic and tomato paste.

Mix together and saute for 2-3 minutes. Add the chopped rosemary and thyme and stir.

To make the sauce, add flour to the mixture and mix until the raw flour smell is gone and a fond has formed on the bottom of the pot (about 2-3 minutes).

Deglaze with dark Irish Stout and beef’s broth. Make sure to scrape up all the fond at the bottom while mixing. Add a few dashes of Worcestershire sauce. Optional: now is when you can add Madeira and frozen demi-glace if you have it.

- 1 cup bone broth
- Worcestershire sauce
- 1 tbsp Madeira (optional)
- 1 puck frozen Demi Glace (optional)

Cook and mix together until thick. When you drag a spoon through the mixture, it should leave a trail.

In a separate pot, cook up some fresh peas. Frozen peas work just as fine and better. Set aside for pie assembly.

Spoon the stew mixture onto a pie plate. Top with cooked peas. Lastly, top with the mashed potatoes. You can use a pastry bag or a Ziploc bag with the corner cut off.

Even out the potatoes with an offset spatula. Use a fork to rough it up to make sure there are enough nooks and crannies that will brown and get crispy.

Set the pie plate on a sheet of parchment paper set in a rimmed baking sheet. Place in a 350°F oven for about 25 minutes. Remove at the 15 minute mark to top with more grated cheddar (optional) and place back in the oven for the remaining 10 minutes. You can also broil it the last 2-3 minutes for extra brown and crispy.
