This keto sardine recipe is great for when you need something quick and easy with ingredients lying around the house.

Follow the package instructions. If not, I can show you how to cook shirataki noodles.Note: I found that one package may not be enough for noodle lovers. If you love noodles I suggest getting two packages or 4 servings of shirataki noodles for 2 people.

Cook Shirataki Noodles

Slice the Crimini Mushrooms. Mince the Garlic. Halve the cherry tomatoes. Chop the basils. Drain the capers.

Gather all the Ingredients

In medium heat, warm the frying pan. After a minute, drizzle about a teaspoon of oil. Add minced garlic and cherry tomatoes. Cook tomatoes for about 2 minutes or until the skin softens and wrinkles.

Move veggies to the side. Add in Sardines, mushrooms, and capers. Let it heat up and break apart. Mix with veggies.

Add Shirataki Noodles. Stir for about a minute. Keto Sardines Pasta is now ready.

Pour MCT oil for additional fat. Garnish with Basil and/or chili pepper flakes as desired. Place avocado slices on side of plate. Squeeze lemon wedges as desired

If you're making your own dashi, do that first.  I use a simple kombu dashi, without katsuobushi for this dish (see note below concerning dashi and substitutions).

Optional - If you're using good mirin with a relatively high alcohol content, many like to very briefly boil it in order to cook off some of the sharp alcoholic flavour.  Note that you will not actually boil off much of the alcohol itself by doing this.  Simply heat a small saucepan over high heat, add the mirin, allow it to boil vigorously for 10-20 seconds, then remove it from the heat and allow it to cool somewhat before continuing.

Wash and halve the cucamelons and set aside.  Peel the daikon and slice into very thin rounds (a mandoline makes short work of this).

Combine the dashi, rice vinegar, soy sauce, mirin, sesame oil, and ginger in a small container (preferably one with a lid).  Add the cucamelons and daikon and combine thoroughly (I like to do this by putting a lid on the container and shaking everything very gently).  Set aside in the fridge for 10-20 minutes.

To serve, place some shiritaki noodles in individual bowls (they don't need any cooking) and top with vegetables and the vinegar sauce.  Garnish with a few radish greens if you like, and serve.

Prepare Ingredients for Shirataki Chicken

First of all, prepare all the ingredients for shirataki chicken noodles. Cut your chicken into small pieces and chop an onion. Slice your mushrooms and cut asparagus as well.

Coconut Oil and Onion

On the cooking pan, add coconut oil and let it melt. Add your chopped onion and let it caramelize.

Chicken, Salt, and Pepper

Once your onions are caramelized, add chicken pieces, salt, pepper, and cook the chicken until almost done.

Mushrooms

Once you see the chicken is done, add your sliced mushrooms and mix while still cooking.

Asparagus

Freshly cut asparagus added to the pan towards the end will ensure the asparagus is not overcooked.

Once your Shirataki noodles are thoroughly washed, you can add them directly into the dish as they will soak up all of the flavors from the chicken stir fry.

Super low calorie shirataki noodles (made from konjac yam) stir-fried with baby bok choy and tossed in a very simple soy-sesame sauce. 110 calories for the whole batch!

Stir Fry Shirataki Noodles

7-8 oz pack shirataki noodles ((some brand names are Miracle Noodles,

baby bok choy

green onion

½ tbsp toasted sesame oil

Separate the leaves of the baby bok choy and thoroughly clean. Chop into bite sized pieces, separating the white and green portions.  Thinly slice the green onion, separating the whites and greens again.

Set a pan over medium heat. Drain the shirataki noodles into a mesh strainer or colander and thoroughly rinse under cool water. Add the noodles directly to the empty pan and cook, tossing occasionally, until all the water has evaporated, about 5 minutes.

Push the noodles to one side of the pan, and in the other side add the sesame oil, garlic, and the whites of the green onions. Cook, stirring frequently, until fragrant, about 1-2 minutes.

To the pan add the whites of the baby bok choy, soy sauce, brown sugar, and rice vinegar. Mix everything together and cook, stirring frequently, until most of the liquid has evaporated, about 3 minutes. Season with MSG if desired.

Add the greens of the baby bok choy to the pan and cook for one more minute until they are just starting to wilt. Remove from heat and transfer to a plate or bowl. Top with sesame seeds and the green onion greens.

Prepare 1 packet of shirataki noodles as per package instructions.

Then put pan on stove top on medium heat and add 2 tbsp olive oil.

Then add 1/3 cup chopped onions and stir until soft.

Next, add 4 chopped green chilies.  Then stir and move onions and green chilies to one side of pan to make room to cook eggs.

Then add 4 eggs to one side of the pan and cook.  Add 1/2 tsp of chili powder and 1/4 tsp salt (adjust to taste).

Then stir eggs until cooked.

Then add the shirataki noodles.

Stir well with the eggs and vegetables.  Then add 1 tbsp Maggi Chicken Bouillon.

Then add 1/4 cup chopped spring onions.

Next add 1/4 tsp turmeric.

Mix well.
