Classic Japanese ginger pork recipe, one of my favorite homemade dish with tender sliced pork loin in sweet ginger sauce. Ready in 20 minutes!&nbsp;

Ginger Pork (Shogayaki)

pork

onion

garlic

ginger ((about 1 tsp.))

salt (I use Diamond Crystal; Use half for table salt)

black pepper

Tbsp neutral-flavored oil (vegetable, canola, etc)

green onion/scallion ((finely chopped))

soy sauce

mirin

Tbsp sake

tsp sugar

Gather all the ingredients.

In a small bowl, grate onion, garlic and ginger.

Add the seasonings. We like our ginger pork to be a little bit sweeter, so we add 1 tsp. sugar (this is optional).

Season the meat with salt and pepper.

In a large non-stick frying pan, heat oil on medium-high heat. Put the meat in a single layer (cook in batches). Flip the meat when the bottom side is golden brown. If the meat is very thin like mine, cook time is very short. Make sure you don’ overcook the pork or else it gets harder (but also be careful not to undercook).

When the meat is cooked through, add the seasonings and chopped scallion. Serve immediately.

If there's one thing I know for sure, ginger and pork are meant to be. This Japanese ginger pork recipe is the perfect quick, and flavorful weeknight dinner.

<strong>Ginger Pork Shogayaki</strong>

½ onion, thinly sliced

Blend the sauce. Set aside.

In a large skillet, heat on high and drizzle in a little neutral oil.

Add the pork belly to the skillet and cook until the pork takes on color.

Remove some of the excess fat by absorbing it with a kitchen towel.

If you prefer softer and tender shogayaki, add the sauce when the pork has slightly cooked. If you prefer having more of a bite, cook the pork until golden brown, and then add the sauce.

Simmer on low heat until the sauce has reduced down. If the sauce is reduced too much, feel free to add more water.

Enjoy with thinly sliced cabbage and rice!

Shogayaki - Japanese Ginger Pork

cabbage (shredded, sub with lettuce)

tomato (a few slices)

cucumber (a few slices)

Mix together the sauce ingredients (grated and julienned ginger, optional grated onion, soy sauce, mirin and sake) in a small dish until combined.

Flour

Lay the thin pork loin strips on a plate. Sprinkle with flour and season with salt and pepper on both sides, loosely rubbing in the flour to make sure it’s well coated. This will help soften the meat and hold in the juices while cooking.

Heat

Heat a large frying pan over high heat and drizzle in the vegetable oil.

Once hot, lay in the coated pork loin steaks and fry for around 2-3 minutes on the first side, then flip and add in the sliced onion around to cook alongside the pork for another 2-3 minutes. Pork should be a light golden brown by this point.

Broil

Pour over your seasoning sauce, and allow it to cook down and soak into the pork. Once the sauce has evaporated, switch off the heat.

Serve

Serve hot with your choice of garnishes: shredded cabbage (or lettuce), tomato, cucumber, rice and a sprinkle of sesame seeds.

How to make delicious Japanese Buta no Shogayaki (生姜焼き) made with thinly sliced pork loin cooked in a fragrant homemade ginger sauce.  Perfect served with rice and shredded cabbage or salad. (Serves 2)

Buta no Shogayaki (Japanese Ginger Pork)

fresh ginger skin on

tsp apple peeled

dashi stock (or water)

shishito peppers

Finely grate the fresh ginger, garlic cloves, apple and onion.

Add the soy sauce, sake, mirin, dashi (or water) and honey to a small bowl, then add the grated ingredients and mix well. Set aside for later.

Take the pork slices and make small incisions in the fat to prevent curling.

Sprinkle each slice of pork with a pinch of salt and pepper on both sides and then lightly dust with plain flour.

Take a large pan and add a drizzle of vegetable oil. While it's still cold, place one piece of pork in the pan and move it in a circular motion to spread the oil evenly around the pan.

Place the rest of the pork slices in pan laying flat, be careful not to overlap.

Turn on the heat to medium and fry until the pork is browned underneath.

Once it's browned, flip it over and add the sauce.

Move pork around the pan to distribute the sauce evenly.

Once pork is cooked through, remove it from the pan and place on serving plates.

Fry the shishito pepper in the same pan with the leftover sauce for 2-3 minutes or until the peppers are slightly charred and the sauce has thickened.

Turn off the heat and dish up the peppers, drizzle any leftover sauce over the pork. Serve with rice and salad and enjoy!
