Angel Hair with Shrimp and Asparagus is a quick and easy pasta dish made with fresh tomatoes and asparagus in a light tomato broth.

Angel Hair With Shrimp And Asparagus

asparagus (tough ends removed, quartered)

olive oil

plum tomatoes (diced)

garlic (thinly sliced)

shrimp

chicken broth

oz white wine

kosher salt and fresh pepper (to taste)

herbs de Provence (or you can use your favorite herbs)

tsp red pepper flakes

oz angel hair pasta (wheat or gluten-free)

Angel Hair with Shrimp and Asparagus

Season shrimp with salt and pepper. Heat a large skillet on high heat.

When skillet is hot, spray with oil and add shrimp.

Cook shrimp about 1 to 2 minutes in each side until ALMOST cooked through and remove from the pan. Set aside.

Reduce skillet heat to medium, add olive oil and garlic and sauté until golden, careful not to burn, about 1 minute.

Add tomatoes and season with salt and pepper. Simmer until tender, about 4 minutes.

Add the white wine and broth and stir, cook 1 minute then add the asparagus, salt, pepper and herbs.

Cover and simmer for 10 minutes on medium low heat, until the vegetables are tender.

While sauce is simmering, bring a large pot of salted water to a boil and cook pasta al dente. Drain when done.

After sauce simmers 10 minutes, return shrimp to sauce and finish cooking, about 1 minute (Do not overcook or shrimp will get tough).

Add pasta to the sauce and toss well.

Divide equally in 4 bowls and top with a good grated cheese.

Cook pasta in a large pot of salted boiling water until al dente, according to package instructions. Drain the pasta in a colander and rinse under cold water. Set aside to cool to room temperature.

In a large bowl, combine cooked shrimp, pasta, green onion, bell pepper, celery, and peas.

In a small bowl, whisk together mayonnaise, lemon juice, vinegar, sugar, dill, salt, and pepper.

Pour dressing over pasta mixture and gently toss until completely coated.

Cover and refrigerate for at least 30 minutes before serving.

Cook noodles according to package directions and hold until needed. Pat the shrimp dry with paper towels and set them aside. Prepare the green onions.

Place a large skillet over medium heat and add the butter.

When the butter has melted, add the green onions and saute for 2-3 minutes. Add the garlic and saute for an additional minute.

Add the shrimp to the pan. Cook 5 minutes, stirring frequently, or until the shrimp are done.

Add the half-and-half along with the Parmesan cheese. Stir until the cheese is melted.

Add the noodles, salt, and pepper. Stir together to coat the noodles well.
